    Holidays are upon us! Have Pomegranate Lemonade on hand to add to a little sparkling beverage and you’ll always have a delicious special drink to share.

    One night, while I’m putting the kids to bed, Mark receives a phone call. When I come out, he tells me someone is coming by with some pomegranates. Cool, I say. I love Pomegranates! But why, who gets rid of Pomegranates?

    “Oh they said they bought too many, and don’t want them to go to waste”

    Sounds good to me. Though I’m not sure how anyone can buy too many pomegranates. They’re like a once MAYBE twice special fall/winter treat I allow myself. So I wait up. Expecting them to come by with maybe 4-5 pomegranates. Maybe they weren’t expecting the hard work that comes with eating this delicious fruit?

    What I was not expecting were 2 1/2 boxes full with approximately 100 pomegranates! Seriously? I was most definitely in my own kind of fruit heaven. I spent the next 2 weeks…yes 2 weeks. Peeling this precious fruit and pulling out the little arils.

    I tell you what, though, the work involved was completely worth it in the end. I have 2 quarts of frozen arils in my freezer – perfect for salads, parfaits, and adding color to other dishes – 6 pints Pomegranate Jelly, and then I took the rest and juiced them (which is no easy task without a juicer!), and made 3 quarts of Pomegranate Lemonade.

    Pomegranate Lemonade
    Enjoy a delicious glass of Pomegranate Lemonade

    Ingredients
    1. 2.5 Liters Fresh Pomegranate Juice
    2. 2 cups fresh squeezed lemons
    3. 1 1/2 cups sugar (more or less to taste)
    Instructions
    1. Combine the Pomegranate Juice, Lemon Juice and sugar in a pot. Bring to a boil, and simmer until sugar is all dissolved.
    2. Depending on how sweet your pomegranate juice is, and how tart the lemons are you can add less sugar. My pomegranates were more tart, and lacking in the sweet flavor.
    3. Pour hot juice into sanitized quart canning jar.
    4. Dip lids in boiling water for a few seconds, then place on top of jars. Secure with jar rings.
    5. Process in a water bath for 20 minutes. Let cool, and listen for a “pop” that will signify the lid is sealed.
    6. When ready to serve, pour over a cup of ice and let chill. To make it fancy, mix with sprite or similar soft drink. Great for holiday gatherings.
    Notes
    1. Sealed juice will last up to 1 year.

    I love when Disney releases their old classics from the vault!  The Jungle Book was released February 11th on Bluray/Combo pack Diamond Edition. I have to admit, we were so excited, that when we showed up at Walmart to purchase it they were just finishing putting the display out.  We were not going to miss the limited supply of Jungle Book Lunchboxes that you can get exclusively at Walmart!

    I have a 7 year old daughter who for some reason has loved The Jungle Book ever since we found an old copy of the large Disney Book at a library sale a year or so ago. She has laid claim to it, and considered it her favorite – even wanting to do her science project on jungle animals. We don’t own a VCR anymore, and my parents only have the VHS version, so she has never seen the movie.

    Friday nights are our movie nights, and we’ve been meaning to invite my niece and nephews over for a long time. What better way to introduce them all to The Jungle Book movie than a party with cousins?  Perfect! I really wanted to make this a night to remember for everyone, so we grabbed some #JungleFresh fruit while we were at Walmart grabbing the movie. 
     
    Oh so many ideas! We decided to party like Baloo and enjoy the Bare Necessities of Life – Food, family and shelter.
     
    Food
    Of course we had to have Baloo’s Claw Kabob. Though no prickly pears available, we did find plenty of other fresh fruit, including some special Asian Pears. Also on our menu were Kaa’s Hypnotic cupcakes, Fancy Ants (raisins on celery), Scaredy Cat Chili, and King Louie’s Coconut Banana smoothie
     
     
    We made Kaa’s hypnotic cupcakes using Duff Goldman’s Zebra cake mix and some swirled chocolate and vanilla frosting on top. 
     
    The real treat came in the form of King Louie’s Coconut Banana Smoothies. Yum yum yum!!  I’ll be honest though, these were a little tricky to make, but so worth the mess.  Check out my awesome husband cutting open our coconuts. 
     

    Yes that is a coconut on a miter saw. Since we were going to be putting our smoothie inside the coconut shell, we wanted some pretty flat bottoms, and smooth edges. To be honest I’m sure there is an easier way (like the ways suggested on wikihow), but I let my husband have his fun. Plus we got some awesome coconuts out of it.

    Family
    We were ready to party with all that food, but we still need some family.  I was telling my friend about the party, and she jumped on our bandwagon and had her husband blow us up some balloon animals. Definitely a highlight for any party with kids are the balloons. Just check out the birds, snakes, monkeys, elephants and of course, Baloo!

    During the movie some kids were pretty entranced with their coconut smoothie while watching, and others had fun making paper plate masks. We were going for jungle animals, but I’m sure you know what happens when you give kids markers and paper plates – they take their own liberties.

    After the movie was over we had some extra wiggles we needed to get out before sending everyone home, so we reenacted Shanti as she tried to carry the water from the river where Mowgli first meets her. The kids wanted me to put water inside the bowl…but not in my house kids! Maybe another day during the summer when we’re outside.

    I’m not sure if it helped get the wiggles out, or just riled them up some more, but they did love it immensely. Even Uncle M joined in with some bowl balancing and hip waving.
     
    Shelter
    We added some Jungle flair to our party by hanging dark green crepe paper around the television. It really gave the feeling of watching it in the Jungle!
     
    If you ever find yourself lost in the jungle, you could almost completely recreate this smoothie. It will probably be a bit chunkier since you’ll use a rock to mash up all the fruit, and your coconuts may not sit on a flat surface, but you’ll still enjoy this treat.

     

     
    Coconut Banana Smoothie in Coconut Shells
    Yields 4
    Celebrate the Jungle Book with King Louie’s Coconut Banana Smoothie

    Ingredients
    1. 4 whole coconuts
    2. 3 frozen bananas
    3. 8 oz pineapple (or 1 cup)
    4. 2 15oz can papaya chunks (if you can find fresh, even better!)
    5. 1/2 cup Honeydew Melon chunks
    6. 2 cup coconut milk
    7. 2 cup apple juice
    Instructions
    1. Drill 3 holes in your coconuts and drain out the milk. You can save this to use in your smoothie – we used a can of coconut milk.
    2. Use your preferred method to open your coconut. We used a miter saw to smooth out the bottoms so they wouldn’t roll around, and then sliced 1/2 inch off the tops. Rinse well.
    3. Take your remaining ingredients and toss in your blender.
    4. Blend until smooth. You may need to do this step in 2 batches to fit in your blender.
    5. Pour smoothie into the coconut shells.
    6. Add a straw and enjoy.

    Gingerbread Cookies and Mulling Spice Sachets

    Christmas is in 13 days! It’s the time of year most of us find ourselves in the kitchen baking for our kids, extended family, and sometimes for our neighbors. I personally love turning to McCormick for my baking needs. Does anyone else have a cupboard dedicated to baking? I’ve got a shelf full of McCormick spices in my cupboard (I should share a pic sometime of that!).  I was really excited when McCormick asked me to bake up some of their recipes and share them here with you. 
    While looking through their list, I knew I couldn’t stick to just one. I mean really, what goes better with Mulled Cider than a fresh batch of Gingerbread Cookies?  Picture yourself curled up by the fire with a blanket, a warm mug of Cider and a plate full of cookies ..mmmm… sorry I went to a happy place there. 

    Are you hungry yet?  Let me share the recipes with you. We’ll start with the Gingerbread Cookies, because you need the most time for these.

    Ingredients
    3 cups flour
    2 tsp McCormick Ginger, Ground
    1 tsp McCormick Cinnamon, Ground
    1 tsp baking soda
    1/4 tsp McCormick Nutmeg, Ground
    1/4 tsp salt
    3/4 cups butter, softened
    3/4 cup firmly packed Brown Sugar
    1/2 cup Molasses
    1 egg
    1 tsp McCormick Pure Vanilla Extract
    Directions
    Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in a large bowl. Set aside. Beat butter and brown sugar in large bowl until light and fluffy. Add molasses, egg and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight. 
    *At this point you can start making the Mulling Spice Sachets
    Preheat oven to 350 F. Roll out dough to 1/4 inch thickness on lightly floured work surface. Cut into different shapes. Gingerbread Men are classic, but we chose to make Christmas Trees and presents for a holiday scene. Place cookies 1 inch apart on an ungreased baking sheet. 
    Bake 8-10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheet for 1-2 minutes, and then remove to wire racks to cool completely. Decorate as desired. Store in an airtight container for up to 5 days – IF you can make them last that long
    Cream Cheese Frosting (my recipe)
    8 oz Cream Cheese, softened
    1/2 cup Unsalted Butter, softened
    4 cups Powdered Sugar
    1 tbs Milk
    1/4 tsp Vanilla Extract
    Whip cream cheese and butter until well mixed and fluffy. Slowly add powdered sugar, milk and vanilla extract. Continue to mix well. Frost cookies. Store leftovers in the refrigerator. 
    While you’re waiting for the cookie dough, these Mulling Spice Sachets are a cinch to put together. They are great to have on hand for yourself, or include as a gift to friends and family. 
    Ingredients
    McCormick Cinnamon Sticks, broken in half
    McCormick Cloves, Whole
    McCormick Allspice, Whole
    Cheesecloth
    Directions
    Cut cheesecloth into 4inch squares. Place 2 cinnamon half sticks, 2 cloves, and 2 allspice on the center of the cloth. Pull ends together, and tie with string. 
    To mull your own Cider, add 1 sachet to 2 cups Apple Juice (or Cider). Simmer over medium heat 10-15 minutes, or until fragrant. Discard the spice sachet and enjoy.

    It got nice and cold out here this week. We had a pretty big snowstorm blow through. And by big, I mean big for this area. There’s a couple inches on the ground, and it’s melting pretty fast. The temperature however, has stayed nice and freezing, meaning lots of hot cocoa.
     
    We are in the middle of moving into our new home, on top of Christmas, yes. So I’ve been trying to make do with what we have in our fridge and pantry. I created the following two Hot Chocolate recipes on a whim when the girls came screaming in from the cold.
     
    
     
     

    Mint Hot Chocolate

    Ingredients
    4 1/2 cups milk
    4.67oz (or 28 pieces) Andes Mints
    1 tsp Dutch Processed Cocoa powder
     
    Directions
    Heat milk over medium high heat until warm. Add mints and cocoa powder, turn heat to medium. Stir frequently until chocolate is all melted. Serve in mugs, and enjoy.
    If I had had Whipped Cream it would have been that much better with some chopped Andes on top as well.
     

    Cinnamon Hot Chocolate

    Ingredients
    4 cups milk
    1 cinnamon stick
    1/4 cup Dutch Processed Cocoa powder
    2 TBS sugar
    Handful semi-sweet chocolate chips
     
    Directions
    Heat milk over medium high heat until warm. Add the rest of the ingredients. Stir frequently until chips are melted and powder is mixed in. Turn the heat to medium-low for another 5-10minutes. Enjoy a nice cinnamony chocolate drink.

    Minimal ingredients, make for another quick and easy hot chocolate I’m sure my kids will enjoy.

    Last week we talked about the Stress of the Holidays, and I told you how I’m having a Stress Free Holiday.
    After such a deep and though provoking topic, I wanted to lighten things up a bit. So this week curious minds want to know
     
    Hot Cocoa or Apple Cider?
     
    I know right?! What a conundrum you face when the choice is placed in front of you. There they are staring you in the face…a packet of Hot Cocoa with mini marshmallows, or that wonderfully harvest taste of hot apple cider! 
     
    Which do you choose?  How can you choose?  You definitely can’t have both. Cocoa and Cider do not mix (hmmm, though that does give me an experiment to try later).
     
    The answer is simple. Two mugs. But now what? Do you start with the cocoa or the cider?  It’s like we’re back to square one.
     
    I love both these drinks, especially this time of year. Could you tell?
    I think they are for separate moods though. When I think Hot Cocoa, I’m snuggling under a blanket, my kids are snuggled up next to me, and we all have a steaming mug with a favorite story being read. It’s cozy, it’s warm, and definitely a good sleep aid. So I guess if it’s night time, I’d prefer Hot Cocoa.
     
    Apple Cider. Oh what do I say about you!  When we took a trip in my 1st grade class to the Apple Orchard, and they let us try you so fresh from the apples, I was hooked. You’ve been my friend ever since. Store bought, Big Name Label “Apple Cider” just isn’t you.  You’re my Adult drink; my sophisticated feeling, harvest loving, tree hugger, fashionable drink.  To change a catchy tune to fit me and you “The best part of waking up, is Apple Cider in my cup”.
     
    Admittedly, I do drink the powdered stuff, and enjoy it. When I can get the real stuff straight from the orchards though, that is good. A nice warm cup of apple cider wakes my taste buds and my senses up, and just warms me throughout the day.
     
    Now tell me, what about you? Are you like me, and can’t choose; or do you have a favorite?

    12 oz can orange juice concentrate
    1 cup Milk
    1 cup water
    1/4 cup or less sugar (base on your taste)
    12 ice cubes

    Direction
    Blend all ingredients until smooth. Enjoy

    Growing up my Mom always made us this amazing Orange Julius!  I loved them. I remember buying an Orange Julius from the mall once and thinking that is was no where near as good as my moms. So of course after getting married one of the first calls home was to get my moms recipe.  Sometimes when I make it, I’ll add in other fruits, or juices, but I find the best recipe is still the original.
