    A Peanut Allergy

    Guess what!! A couple weeks ago I took Lincoln in to the allergist to do an oral challenge with Peanut Butter. He had been diagnosed a year ago as having a peanut allergy, along with a few other food allergies. 
     
    As far as we knew though, he had never reacted to peanuts, but just had a strong aversion to them. So when his most recent tests came back inconclusive, the only way to know for sure was to feed him peanuts. 

     
    This is of course done in a controlled environment, at the allergists office, so that were he to have a reaction, immediate care could be given. Lucky for us, we walked out about 3.5 hours later knowing he can eat peanuts just fine – even if he doesn’t actually like them.
     
    The kicker to this new diagnosis (or is it an undiagnosis?) is that he should now eat peanuts a few times a week to keep the peanut allergy from coming back. Unfortunately, he still really does not like peanuts.

    Trying out Peanut Butter

    I came across this recipe for Peanut Butter Munchies in the blog archives, and thought just maybe I could tempt him with a chocolate cookie that happens to have peanut butter in it. The trick almost worked. He took a bite or two, then looked at me and asked what else was in it. I asked him if he liked it. He said he sort of liked it. So I encouraged him to eat the whole thing before telling him what was inside. 
     
    However, I have 4 other kids, and most can’t hold their tongues. When he again asked me what was inside, his sister chimed in “It’s peanut butter! Isn’t it great!” That was the end of that cookie. He refused to eat the rest of it, claiming he never actually liked it. Awe well, a bite or two is still something, and will hopefully keep any peanut allergy from returning.

    In the process, you all get to benefit from prettier pictures of the cookies and a more accessible recipe card! I hope you enjoy these as much as the rest of my family did. The original recipe source is unknown as I had this written down in an old recipe collection. Although, it was copied wrong, so this is my personal take on the original.

    Instructions
    1. Preheat the oven to 350 F.
    2. In a medium bowl, stir together flour, cocoa, and baking soda. Set aside.
    3. In a large mixing bowl, beat butter, granulated sugar, brown sugar, and 1/4 cup Peanut Butter.
    4. Add egg, milk, and vanilla. Beat well.
    5. Add the dry ingredients to the wet, and mix well.
    6. Form dough into balls approximately 1 1/4″ in diameter. Place on a cookie sheet, and set aside.
    7. Combine powdered sugar and 1/2 cup peanut butter. Shape into approximately 3/4″ balls.
    8. Flatten the chocolate balls, place peanut butter ball inside, and fold chocolate ball around it.
    9. Place on an ungreased cookie sheet. Flatten the cookies, and sprinkle with some vanilla sugar for an extra dash of yum.
    10. Bake for 8 minutes. Allow to cool for 1 minute, and then remove from pan to a cooling rack. Enjoy!

    We wanted to go hiking over Memorial Day Weekend, so I wanted to have something to keep the kids energy up, but that they wouldn’t complain about either.  We headed to Walmart to pick up ingredients for our own trail mix. I could not resist grabbing a couple bags of TWIX Bites to toss in the mix. I had to reach way back in the shelf, since everyone else seems to like TWIX as much as I do.

    Ingredients
    1. 4 cups corn square cereal
    2. 1/2 cup dark chocolate peanut butter
    3. 1 TBS butter
    4. 1/8 tsp Almond extract
    5. 3/4 cup powdered sugar
    6. 1/4 cup chocolate covered craisins
    7. 1 1/2 cups mini pretzels
    8. 1 cup roasted garlic rye chips
    9. 1 cup raw peanuts
    10. 2 6oz bags TWIX Bites
    11. 1/4 sunflower nuts
    12. 1/2 cup freeze dried raspberries
    Instructions
    1. Combine the peanut butter, butter and almond in a small bowl.
    2. Microwave for about 30 seconds on high.
    3. Pour over corn square cereal and mix until all the cereal is coated.
    4. In a paper bag, combine chocolate covered cereal and powdered sugar.
    5. Close the bag and shake until well powdered.
    6. Pour cereal into a large mixing bowl.
    7. Add the rest of the ingredients and toss like a salad.
    8. Divvy into individual servings and head outside for some summer fun.

    We ended up driving up the Uinta Mountains to get to Cascade Springs for our hike. It’s so beautiful up there, but there was a sign asking us not to bring food onto the trail. So after the hike the kids were thrilled to have a chocolatey treat. I’m pretty sure all the TWIX Bites were picked out first while the peanuts were mostly handed back to me…

    Strawberry Mango Popsicles

    Cool down this summer with Strawberry Mango Popsicles. Without added sweetener they are a treat both kids and Mom adore.
     
    Mmm, Summer is almost here, can you feel it? This week is my birthday, so I decided to do a little bit more of what I want to do and a little less of what I need to do. It’s a little present to myself. 
     
    It pretty much all involves cooking of some sort or another, and a little home organizing. What can I say, those are the things that really make up what I enjoy doing. Though I’d rather organize someone else’s home, mine really needs it with the end of school year papers that need sorted and stored (the special ones only). I’ve got piles of items to take to the thrift store, and an idea for rearranging my whole bedroom. 

     
    I’ve been seeing popsicles popping up around my foodie friends blogs, but these Double Berry Popsicles from The Grant Life, really made up my mind I needed to make some.  So I did. 
     
    Strawberry Mango Popsicles
    Mango, Strawberry and a little sweetener if you like whip up to make these perfect summertime treats

    Ingredients
    1. 1 mango, cut into chunks
    2. 1 cup plain yogurt
    3. 3 strawberries, quartered
    4. 1/2 cup Welch’s Strawberry Breeze
    Instructions
    1. Begin by blending the mango alone on a low speed.
    2. Once it is finely chopped, add the yogurt and puree – I use my smoothie button on my blender.
    3. When you can no longer see chunks of mango, add the strawberries and juice.
    4. Blend until smooth.
    5. Pour the mix into popsicle molds, and freeze overnight.
    6. Pass out to the kid and win best mom ever award.

    There are a bit on the tart side, but I really wanted to avoid any extra sugars. If you prefer them more sweet, you can try adding a little honey. My kids devoured them without, though, and for my kids that’s a big deal!
