    Menu Plan Monday 5/7

    I feel like I’m getting into a slight rut with menu planning. Just trying to find the right balance and variety of foods, sometimes feels overwhelming. I think I’ve come up with a pretty good looking menu this week though.
    Tuesday – Lasagana
    Friday – Okra, Rice and Potstickers
    Saturday – Leftovers
    Sunday – Mothers Day! Chicken Cordon Bleu with Tartufo for Dessert

    Grocery Shopping with 4 kids, with every one of them wanting to ride in the cart, is quite difficult. I am so glad I stocked our freezer with some meals before little Prince was born, but it’s been 3 weeks, and those meals are gone. So this weeks menu is going to consist mostly of things we have in our pantry. If I have to, I’ll make a night time run to the store, alone, and leave Mark with the sleeping kids. It’s just easier that way. 
    This week the plan is
    Monday – Meatloaf and corn on the cob
    Tuesday – Bread Bowls with Cheesy Potato Soup
    Wednesday – Girls night!! kids with Nana and Opah, Mark is on his own.
    Friday – Church party. I’m making 2 dozen (maybe more) cookies.  I’m going to try these Snickerdoodles
    Saturday – Lasagna

    Monday – breakfast: pancakes  dinner: sloppy joes
    Tuesday – breakfast: strawberry banana smoothies  dinner: baked ziti
    Wednesday – dinner: chicken pot pie
    Thursday – dinner: sour cream potato bake
    Friday – dinner: grilled chicken salad
    Saturday – breakfast: mixed berry muffins  dinner: leftovers
    Sunday – dinner: potstickers and rice

    Well, it’s another crazy meal week here. Planning meals for some is hard enough, but planning when you don’t know how your week is going to turn out is even harder!  If you haven’t been able to tell, we have not had Baby Prince yet. He was due last Wednesday on the 4th, but he’s still hanging out in my ever growing belly.  However, today I believe will be the day! I have an appointment to go see my OB this morning, and we should be scheduling the hospital for later this afternoon, when Mark is off work.  My mom picked up the Princesses last Saturday and will have them until this coming Friday, so I don’t have to worry about food for them – just Mark and I. 
    Here’s a somewhat Meal Schedule for us this week.
    Monday – hospital food
    Tuesday – hospital food (Nice romantic dinner provided by the hospital!)
    Wednesday – posisbly hospital food, or a Freezer Chicken Pot Pie
    Thursday – Frozen Pot Stickers (store bought)
    Friday – Freezer Bean Burritos from Martha Stewart
    Sunday – ?
    I have no energy to think a full week ahead right now.  I may try and put up a chicken enchilada today before going to the hospital, and that will give us one more freezer meal.
    I also have a wonderful Visiting Teacher (sisters from my church that visit me monthly) that has promised to bring me dinner one night when we’re home as well. 
    So what’s on your menu this week?  What do you do for meals when you have no idea where you’ll be during the week?

    Well, this is going to be a very interesting week here at our home. There is a lot of unknowns thanks to baby Prince here and my Grandma’s funeral. So I haven’t been able to plan a menu like I would’ve liked to. Here is what I do have though!

    Monday – BLT Pasta Salad (plans changed last week, so it’s getting bumped)
    Tuesday – home made pizza
    Wednesday – Hamburger Helper
    Thursday – Possibly fast food on the way to Grandma’s viewing. OR Ramen Noodles
    Friday – More than likely eating at my parents after the funeral. Otherwise sandwiches.
    Saturday – Dinner at my parents
    Sunday – Sloppy Joes

    Edit – I have not had baby Prince yet. Sorry for any confusion!  Unfortunately my kids have all decided to come at different times during pregnancy. So I’ve gone almost exactly at 40 weeks, at 37 weeks, and at 41 weeks. It makes it hard to plan anything these last few weeks and days, including meals.

    It’s another Menu Plan Monday. I’m attempting to clean out the fridge, freezer and pantry this week, to make room for some freezer meals in the budget and in the freezer!
    Wednesday – Chimichungas’s and Taquita’s
    Thursday – Lasagna (plus 1 for the freezer)
    Friday – Baked Potato Bar
    Saturday – BLT Pasta Salad
    Sunday – Leftovers

    Last week we tried a Pork with Strawberry Balsamic Sauce. I LOVED it. I thought the strawberries would be a great addition for the kids. Turns out my kids prefer Pork over cooked strawberries. I don’t mind really, because it means they got some meat in their diets. I also know if the strawberries hadn’t been cooked, they would’ve been preferred over the pork. I love watching my kids enjoy good healthy food!

    Monday – Home Made Pizza. No Bake Cookies
    Tuesday – Mac and Cheese. I’ll be at the doctors, so trying to make it easy for Mark!
    Wednesday – Plum Pork
    Thursday – Soup in bread bowls
    Friday – Egg stuffed Potatoes
    Saturday – Sugar crusted Vanilla French toast for breakfast.  Leftovers for dinner
    Sunday – Slow cooker Chili
    Saturday my sister in law is throwing me a baby shower. Since it’s also St Patty’s day, I’m going to be baking up some fun treats for it with the kids. Things like –

    Sweet Pineapple Steawberry Spa Water
    Orange Sorbet for pots of gold
    Green thin mint cookie truffles

    and a nice Rainbow Fruit Platter

    Last week when I went shopping, pork was discounted, so I grabbed a couple packages of it. Since I already had our plan for the week though, it’s been freezing just waiting for some yummy dishes like this Pork with Strawberry balsamic sauce. I think the Princesses will just love the strawberry addition!

    Monday – Meatloaf and steamed carrots
    Tuesday – Potstickers and Fried Rice
    Wednesday – Birthday Dinner for Relief Society. Mac and Cheese for kids and Mark
    Thursday – Chicken Nuggets
    Friday – Pork with Strawberry Balsamic sauce
    Saturday – leftovers
    Sunday – Crockpot Orange Chicken

    Friday – Cousins birthday party (not sure about dinner, we may go out to eat)
    Saturday – Girls at my parents. I’m taking Mark to Cafe Rio for his birthday.

    I’ve got a couple ideas for Mark’s birthday cake, but I’m not sure which one to do.  (Hey Mark, what do you want?!). Normally I always make him a carrot cake. It’s his favorite. But with the invention of Pinterest, well, I’ve come across these twists.

    I am excited for this weeks menu! I must be in a baking/cooking mood this week. Perhaps it’s because Valentines is over, and Princess C’s birthday is passed, but I feel like I have time this week!
    Monday: Pizza. Texas Chocolate Cake with leftover blackberry buttercream frosting.
    Tuesday: Hambuerger Helper
    Wednesday: Meatless Nachos
    Saturday: Church party
    Sunday: Cheese and Chicken Enchiladas
