    Make this deliciously easy coconut poke cake for dinner guests

    If you’re not sure what a poke cake is, it is, quite literally, a cake you poke holes into. Once you do this, you can pour in any filling of your choice. It can be a chocolate sauce, strawberry cream, or simply condensed milk. This step won’t take more than 5 minutes and it guarantees that every bite will be rich with flavor.

    Sounds good, right? Here’s what you’ll need for Coconut Poke Cake:

    Chocolate cake, caramel sauce, and a cream cheese topping all flavored with coconut for a delightfully easy dessert.

    Cake
    1. 3 eggs
    2. 200 ml coconut milk
    3. 50 g melted dark chocolate
    4. 125 g butter (room temperature)
    5. 150 g brown sugar
    6. 130 g all-purpose flour
    7. 3 tbsp cocoa powder
    8. 2 tsp baking soda
    9. 40 g desiccated coconut
    Caramel
    1. 400 ml sweetened condensed milk
    2. 50 g butter
    3. 1/4 tsp salt
    Coconut Cream Cheese
    1. 350 g cream cheese
    2. 50 g butter
    3. 50 ml maple syrup
    4. 5 tbsp of thick coconut milk
    5. 30 g desiccated coconut
    6. Roasted coconut to garnish
    Instructions
    1. Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
    2. Begin with the cake base. Crack the eggs into a bowl and mix in the coconut milk, dark chocolate, butter, and sugar.
    3. In a separate bowl, mix all the dry ingredients: flour, cocoa powder, baking soda, and desiccated coconut.
    4. Combine the dry ingredient mixture with the wet ingredients and mix thoroughly.
    5. Bake for around 20-30 minutes. Be sure to keep an eye on it, especially after the 20-minute mark. To check if done, perform the toothpick test.
    6. Poke holes all over the cake using a straw.
    7. Prepare the caramel filling. In a pan, heat the butter and wait for it to melt. Once melted, pour in the condensed milk.
    8. Over medium heat, let it simmer for approximately 15 minutes. Keep stirring until it thickens and resembles the golden brown color of caramel.
    9. Turn the heat off and slowly pour the caramel into the holes. Set the cake aside to cool for about an hour.
    10. Prepare the cream cheese. In a bowl, combine all the cream cheese ingredients and keep in the fridge to cool for half an hour.
    11. Slather the cream cheese generously over the cake.
    12. Garnish the cake with roasted golden coconut bits.
    13. Cut out a slice and enjoy!

    Cake and Ice Cream Features at Weekend Bites
     
    How did you all know we were heading into birthday season here? So many of you shared delicious looking cakes, cupcakes, and ice cream I had a hard time choosing this weeks features. We kicked off our birthday season with Princess C’s 8th birthday this week. It’s sort of a week long celebration since her birthday was Tuesday, and she’ll be getting baptized on Saturday, so family has slowly been trickling in to see us and celebrate. Next week is my brothers birthday, and then the week after is Mark’s and his nephews. I can’t wait to put all of these recipes to good use in the coming weeks.

    I decided to limit sugar this month. I don’t know what I was thinking! Everywhere I turn there’s some sweet baked goods calling my name. This week for example looking through all your recipes. These breads and cakes were just calling to me! I’ll probably try them once a week throughout the rest of the month, because oh yum! Enjoy

    I feel I’ve slacked in sharing recipes with you lately. I don’t know how some of you post so many recipes all the time, you are absolutely amazing! I had planned to be sharing an Easter Cheesecake with you this past week, but despite some pretty pictures, it was not a fabulous cake. So I’m still tweaking it. Maybe next week. In the meantime….

    Lydia's Flexitarian Kitchen

    The first question I had to ask myself when visiting Lydia’s site is “What is Flexitarian?”  Thankfully she sums it up in her about us section as “semi-vegitarian style of eating”. I learned something new. I have really been enjoying myself as I browse through the recipes at Lydia’s Flexitarian Kitchen. She and her husband share the kitchen, while she cooks most of the sides and he makes the main dishes. I love seeing families in the kitchen together (currently my husband and 7 year old are in the kitchen making our dinner).
    After checking out her Old Fashioned Lemon Pound Cake and Wake Up Oatmeal Cups, I suggest browsing through her 5 Weeks of Flexitarian Eating posts. It looks like a lot of great info in there.

    Say it With Cake

    Anyone out there love cake? Who doesn’t like it? ok, most of my family, but that’s besides the point. I love cake. When they look pretty, I love them even more. 
    Shamene is the owner behind Say It With Cake. She is married with one little boy. Ever since Shamene started joining us for Foodie Friday, I have been captivated with her beautiful cakes, and amazing photography skills. What has really stood out to me though, is how simple Shamene’s cakes are to recreate. She uses boxed cake mixes, with a couple additions to up the flavor in each one. 
    Last week Shamene shared some holiday inspired mini cakes, truffles that would be a great neighbor gift, and a Black Forest Cake that makes my mouth water looking at. Links to the recipes are under the photos.

  • Jake and the Neverland Pirate’s Birthday Party

    Jake and the Neverland Pirate’s Birthday Party

    Last Saturday Princess C turned 5 years old. I don’t know where the time went with her. I sometimes look at her, and feel that I’ve lost a lot of time already.  I still feel like she should be 2 even though we have 2 kids younger than her. I just can’t believe she’s 5!!! 
     
    In keeping to tradition with my family, we all woke up before the birthday girl to make her a special request breakfast (Chocolate cereal and a smoothie). We then carried it down to her room where we woke her up with a rousing rendition of Happy Birthday.

     
    This is actually the first birthday in our little family that we’ve done the breakfast in bed thing. It was definitely a hit, and will be continued!  While she ate I pulled out her new birthday outfit Mark bought her, and got ready for a special photo shoot in our backyard.

    I’m working on my photography skills, but having a sunny day sure helped! This is one that just shines with Princess C’s personality.
     
    Finally she had to wait for her little friends to come over. While she waited…
     
     
    and waited…
     
    I finished up her birthday cake.

    I was actually pretty pleased with how it turned out. I used a box mix for the cake (chocolate of course). Between layers, I put some cream cheese frosting and a bit of my freezer Strawberry jam.  I then mixed some red food coloring into the rest of the cream cheese frosting to get the pink, and outlined and filled her bandanna.
    For her skin, I used this Chocolate Buttercream recipe from Savory Sweet Life.  Once I had her skin on, I went in for the details. These are always what get me. If I had planned ahead, I probably would have made the pigtails from some rice krispy treats, but I didn’t. So I used my tubes of decorating icing and piped on the hair strands in black, and the whites of the eyes. I used more of the buttercream for her irises, and then black gel for the pupils, nose and mouth.
    Take note here – don’t draw the mouth on while looking at the cake sideways – it will not be where you intended it.
     
     
    While I finished off the cake, Mark put together a treasure hunt – burned map included. 
     
    Unfortunately we overbooked ourselves for the day, so Mark had to help remove a tub, and I forgot the camera while on our treasure hunt. What did they find though?  Little gold bags full of pixie dust of course.
    That sneaky Hook always trying to make off with the pixie dust.
    The bags were very easy to make. I used some gold fabric my sister in law had given me, and cut it into rectangles. Then I folded them in half and sewed up the sides, turned down the top and sewed it with a ribbon inside. The tricky part is making sure you don’t snag the ribbon or they won’t close.  Add some silver and white glitter for the pixie dust. The kids had so much fun pinching a little dust out and throwing it over themselves and each other.  It’s a wonder our house didn’t float away in it.
    Of course we finally had cake and ice cream, and then the real treasure of presents.
