    Foodie Friday – Hashbrown Stackers

    For Princess C’s birthday in february we took her out to IHOP.  Mark debated what to get, and despite choosing something differnet, we were inpsired by the Hashbrown stacks. I personally figured there wouldn’t be anything amazing to eggs, ham and hashbrowns all stacked on top of each other.
    Boy was I WRONG!  We made our own Hashbrown stackers for dinner this week, and I think it was some of the best food I’ve eaten in a long time!!

    IHOP inspired Hashbrown Stackers

    4 eggs
    1 bag of frozen shredded hashbrowns
    2 pieces thick sliced ham or turkey (I accidently bought turkey instead of ham)
    Hollandaise Sauce
    1 cup Shredded cheddar cheese
    On a griddle fry up the eggs, hasbrowns, and ham. If making your own Hollandaise sauce, get this prepared. I used Knorr Hollandaise Sauce Mix.  On 2 plates begin stacking – hashbrowns, ham, 2 eggs, Hollandaise sauce and shredded cheese.
    Serves 2.

  • Foodie Friday – Hot Chocolate

    I love hot chocolate. I always have. Something about it just warms me up – and not just the fact that it’s hot. It can take a hard day and turn it around for me.  But I am picky. I’m not one for those flavored hot chocolates.  We were at IHOP last week for Princess C’s birthday dinner, and I ordered one of their new caramel hot chocolates. I thought, caramel and hot chocolate would be perfect together, but I didn’t much care for it. Mark thoroughly enjoyed it though. I’ve decided it’s really just a taste preference. I prefer my hot chocolate to be thick and creamy.

    Well, I’ve been stumbling across a bunch of hot chocolates on pinterest lately.  Even though our winter has been more like spring this year, I still wanted some good old hot cocoa to chase away the dreary undecided weather (seriously, it needs to make up it’s mind!).  So today I hit up the local grocery store for some chocolate chips and made this fabulous Crock Pot Hot Chocolate from Real Mom Kitchen.

    Crock Pot Hot Chocolate
    1 1/2 cups heavy cream
    1 (14 oz) can sweetened condensed cream
    2 cups milk chocolate chips
    6 cups milk  – I used both whole and 2%
    1 tsp vanilla extract
    Directions
    Put all the ingredients in a crock pot. Turn on low for 2 hours. Whisk every 30 minutes (or whenever you remember).  Enjoy! 
    Although this does make an excellent hot chocolate, and my kids loved it, I’m going to suggest using a bit less chocolate chips, or possibly try semi-sweet instead of milk chocolate. It was very thick and very chocolatey. Almost on the verge of feeling like I was drinking straight melted chocolate, but not quite. I’ll definitely be trying this again with my suggested alterations.

We had it for dinner this week, and we all ate it up. Just make sure you double the cheese sauce recipe. We could’ve used a bit more cheese for all the lentils we had, but I plan on using the lentils in some meatless burritos for another meal!

    Mark’s favorite meat is pork, but I don’t buy it very often. It is more of an indulgence when we do. Last week I found some Pork Riblets on sale, and decided they fit in the budget. I had no idea what to do with Riblets though, so I began browsing pinterest, and found this

    Hoisin and Honey Pork Riblets
    Oh they looked divine, and they sure tasted good as well!

    Hoisin and Honey Pork Riblets (recipe from Smitten Kitchen)
    3 1/2 pounds pork of spareribs, halved crosswise, preferably by a butcher, and cut into individual ribs
    1/3 cup honey
    1/4 cup soy sauce
    1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
    1/3 cup hoisin sauce
    1/2 teaspoon English-style dry mustard
    1/4 cup distilled white vinegar

    In a kettle of boiling salted water simmer the ribs, covered, for 30 minutes and drain them well.
    In a large bowl whisk together the honey, the soy sauce, the garlic paste, the hoisin sauce, the mustard, the vinegar, and black pepper to taste, add the ribs, and toss the mixture well, coating the ribs thoroughly. Let the ribs marinate, chilled, for at least 1 hour or overnight.
    Remove the ribs from the marinade, arrange them in one layer on the oiled rack of a foil-lined broiler pan, and broil them under a preheated broiler about 4 inches from the heat, basting them with the marinade, for 3 minutes. Turn the ribs with tongs and broil them, basting them with the marinade, for 2 to 3 minutes more, or until they are browned well and glazed. Discard the marinade

    My favorite part of this dish, is that my 5 year old loved them! She ate two whole racks all by herself.   Princess V is a very picky eater, so it completely surprised us. I’m still unsure if it was the taste she liked, or if it was just fun using her fingers (I did not cut my ribs apart, I left them as a rack). 
    We’ll be using this recipe again for sure. It may not always be on riblets, but the sauce will be good on chops as well.

    I love food. I’ve mentioned it before, but I have a hard time making the same recipe twice, even if it was amazing, because I always want to try something new. Pinterest hasn’t helped with this food love either.

    I bring to you this week
    Chick-Fil-a nuggets

    My recipe has been altered for a dairy and nut allergy!
    3 lbs boneless skinless chicken breasts
    6 eggs
    4 cups flour
    6 TBS powdered sugar
    6 tsp salt
    3 tsp pepper
    canola or vegetable oil
    Cut chicken into bite size pieces. Whisk eggs in large bowl. Add the chicken to the eggs, and let marinate in the fridge for about 2 hours.
    Mix flour, sugar, salt and pepper in another large bowl.  Heat about 2-3 inches of oil in a pan over medium heat until when you sprinkle water on it, it sizzles. Once the oil is ready, remove the chicken from the egg mixture and coat in dry mixture. Do about 10 pieces at a time, depending on size of your pan.  Add coated chicken to oil, and cook until golden brown. We checked the largest piece of chicken in each batch by cutting it in half  to make sure it had cooked all the way through.  Serve with your choice of sauce. I personally prefer some BBQ, but the kids like Ketchup and Ranch.

    Today I want to share a fellow bloggers post. While I was browsing the blog world, I visited

    Raising Homemakers
    As a mother of 3 Princesses I really appreciate much of the insight found on Raising Homemakers. However, one post today I just knew I had to share here. It was too good not to spread around.  So please, go read A Girls First Domestic Domain.
    It is inspirational! The point of this article is to show us how we can begin teaching our daughters how to make their future house into a home. I just love it. I’m especially in love with the binders she made her daughters. One for homemaking – things they could potentially use in their future home, and one for Things I like – just a place to keep the love alive, but not cluttered on the bedroom walls. Since we are remodeling our basement, and the Princesses will eventually be sharing a room, I plan on creating some binders for them.
    Really I insist, you must go read this article. I even had a friend tell me she was going to use some of the same ideas for her son. So don’t think you mom’s of boys can benefit here, you can! I’d love to hear your thoughts on A Girl’s First Domestic Domain.

    The ‘ings of life Party

    I’m linking up this month to Quilted Euphoria’s “Ing’s” of life party!  Just a fun way to get to know each other better, and well, I needed something to post πŸ™‚  Sorry for being such a slacker lately, I haven’t been feeling too good lately.
    Ok with that said, if you’d like to join up, head on over to The Quilted Euphoria to grab the button, and link up.  And on to my “Ing’s” of life.
    Making : A baby πŸ™‚  Oh, and attempting at making our lawn green again. Ugh, this heat and holey sprinkler system has left it a little dead.  See when the previous owners put the landscaping in, they poked these really long nail poles right through the sprinklers.

    Cooking: Not much these days. Too hot for one, and too nauseous for another. Thankfully Mark has really stepped up and helped me out here this week!
    Drinking : water, water and lots more water.
    Reading: Right now, Ella Minnow Pea by Mark Dunn. Really great book! I mean this is probably one of the best I’ve read for awhile. Oh and Richard Paul Evans new book Michael Vey. It’s also really good, and Mark actually got to meet the author and had the book signed to me! Awe, isn’t he a sweetheart?

    Wanting: For the nausea to leave, and this constant head cold to leave. That would be the best thing ever right now!

    Looking: At the pile of dishes still needing to be done from the flour fiasco. It’s only times like this that I do wish I had a dishwasher.
    Playing: words with friends on facebook.
    Wasting: away. lol, just kidding. I feel like I’m wasting my time everyday because I don’t have the energy to get up and do. Ah, I just need to tough this out!
    Sewing: nothing πŸ™ I wish I was! But time has been against me in the sewing department. Next on the list though, is some nice curtains for the windows.
    Wishing: that I didn’t feel so drained every day. Wishing that I could be more help to Mark as he gets ready to start another school year. Wishing I had more motivation to do everything.
    Enjoying: My kids playing happily.
    Praying: That we all can live in peace, and show kindness to everyone even our enemies.
    Waiting: For my first dr’s appt…Not for another week!
    Liking: That tomorrow is Sunday, a day of rest. 
    Wondering: What in the world to make for dinner tonight.
    Loving: Mark. He’s amazing in every way, and he has stepped up a ton lately. I just love him to pieces!
    Hoping: I can get dishes and laundry really caught up, so I can focus more on the fun stuff!
    Marveling: That my Princess V is going to preschool at school this year, and if her birthday had been just a month earlier, she’d be starting kindergarten!
    Needing: Food that doesn’t make me feel really sick. oh and a nap. Those would be great.
    Smelling: Heat. Can you smell heat? I think you can.
    Wearing: Holey jeans, and a yellow tee.
    Following: Oh you don’t want to know! I actually had blogger tell me I hit my limit of blogs to follow. I might have a problem….
    Noticing: That it’s about time to figure out dinner and get it going!
    Knowing: That this too shall pass, and my energy will eventually return
    Thinking: blank. haha! My mind has felt so empty lately, lol. no, I’m thinking I need to get a move on decorating this house so it looks awesome!
    Bookmarking: My scriptures. It’s the only book that has an attached bookmark, so it gets bookmarked πŸ™‚ Everything else I go by memory.
    Opening: A can of worms with my friend in politics. Ok, I closed it too. I just don’t do drama people.
    Giggling: At Princess R’s climbing abilities. Way too advanced her age!
    Feeling: Happy I finally got another post in!
