Menu Plan Monday 11/21 Thanksgiving Week

We may earn money from the companies or products mentioned in this post.

This week I’m not really planning any menus.  We’ll be with family almost the whole week, so I don’t know what we’ll be eating, other than Thanksgiving Dinner at my Aunt’s house.
So instead of sharing my non-existant menu plan for the week, I’ll just share my pinned mouthwatering desserts I’m going to attempt making this week.

mmm, chocolate, pumpkin, salted caramel cupcakes!

Just recently some of my cousins were diagnosed with Celiac Disease. Although I know my aunt will be making items they can eat, I wanted to try my hand at some gluten free foods as well.
Flourless Chocolate Cookies

Flourless Chocolate Cake

And this I’m thinking of making for Princess C’s preschool Thanksgiving party tomorrow

I want to know! What are you eating this week?  Making anything special? Also, if anyone has any tips for cooking for Celiac disease, I’d love to hear them!

  1. I have a good rice pudding recipe:
    6 c milk ¾ c sugar
¾ c Arborio rice or regular long grain rice
    1 tsp vanilla
    ½ c dried raisins
    2 Tbsp dark rum
    ¼ tsp salt
½ c heavy or whipping cream

In 4 quart saucepan heat milk and sugar to boiling over medium-high heat, stirring occasionally. Stir in rice; heat to boiling. Reduce heat to low; cover and simmer for 1 hour and 15 minutes stirring occasionally, until mixture is thickened slightly. Pudding will firm up upon chilling. Spoon rice pudding into large bowl and stir in raisins, rum, salt, and vanilla. Cool slightly, then cover and refrigerate until well chilled, at least 6 hours. Up to 2 hours before serving, whip cream until stiff peaks form. Fold whipped cream, half at a time into pudding.
