    Menu Plan Monday 1/23

    Oh I loved coming across that quote today (today’s inspiration from Happy On Purpose by Diana Fletcher).  Besides fitting right in with Menu Plan Monday, I think it’s true. Food should be enjoyed. We shouldn’t rush our meals. We should take the time to enjoy them, savor the flavors, and get to know our dining companions (namely, our family!). 
    Yesterday, I pulled out some cookbooks with the Princesses and we made our menu for the week.  Here’s what we’ll be enjoying.
    Monday – Pasta and sauce, with veggies on the side. Chocolate chip muffins per Princess V for dessert
    Tuesday – Leftovers from the weekend
    Wednesday – Personal Pan Pizza’s per Mark
    Thursday – Taco’s and Burrito’s
    Friday – Mac and Cheese and Ice Cream Cones per Princess C
    Saturday – Pork Chops, probably using the same Hoisin and Honey sauce from the ribs per Mark
    Sunday – Lasagna per Mark

    Welcome to another Foodie Friday hosted here on Home Maid Simple and at Simple Living with Diane Balch.

    Mark’s favorite meat is pork, but I don’t buy it very often. It is more of an indulgence when we do. Last week I found some Pork Riblets on sale, and decided they fit in the budget. I had no idea what to do with Riblets though, so I began browsing pinterest, and found this

    Hoisin and Honey Pork Riblets
    Oh they looked divine, and they sure tasted good as well!

    Hoisin and Honey Pork Riblets (recipe from Smitten Kitchen)
    3 1/2 pounds pork of spareribs, halved crosswise, preferably by a butcher, and cut into individual ribs
    1/3 cup honey
    1/4 cup soy sauce
    1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
    1/3 cup hoisin sauce
    1/2 teaspoon English-style dry mustard
    1/4 cup distilled white vinegar

    In a kettle of boiling salted water simmer the ribs, covered, for 30 minutes and drain them well.
    In a large bowl whisk together the honey, the soy sauce, the garlic paste, the hoisin sauce, the mustard, the vinegar, and black pepper to taste, add the ribs, and toss the mixture well, coating the ribs thoroughly. Let the ribs marinate, chilled, for at least 1 hour or overnight.
    Remove the ribs from the marinade, arrange them in one layer on the oiled rack of a foil-lined broiler pan, and broil them under a preheated broiler about 4 inches from the heat, basting them with the marinade, for 3 minutes. Turn the ribs with tongs and broil them, basting them with the marinade, for 2 to 3 minutes more, or until they are browned well and glazed. Discard the marinade

    My favorite part of this dish, is that my 5 year old loved them! She ate two whole racks all by herself.   Princess V is a very picky eater, so it completely surprised us. I’m still unsure if it was the taste she liked, or if it was just fun using her fingers (I did not cut my ribs apart, I left them as a rack). 
    We’ll be using this recipe again for sure. It may not always be on riblets, but the sauce will be good on chops as well.

    If you’ve been following the blog here lately, you may have noticed an influx of recipes and food related posts. It may have something to do with this pregnancy (I’m always hungry lately) or it could be from all the baking I did throughout the holidays. Whatever it may be, I’ve started collecting more and more recipes from all over the place. My cookbook cupboard is not getting any smaller, and my food board on pinterest just keeps growing.
    I’ve found a great new software to organize my recipes into one spot. Cook’n Recipe Organizer has so many cool features! You can capture recipes right off the web, or type up your own recipes. You can view the nutritional value of each recipe, create menu plans, and print off a grocery list. You can also make your own recipe book and print it out too!


    Already I’ve created a recipe “book” for recipes we’ve tried and love, and one for recipes I want to try in the near future!
    So far the only problem I’ve come across is the grocery list. It allows you to type in any extra items you may need. I needed diapers and knew I’d probably forget if they weren’t on my list. When i went to print the list though, diapers wasn’t on it. I’m sure there’s something I need to do different to make it work right.

    Overall I really enjoy this software and plan on getting my cookbook cupboard cleaned out some. I’m even starting to think of making recipe books for family this next Christmas!

    This week on Menu Plan Monday, I used Cook’N recipe organizer to plan out my menu’s, save new recipes from online, and add some of my own.  I’m really enjoying this new software. After creating a menu, it will automatically create my grocery list, and tell me the nutritional value of each recipe! Review and Giveaway coming soon!

    I love food. I’ve mentioned it before, but I have a hard time making the same recipe twice, even if it was amazing, because I always want to try something new. Pinterest hasn’t helped with this food love either.

    I bring to you this week
    Chick-Fil-a nuggets

    My recipe has been altered for a dairy and nut allergy!
    3 lbs boneless skinless chicken breasts
    6 eggs
    4 cups flour
    6 TBS powdered sugar
    6 tsp salt
    3 tsp pepper
    canola or vegetable oil
    Cut chicken into bite size pieces. Whisk eggs in large bowl. Add the chicken to the eggs, and let marinate in the fridge for about 2 hours.
    Mix flour, sugar, salt and pepper in another large bowl.  Heat about 2-3 inches of oil in a pan over medium heat until when you sprinkle water on it, it sizzles. Once the oil is ready, remove the chicken from the egg mixture and coat in dry mixture. Do about 10 pieces at a time, depending on size of your pan.  Add coated chicken to oil, and cook until golden brown. We checked the largest piece of chicken in each batch by cutting it in half  to make sure it had cooked all the way through.  Serve with your choice of sauce. I personally prefer some BBQ, but the kids like Ketchup and Ranch.

    Frugal Living Challenge – Days 4 and 5

    Day 4
    Reducing your household bills. Again, another great article over on Frugally Sustainable!  Most of the tips she suggests I already try to do. Things like getting rid of cable and a landline. Although there are a great number of educational shows I miss, I can find them online if I really want to watch them, but even better I can head outside with my kids, or create something inside with them. I do miss a landline, and Mark and I have looked into putting one back in. Right now though, we’re doing fine with just our cell phones on a minimal plan (you really don’t need text messaging). 
    For this challenge I decided to try and save money on drying clothes. I already feel that I do a fair amount of saving by doing my laundry all in one day. But I could save even more by line drying some of our clothes, like delicates and the girls dresses. Not only will this save money by using the dryer for less clothes, but it will also save our clothes from unneccesary machine damage. I won’t even go into how many clothes my dryer has ripped apart recently (snapped bra strap, ties on girls dresses, holes in socks).  Perhaps I need a new dryer, but really, it does it’s job, it’s just very rough on our clothes.
    I know Mark isn’t as thrilled with this new adventure as I am, but he let me indulge as I used my amazon gift cards (thanks Swagbucks!) to purchase a retractable line dryer to hang across the basement.
    I even started looking into these felted wool dryer balls. Supposedly they cut the drying time down a lot, and take the place of dryer sheets, cutting out that expense. Has anyone used these? I’d love to know if they’re worth it!
    Day 5
    Today’s challenge is cutting costs on your grocery budget. This is perfect for me today, since I didn’t get grocery shopping done yesterday, I will be headed out today.  Andrea’s listed 50 tips on how you can save money on your grocery budget, and asked us to pick a couple to implement into our lives to save us money.  Here are some of her tips I’m going to try out –
    • Cook Ahead. I was planning on making a bunch of freezer meals anyways, for when baby comes. It wouldn’t hurt to start now, and either weekly or biweekly make a bunch of meals. I’ve pinned a ton of ideas for frozen meals, pantry meals, and crockpot meals that I can easily put together.
    • Eat leftovers, instead of eating out. We don’t eat out a whole lot, but we do waste a fair amount of leftovers. I’ve already put this as one of my other goals to minimalize our waste, but it will also save on our grocery budget as well.
    • Package your own snacks. I know I can do much better at this. The Princesses get hungry, and then I can’t find anything for snacks, so I buy gummies or candy for them. I’d like to be better at this. Perhaps have a bowl of  veggies in the fridge that they can always get if they’re hungry. Or buy crackers, raisin, etc in bulk.  While I’m at Winco today I’ll be checking the bulk section for any healthy snacks I can purchase.

    Here are some things I have already changed that have shown a significant change in our grocery budget.  I shop at a store called Winco. They only accept cash, debit, or checks. This cuts their overhead charges, allowing them to reduce prices, but also forces me to pay more attention to the money I spend.  At winco you also have to bag your own groceries. One less person the store has to pay for a job we are perfectly capable of. I also am always on the lookout for their ads. They don’t go out often, but when they do they always have at least one coupon for a free item! So check your area for a similar style shopping experience.  I also only go to the store once a week. I make a meal plan on monday, and then head to the store with a list so nothing is forgotten.

    I can’t wait for tomorrow’s challenge!! By the end of the month I’m expecting to see our household expenses minimalized quite a bit through Andrea’s 23 days of Frugal Living, and I hope I can continue with all her advice after the 23 days!

    It’s another Monday, which means menu planning and grocery shopping. Normally I try to do this in the morning, but I had a sick little one, and knew I wouldn’t get to grocery shopping until this evening.  Here’s what’s on our menu this week.
    Monday – Stroganoff Hamburger Helper
    Tuesday – Frozen burritos
    Wednesday – Stir Fry
    Thursday – Dinner with my parents
    Saturday – Leftovers

  • Menu plan Monday 1/2/12

    We’re still working around a kitchen remodel. Dinners have made me a little crazy and stressed out lately. Today I had a brilliant idea to get the whole family involved in planning what we eat. We sat down with my new planner and got everyone’s input for the weeks dinner. I already feel less stressed, and plan on getting their input every week now!

    Monday – French Toast and Bacon
    Tuesday – Chicken Nuggets and French Fries (homemade) per Princess C’s request
    Wednesday – Pizza, soda and ice cream per Princess V’s request
    Thursday – Lasagna per Mark’s request
    Friday – Soup
    Saturday – leftovers

    I’ve been waiting for a good time to try out this recipe for Chik-Fil-A nuggets, and with Princess C’s request it finally made it to the menu!  I’m excited to try my hand at these.

  • POM POMS Fresh Arils review

    If you were to ask me my favorite fruit it would be pomegranates. I love when winter comes around because it means fresh pomegranates at the grocery store. I have to have at least one pomegranate each year. The biggest problem with pomegranates though are peeling them. It’s not like your normal fruit. The part of a pomegranate you want to eat are the seeds, or Arils. Once you open up the pomegranate you have to dig the Arils out from the skin that has formed around them. The work is worth it for the most delicious fruit out there, but it’s also very messy.

    POM Wonderful has developed many products using pomegranates, like their POM beverages, supplements, bars and juice concentrate. Their newest product is the POM POMS Fresh Arils. POM Wonderful has done all the hard messy work for us, and packaged the Arils, fresh and ready to eat. I was in a personal heaven when I opened my POM POMS, and spooned some out. Frankly I was amazed at how fresh these tasted. Most precut fruit I find was picked too early, or doesn’t have a fresh taste. Not so with the POM POMS Fresh Arils. I really felt that I had just opened a pomegranate on my own. Eating the Arils all by themselves has always been how I ate them. I had never considered adding them to anything else, until the hard work was taken out of it. After eating about 1/4 of my packaged Arils I had the brilliant idea to add them to ice cream. I kept it simple, vanilla ice cream, chocolate syrup, topped with fresh Arils. They completely took the place of a cherry on top!

    Two of the three kids really enjoyed the Arils as well! I had to separate myself and feed the animals over the fence. I could’ve stayed in the cage with them, but I’m a tad selfish when it comes to Pomegranate’s as well.  I had to keep some for a midnight snack!

    Plush Puffs Gourmet Marshmallows Review

    This year instead of trying to have our own Christmas, and spend time with extended family all in one day, we decided to change our plans up a bit. We invited my parents and siblings to our home for Christmas Eve. We had planned games, and socializing, but the boys ended up working on our kitchen remodel most of the morning and afternoon.
    One thing that was on the list to do, and we made sure to do, was have a Hot Chocolate Bar. We set a pan of water on the stove to warm.  As people wanted they could grab a cup, and make some warm cocoa!  The part that really made our Hot Chocolate Bar perfect were the Plush Puffs Gourmet Marshmallows.
    I had never heard of gourmet marshmallows until Plush Puffs.  Plush Puffs makes many different varieties, and we were lucky enough to try some of my favorite flavors!
    Peppi-mint, Simply Smores, Toasty Coconut, and one of the limited edition flavors Gingerbread Spice.
    Peppi-mint was by far my favorite for our hot chocolate. One marshmallow added just a touch of peppermint flavor to my cocoa. I’d imagine these would be pretty good in rice crispies as well!
    Simple Smores was wonderful just on it’s own! With a mixture of chocolate and graham crackers inside the marshmallow, it was like eating a smore without needing a fire. In the very near future though I plan on tossing one of these on a graham cracker. I can only imagine the taste enhancing every bite of those delicious camping treats we all love.
    Toasty Coconut was not one I particular liked. I’ve never been a big fan of coconuts though. My mom on the other hand, enjoys coconut. So at the end of our Christmas Eve festivities, I sent the leftover Toasty Coconuts with her. Definitely a treat for her!
    Gingerbread Spice also tasted very good in the hot cocoa.  The scent it gave off though, really made it more like the holidays. Instead of smelling sawdust from our remodeling, it smelled like I had been baking all day like most people were. I could’ve held my cup of hot cocoa with the Gingerbread Spice the rest of the evening just sniffing it.
    One other thing I noticed about the majority of Plush Puffs is that they are Gluten Free. They’re labeled well for anyone that needs this information quickly.  With some of my cousins recently being diagnosed with Celiac’s I was thrilled to see these labels easily visable.  These marshmallows will be accompanying me to any more parties we may go to this year.
