    Tropical Salad with Marshmallows

    I don’t normally go for anything with marshmallows…unless it’s smores or hot chocolate. I found this recipe for a Peachy Salad in one of my Taste of Home magazines. I debated on it for a couple weeks, all because of those pesky marshmallows.

    I am so glad I gave it a try!  The marshmallows start to dissolve with all the fruity goodness and give a little extra airy texture to the salad. I decided to change up some of the fruits from the original recipe to create my own flavor combo.

    Every Friday we have pizza and a movie night. It’s the one night of the week the kids really look forward to, and I don’t have to fight anyone to eat their dinner. Sometimes we’ll have bread sticks, or chips, or other not so good for you sides with it. After all, it’s supposed to be a fun night right?

    When I made the Tropical Salad I thought it would make a great side for pizza while the marshmallows kept it fun and exciting for the kids. I think for once I ate more of my side than I did the pizza. It was amazing!!

    Fruit and Marshmallows combine for a fun salad kids will eat.

    Ingredients
    1. 21 oz can peach pie filling
    2. 20 oz can crushed pineapple
    3. 11 oz can mandarin oranges
    4. 1 banana
    5. 1 1/2 cups mini marshmallows
    6. 1/4 cup frozen raspberries
    Instructions
    1. In a large bowl combine all ingredients. Refrigerate until ready to serve.

    One Pot Chicken and Vegetable Bake

    Doesn’t that look delicious?  I had a lot of fun coming up with this simple dish.  The ingredients reminded me of shepherds pie, but different enough it’s more what I imagine a farmer would be eating. 
    I have been horrible at meal planning this year. Thank goodness that wasn’t one of my resolutions right?  I was trying to go with something quick and easy last Saturday. I succeeded with both quick and easy prep time, but I forgot to thaw the chicken, so cook time took a lot longer than expected, which resulted in PB&J sandwiches for dinner that night. The chicken and vegetable’s made a great “leftover” lunch on Sunday though. 
    One of the fun things about this dish, was because of it’s ease to put together, I was able to recruit some help in the kitchen from Princess V. She had a rough day and needed some special time with just mom and her attention.  Before we tossed everything in the baking dish, we decided to try out my new Salt and Pepper Grinder from Ozeri. I have never owned a grinder, but I recall how fun they were as kid to twist. 
    The Ozeri Duo Ultra Salt and Pepper Mill and Grinder fits exactly what I needed. So many recipes call for salt and pepper to taste, with no measurement. So I tend to be pouring it into my hand and pinching some into my dish, and then dumping what was in my hand into the garbage.  What a waste! I mean I realize a tiny bit of salt or pepper in the garbage isn’t that big a deal, but I still hated doing that.  With the Ozeri Duo Ultra, I’m able to give it a twist or two, and feel confident that there isn’t too much salt or pepper.

    Princess V had a lot of fun pouring the salt into the mill. It was pretty easy too! The top pops straight off, and the bottom cover converts into a funnel for the top to keep the salt and pepper separated while pouring them in.

    Once we had the salt and pepper in, I let Princess V toss in the rest of the ingredients and then give a couple twists – we may have ended up with a little extra salt, and not as much pepper – of the grinder over the top. I hope you enjoy this easy farmers meal as much as we did.

    On to our feature.  This week I’m really excited to share with your a returning blogger to our Foodie Friday Party. I kid you not, I was drooling over her photo’s the other night. Please welcome and say Hi to 
    Becca pulled me in first with her blog name – Amuse Your Bouche. If you don’t know, Bouche is French for Mouth. I love the French language, and Becca’s play on words mixing English with French I found delightfyl. 
    Becca herself lives in the UK with her fiance and pet rats (really Becca, rats?).  She has a beautiful eye for good food, and takes some stunning photo’s of them. I never would have guessed Vegetarian foods could look so good…all the time. 
    Yep, that’s right, Becca is a vegetarian, and for the month of January she joined some friends in a Vegan challenge (giving up her cheese!). I think these recipes she shared though, will please anyone, vegetarian or not.  Take a look, and then don’t forget to go Follow Becca and amuse your own bouche!

    I was really excited when Diane announced China for this month’s Food of the World party. It is one cuisine I know my family generally enjoys, and I have a cookbook full of genuine Chinese recipes. 
    You may recall if you’ve been around for a few years, that I had the opportunity to review Feeding The Dragon by Mary Kate and Nate Tate. This brother and sister team took a trip to China and decided to travel the whole country photographing the local, food, and learning traditional ways and recipes to cook the food. It is such a wonderful book if you want to learn more about Chinese culture and food. 

    Shortly after reading the book, and browsing the recipes, I tried my hand at some Sesame Chicken Lettuce Wraps that turned out delicious. I mostly use the recipes and dialogue in this book as a base line, and then substitute with what I have on hand, or what my family prefers (less spice usually). 
    For today’s link party I wanted to make something more traditional for the Chinese New Year Spring Festival – which by the way is apparently in full swing according to my cousin who just traveled through Singapore and caught a kickoff celebration. I digress…so I was trying to find something that the Chinese eat on their New Years, and although I came across a lot of different lists, nothing was sounding too good. I headed back to my cookbook, and decided to make Chicken Spring Rolls. While reading through Mary Kate and Nate’s travelogue, I was pleasantly surprised to find Spring Rolls are traditionally eaten during this festival. YAY! It makes sense once you connect the names “Spring Roll” and “Spring Festival”.  
    I altered the recipe from the book to be a Vegetable Spring Roll, but I used the same methods to cook the filling, and also included similar flavor combinations. I hope you enjoy.  Oh and FYI – I did it again, I chose something that needed to be fried. My mind kept telling me to stop, pick something different, but I pushed forward despite my past failures.

    It’s been a great start to 2014! We didn’t seem to lose too many of you last week with the Holidays, so I hope to see many of you back today. Mark’s family was all visiting from out of state and country, and Prince L decided he needed a stomach bug (that or he is starting to get car sick…).

  • Gingerbread Cookies and Mulling Spice Sachets

    Gingerbread Cookies and Mulling Spice Sachets

    Christmas is in 13 days! It’s the time of year most of us find ourselves in the kitchen baking for our kids, extended family, and sometimes for our neighbors. I personally love turning to McCormick for my baking needs. Does anyone else have a cupboard dedicated to baking? I’ve got a shelf full of McCormick spices in my cupboard (I should share a pic sometime of that!).  I was really excited when McCormick asked me to bake up some of their recipes and share them here with you. 
    While looking through their list, I knew I couldn’t stick to just one. I mean really, what goes better with Mulled Cider than a fresh batch of Gingerbread Cookies?  Picture yourself curled up by the fire with a blanket, a warm mug of Cider and a plate full of cookies ..mmmm… sorry I went to a happy place there. 

    Are you hungry yet?  Let me share the recipes with you. We’ll start with the Gingerbread Cookies, because you need the most time for these.

    Ingredients
    3 cups flour
    2 tsp McCormick Ginger, Ground
    1 tsp McCormick Cinnamon, Ground
    1 tsp baking soda
    1/4 tsp McCormick Nutmeg, Ground
    1/4 tsp salt
    3/4 cups butter, softened
    3/4 cup firmly packed Brown Sugar
    1/2 cup Molasses
    1 egg
    1 tsp McCormick Pure Vanilla Extract
    Directions
    Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in a large bowl. Set aside. Beat butter and brown sugar in large bowl until light and fluffy. Add molasses, egg and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight. 
    *At this point you can start making the Mulling Spice Sachets
    Preheat oven to 350 F. Roll out dough to 1/4 inch thickness on lightly floured work surface. Cut into different shapes. Gingerbread Men are classic, but we chose to make Christmas Trees and presents for a holiday scene. Place cookies 1 inch apart on an ungreased baking sheet. 
    Bake 8-10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheet for 1-2 minutes, and then remove to wire racks to cool completely. Decorate as desired. Store in an airtight container for up to 5 days – IF you can make them last that long
    Cream Cheese Frosting (my recipe)
    8 oz Cream Cheese, softened
    1/2 cup Unsalted Butter, softened
    4 cups Powdered Sugar
    1 tbs Milk
    1/4 tsp Vanilla Extract
    Whip cream cheese and butter until well mixed and fluffy. Slowly add powdered sugar, milk and vanilla extract. Continue to mix well. Frost cookies. Store leftovers in the refrigerator. 
    While you’re waiting for the cookie dough, these Mulling Spice Sachets are a cinch to put together. They are great to have on hand for yourself, or include as a gift to friends and family. 
    Ingredients
    McCormick Cinnamon Sticks, broken in half
    McCormick Cloves, Whole
    McCormick Allspice, Whole
    Cheesecloth
    Directions
    Cut cheesecloth into 4inch squares. Place 2 cinnamon half sticks, 2 cloves, and 2 allspice on the center of the cloth. Pull ends together, and tie with string. 
    To mull your own Cider, add 1 sachet to 2 cups Apple Juice (or Cider). Simmer over medium heat 10-15 minutes, or until fragrant. Discard the spice sachet and enjoy.

  • Berliner Pfannkuchen Fail

    Berliner Pfannkuchen Fail

    What a busy month it has been. You know how I love keeping it real around here, so even when I mess up pretty good, I want to share it with you. Well, it’s another Food of the World party, and I have once again come out with a product not looking so great. I know everything I did wrong too, so hopefully with a little more time and practice, I can come back and turn this Fail into a Win.

    With that wonderful introduction I give you Berliner Pfannkuchen or simply put donuts.

    I had actually been  planning on making some Shoko Schnecke, but I felt I didn’t have enough time to make them. So then I started doing a little research and found that cheesecake is popular in Germany, but they make it with a product called quark. 
    Quark is similar to cottage cheese and ricotta, but different enough, I didn’t feel I could exchange it.  So I crossed off quark cheesecake temporarily (I will be coming back to it!), and kept doing a little research. That’s when the Berliner Pfannkuchen caught my eye, and I thought, sure, I can do that. When really I should have backed away at the mention of frying them. 
    If you want to try and make some Berliner’s I would use the recipe found on Germanfoods.org and do what I didn’t do and follow the recipe precisely. Here is what I did wrong, so you don’t do it. 
    • read the recipe carefully. When it says lukewarm milk, don’t add lukewarm water (where was my head?!) Don’t try and safe yourself by then adding more cold milk. 
    • Even if you read a couple different recipes, and one mentioned using vanilla sugar…don’t do it. Stick with the one recipe. 
    • Never use powdered eggs. They are a very poor replacement in any baked goods…this is not my first attempt, and I should have known. 
    I will tell you however, that even though my Pfannkuchen don’t look like Pfannkuchen, the kids thought they were pretty great. Especially when they discovered that I had also filled some with Nutella, and some with my Polish Plum Butter (the only non failed Food of the World Party to date).

    Caroline is a mom of 2. She came up with the name Sweet Caroline’s corner because people would often sing Sweet Caroline from Neil Diamond when meeting her. She loves reading, watching movies, baking of course, and taking care of her family!  She and I could get along pretty well if we were ever to meet. 
    Funny story – even though my name is Adelina, my husband has used the same song as a reference on how to pronounce my name, and I’ve had people singing it as well when meeting me (weird I know)
    Last week my eye caught right onto Caroline’s Pomegranate, Kale and Orange Juice Green Juice. I’ve really been wanting to try some green drinks, but haven’t yet (unless you consider hiding my zucchini in smoothies a green drink?).  She also shared this yummy looking Pecan Pie Muffin recipe.     Herb Dinner Rolls with #STAROliveOil

    Are you a butter lover?  I am. I love a good piece of bread spread with lots of yummy butter. Some things we really should eat in moderation though.

    Growing up I lived in a duplex with my Aunt and Uncle on one side, and us on the other. Every Saturday morning we would head to my Aunts kitchen for pancakes and waffles. While my Aunt took shape orders for pancakes, my Uncle taught me how to spread butter on a waffle so it would penetrate every hole. Oh the deliciousness!

    Then one day, my Uncle no longer ate butter. With high cholesterol he had to start finding alternatives. I couldn’t imagine having to replace butter with something that wasn’t the real stuff, until recently. As an adult I am a little more aware of health concerns and just how bad some foods can be if you are high risk.

    So I’ve been trying to find better ways to feed my family an keep us healthy.  I heard about Star Butter Oil, and wondered if it would be a good alternative for actual butter when cooking.  It took me a little to find it, but there it is was on the top shelf in Walmart with the other oils.

    I have been having so much fun in the kitchen replacing butter with the Butter Flavored Olive Oil.  It has been amazing! I kid you not, I never thought a butter replacement could be just as good, or in some cases even better then butter. A few things I have tried so far include

    • Scrambled eggs. Mark loves his eggs scrambled in melted butter.  Without telling him, I used the butter flavored olive oil. He loved it, and didn’t even suspect my sneaky exchange. 
    • Grilling meat and veggies. I normally use EVOO to grill on the stove top. Since using Star butter Olive Oil, I don’t think I’ll go back. When you get comments like “Wow that smells amazing” and all you’ve done is toss some onions in the oil, you know you have a winner. 
    • Grilled Cheese Sandwich. We all make these right? You slather the bread with butter, add some cheese, maybe ham, if you are feeling fancy, and then you get one of the best lunches in history. 
    • Herb Dinner Rolls were my latest butter and Olive Oil exchange that turned out beautifully. I hardly had time to get photo’s my family has been all over them!

    Herb Dinner Rolls

    Ingredients
    1. 1/2 cup butter, softened
    2. 1/2 cup Sugar
    3. 2 tsp Salt
    4. 3 cups Warm Water
    5. 1 TBS Yeast
    6. 7 cups Bread Flour
    7. 1/4 cup STAR Butter Olive Oil
    8. 1/4 tsp Marjoram
    9. 1/4 tsp Thyme
    Instructions
    1. Combine butter, sugar, salt, water, and yeasr in mixing bowl. Let sit 10 minutes
    2. Add 3 cups flour and mix well.
    3. Slowly add the rest of the flour until dough is no longer sticky.
    4. Knead dough for 15 minutes
    5. Place in a greased bowl, cover and let rise 1-2 hours or until doubled in size.
    6. Shape into rolls about 2 inches in diameter.
    7. Place in baking pan, cover and let rise 1 hour, or until doubled
    8. Bake at 350F for 20 minutes
    9. Combine STAR butter oil and herbs in small bowl.
    10. Brush on rolls while still warm.
    11. Serve and Enjoy!
