    Menu Plan Monday 1/23

    Oh I loved coming across that quote today (today’s inspiration from Happy On Purpose by Diana Fletcher).  Besides fitting right in with Menu Plan Monday, I think it’s true. Food should be enjoyed. We shouldn’t rush our meals. We should take the time to enjoy them, savor the flavors, and get to know our dining companions (namely, our family!). 
    Yesterday, I pulled out some cookbooks with the Princesses and we made our menu for the week.  Here’s what we’ll be enjoying.
    Monday – Pasta and sauce, with veggies on the side. Chocolate chip muffins per Princess V for dessert
    Tuesday – Leftovers from the weekend
    Wednesday – Personal Pan Pizza’s per Mark
    Thursday – Taco’s and Burrito’s
    Friday – Mac and Cheese and Ice Cream Cones per Princess C
    Saturday – Pork Chops, probably using the same Hoisin and Honey sauce from the ribs per Mark
    Sunday – Lasagna per Mark
    It’s looking to be a good week of enjoyable foods for all!  What’s on your menu?

    This week on Menu Plan Monday, I used Cook’N recipe organizer to plan out my menu’s, save new recipes from online, and add some of my own.  I’m really enjoying this new software. After creating a menu, it will automatically create my grocery list, and tell me the nutritional value of each recipe! Review and Giveaway coming soon!

    Monday – Asparagus stir fry over leftover rice
    Tuesday – personal pan pizza’s (this has quickly become a family favorite!)
    Thursday – Hamburger Helper
    Saturday – Breakfast: Bacon, Egg and toast cups. Dinner: leftovers

    It’s another Monday, which means menu planning and grocery shopping. Normally I try to do this in the morning, but I had a sick little one, and knew I wouldn’t get to grocery shopping until this evening.  Here’s what’s on our menu this week.
    Monday – Stroganoff Hamburger Helper
    Tuesday – Frozen burritos
    Wednesday – Stir Fry
    Thursday – Dinner with my parents
    Saturday – Leftovers

  • Menu plan Monday 1/2/12

    We’re still working around a kitchen remodel. Dinners have made me a little crazy and stressed out lately. Today I had a brilliant idea to get the whole family involved in planning what we eat. We sat down with my new planner and got everyone’s input for the weeks dinner. I already feel less stressed, and plan on getting their input every week now!

    Monday – French Toast and Bacon
    Tuesday – Chicken Nuggets and French Fries (homemade) per Princess C’s request
    Wednesday – Pizza, soda and ice cream per Princess V’s request
    Thursday – Lasagna per Mark’s request
    Friday – Soup
    Saturday – leftovers

    I’ve been waiting for a good time to try out this recipe for Chik-Fil-A nuggets, and with Princess C’s request it finally made it to the menu!  I’m excited to try my hand at these.

    Meal Plan Monday 12/26

    Well, with our recent dining room remodeling project I have a very simple menu this week. We’ve got to move the dining table to the living room, so meals also must be as mess free as possible with 3 little ones.
    Monday – Leftover Ham and Potatoes
    Tuesday – grilled sandwiches and tomato soup
    Wednesday – Baked Potato Bar
    Thursday – Chicken Nuggets
    Friday – DATE NIGHT! (Mark’s sister gave us a certificate to a bed and breakfast! It’s going to be such a nice break!)
    Saturday – Chicken Cordon Bleu (family New Years Eve Tradition)
    Sunday – Sandwiches
    Since I don’t know how long it’s going to take to get our kitchen put back together, I’d love any ideas for simple cooking you may have!

    This completely states how I was feeling this morning! I allowed myself to sleep in and skip my morning routine, which meant a not good start for anyone. I got up to the Princesses hands in the cookie jar. When I told them no cookies, and we were having cereal for breakfast fits were thrown. It didn’t help that Princess R figured it all out and threw her bowl across the room, and when I returned it with cereal she promptly turned it over and continued to scream at me. So I gave up. I got me breakfast and sent the kids back to their room to play. About an hour later, they all told me they would like some cereal. 
    So when I hopped on pinterest this morning to clear my head, I couldn’t help but laugh at this awesome menu sign from etsy!  Here’s what our week of food looks like

    Monday – PB&J.  We’re headed to Temple Square to see the Lights tonight, so I wanted something easy, that the kids also enjoy.
    Tuesday – Personal Pan Pizza’s. Another pinterest find, these are made using cake pans!

    Wednesday – Ravioli
    Thursday – Going out to eat. Mark got a gift card as his work bonus, so we’re headed up to Ogden’s Christmas Village.
    Friday – 5 Ingredient Bubble Up Enchiladas

    Saturday – Ham and Potatoes, plus lots of yummy yummy stuff with my family here!
    Sunday – Leftovers. I may make some poffarages or aebleskivers for breakfast though.

    What’s on your menu this week? 
    I know I don’t always follow my menu’s, but sitting down at the beginning of the week to plan everything out, really makes dinner time more pleasasnt (even if it’s not what was planned).
    Monday – Tuna Helper
    Tuesday – Salsa Chicken over rice
    Wednesday – Cheesy Potato Soup in Bread Bowls
    Thursday – eating out
    Friday – Dijon Chicken Noodle Toss
    Saturday – leftovers
    I’ll probably be doing a lot of baking this week as well. I need to figure out what to take our neighbors when we go caroling, and I’m in the mood to have some sweets around the house too.
    Yesterday I kicked off my sweet tooth by baking these delicious Strawberry Cheesecake Santa Hats with the Princesses
    Strawberry Cheesecake Santa Hats
    Ingredients
    8oz cream cheese
    4 TBS powdered sugar
    1 tsp vanilla extract
    vanilla wafers
    1 pound strawberries
    Directions
    Mix the first 3 ingredients together until well blended.  Wash the strawberries. Cut off their tops, and hollow a little out of the inside (for extra cheesey goodness!).  Arrange the wafers on a plate, and pipe some frosting around the edge. Then pipe some frosting inside the strawberries, and stick to a wafer. Add a little frosting to make a pom pom hat.  Then enjoy!!

    Oh and I’ve added a little Christmas decoration to my kitchen as well. While out visiting teaching this morning, one of the sisters gave me this present. I absolutely love it, and am thinking of making some more for every season and holiday!

    I felt the need to use some pinterest inspired recipes again, this week (did I mention I think I have a pinterest problem….I might need intervention).
    Monday – Spaghetti. Mark has parent teacher conferences today, so I wanted something simple I wouldn’t have to fight the Princesses to eat. Spaghetti it is!  I thought about doing spaghetti baked in bread but decided against it.
    Tuesday – Toasted Ravioli
    Wednesday – Church potluck for the women. Mark and kids will be on their own, bwahaha!
    Thursday – Hamburger Helper
    Saturday – Lasagna Soup

    Last week, I did hardly any cooking, since we were out of town for Thanksgiving. I did however, make some fun treats inspired by Pinterest!

    Menu Plan Monday 11/21 Thanksgiving Week

    This week I’m not really planning any menus.  We’ll be with family almost the whole week, so I don’t know what we’ll be eating, other than Thanksgiving Dinner at my Aunt’s house.
    So instead of sharing my non-existant menu plan for the week, I’ll just share my pinned mouthwatering desserts I’m going to attempt making this week.

    Just recently some of my cousins were diagnosed with Celiac Disease. Although I know my aunt will be making items they can eat, I wanted to try my hand at some gluten free foods as well.
