    Last week we celebrated national Root Beer Float day with a game night. While browsing the soda and ice creams I had the brilliant idea of combining some tropical flavors into a Pina Colada Ice Cream Float.

    Blue Bell Ice Cream has recently come back, and my sister in law can’t stop talking about how happy she is she can buy it again. I was unaware of Blue Bell until recently so decided to check them out for our float making party. The Key Lime Mango Tart caught my eye, and I just knew it had to go with a pineapple soda. 

    So anyway, the kids went back to school today. I’ve had the stuff sitting in my kitchen for this float for a week now because I knew I was going to need a special treat on this very day. 

    Venice headed off to her first day of middle school, and with the other three in elementary school and Harold at home, I’m starting to feel kind of old. I spent the morning hanging out with other moms enjoying a back to school brunch. Then I came home, put Harold down for a nap and had a glorious 2 hours of a silent house!

    Who else gets the rare quiet moment in their day? I love my kids, but goodness, these quiet moments are to be treasured. That’s when I made the Pina Colada float – nonalcoholic of course. I hope you enjoy it as much as I did.

    Ingredients
    1. Key Lime Mango Tart Ice Cream
    2. Coconut Water
    3. Pineapple Soda
    4. Whipping Cream
    5. Pineapple Chunks
    Instructions
    1. Scoop ice cream into a tall glass.
    2. Pour the coconut water over ice cream to fill the glass 1/4 full.
    3. Finish filling the glass with the pineapple soda.
    4. Top off with whipping cream and garnish with pineapple chunks

    Last year I flew out to Colorado to spend a girls weekend with my mom, aunts, and cousins. We had such a blast, but the theme was all about making life good, no matter what. We used Alex Boye’s song Lemonade as inspiration, and my cousins put together these cute gift bags for us all. Now, whenever I drink a glass, I can’t help but think of the awesome weekend we had.

     The snow hasn’t fallen yet, but the temperature has. When the weather starts dipping, that’s when I pull out this Cranberry Wassail. Full of flavor and soothing to the soul, you’ll make this for all your holiday gatherings.
     
     
    Almost 5 years ago I wrote this post after it had been featured in Old Orchard’s newsletter. I had submitted it to a contest they were running, and it won! Back then I had no idea how to style my photos, and let’s just say, no one was interested in a pot of liquid and fruit. So I finally decided it was time to update with some nicer photos of one of my favorite wintertime beverages.
     
    The first time I made wassail I followed a recipe that had me juicing 10+ Oranges, some lemons, and then boiling it forever. It was delicious, but oh so much work. Cranberry Wassail was created with both ease and flavor in mind. 
     
    This Cranberry Wassail is super easy to make.
    It must have been a few years since I last made this particular wassail because when Mark came home his reaction was one of delight. He’s not a big fan of hot beverages like myself, but he does love cranberries. His eyes totally lit up as he walked in the house, breathed in the scent of simmering fruit and spices, and then drank a healthy mug of it.

    Ingredients
    1. 64 oz Old Orchard Cranberry Naturals Original
    2. 6 oz Old Orchard Frozen Apple Concentrate
    3. 1 Gala Apple, peeled, cored and sliced
    4. 1 Orange, juiced
    5. 1 Orange, sliced
    6. 2 Cinnamon sticks
    7. 1/2 tsp Allspice
    Instructions
    1. In a large pot, mix all ingredients together. Bring to a boil.
    2. Once boiling, let simmer about 20 minutes.
    3. Serve warm.
    4. Slow Cooker
    5. Mix all ingredients in a slow cooker. Turn on high for at least 1 hour. Then keep warm to serve.

    Now if you want, you can strain the cooked fruit and spices out, but in our house we kind of find it fun to have these pieces of fruit floating in our wassail. The allspice berries not so much, but they are easy to spoon out, as well as the cinnamon sticks. We then garnish the Cranberry Wassail with a few frozen cranberries – it helps cool the drink down for little kids – and an orange slice on the side of the cup.

    Home Canned Grape Juice

     Fall is here, and it’s my favorite time of the year to start putting up produce. Canning fruits are one of the easiest ways to save produce to eat throughout the year. This home canned grape juice is fabulous with a little club soda. This post contains affiliate links and I will be compensated if you click on and purchase through them.

    I had a lot of fun doing this, though it was quite surprising at just how little juice came from all those grapes.  I have a new appreciation for the cost of store-bought juice. Let’s jump right into this tutorial. If you have any questions just leave them in the comment section!
      
    Step 1:  Wash and de-vine your grapes.
     
    Step 2:  I suggest using a Steam Juicer. If you don’t have one, go out and buy one, or borrow one. They are a time saver!!! Follow the directions for your juicer.  If you do not or cannot get a juicer, or you feel like being adventurous, there is a step by step guide HERE for straining the juice from your grapes. I added a little under 1 cup sugar per 3quarts grapes. So I dumped one of my bowls of grapes in, poured on some sugar, then the rest of the grapes, followed by more sugar.
    Step 3: While the grapes are juicing, sterilize your jars. Some people do this in a dishwasher, I did my pear jars in a sink of hot water. BUT I found a new way! You can sterilize the jars and rings in your oven. Do not sterilize the lids with the rubber seal this way. Turn the oven on to 225 degrees Fahrenheit. Place jars and rings on cookie sheets. I used two separate sheets and put the lids and rings on the bottom shelf, and the jars above so there was more room.
     
     
    Step 4: Carefully remove hot jars from the oven and fill with hot juice.
     
     
    Step 5: Process Jars. My mom is so sweet! She was supposed to bring me her water bath canner, and when she showed up she had bought me my very own steam canner instead. So I steam canned my grape juice! There are some differing opinions on how safe steam canning is compared to water-bath canning. Here is my 2 cents – If it were unsafe, you wouldn’t be able to buy steam canners. The fact that the jars sealed tells me no bacteria should be able to get inside. Plus, from my own experience, I think my jars of grape juice came out just as hot or hotter and stayed hotter longer than my jars of pears did in the water bath. 
     
    So have at it! Make some grape juice!  Out of my 6-7 quarts of grapes, I was able to get 4 1/2 quarts of grape juice.  The 1/2 quart I put in the fridge and drank with my breakfast this morning! It was oh so good!  A little on the strong side, so when we do open the other jars, I will either dilute with some water, or club soda depending on who will be enjoying it.  The club soda is a favorite during the holidays.

    As great as these are to just snack on, I knew I could really indulge if I tossed them in a milkshake. We’ve done a lot of smoothies this year, but milkshakes are new to the kids. They weren’t sold on the idea until they learned it included ice cream
     and chocolate.

    He’s been wanting to make some Horchata at home as well, so we browsed some recipes and then did some experimenting. I’ve not been a fan of this cinnamon drink before, but I actually enjoyed our homemade version. Although a bit time consuming, it is easy to make!

    Homemade Horchata
    Homemade Horchata is a refreshing cinnamon drink you’ll love

    Ingredients
    1. 1/3 cup Jasmine Rice
    2. 1 cup sliced Almonds
    3. 1 vanilla bean, sliced open (leave seeds inside)
    4. 5 cups warm water
    5. 2 cups cold water
    6. 2 TBS Cinnamon
    7. 2 cups sugar
    8. 1 cup water
    9. *cheesecloth
    Instructions
    1. In a food processor or blender, pulverize the rice to a fine powder (we used the blender, and got more of a chunky sand texture). Set aside.
    2. Blanche the almonds, drain.
    3. Toast over medium heat for 1-2 minutes.
    4. Combine rice, almonds, vanilla bean and 5 cups warm water.
    5. Cover, and let sit over night.
    6. Remove the vanilla bean from rice mixture, scrape out the seeds, and add them back in.
    7. Combine rice mixture, and 2 cups cold water into blender.
    8. Blend until smooth.
    9. Add Cinnamon.
    10. Strain through cheesecloth, or a fine mesh strainer into a pitcher.
    11. Discard leftover rice and almonds.
    12. In a saucepan combine sugar and 1 cup water.
    13. Dissolve sugar over medium heat.
    14. Add to the rice/almond milk.
    15. Chill.
    16. Serve over ice.

    It was a pretty cloudy weekend, so to keep the kids entertained while we watched some ball, we made our own indoor stadium. A little blue painters tape on the floor, and stacked couch cushions, they were entertained the whole afternoon!

    One night, while I’m putting the kids to bed, Mark receives a phone call. When I come out, he tells me someone is coming by with some pomegranates. Cool, I say. I love Pomegranates! But why, who gets rid of Pomegranates?

    “Oh they said they bought too many, and don’t want them to go to waste”

    Sounds good to me. Though I’m not sure how anyone can buy too many pomegranates. They’re like a once MAYBE twice special fall/winter treat I allow myself. So I wait up. Expecting them to come by with maybe 4-5 pomegranates. Maybe they weren’t expecting the hard work that comes with eating this delicious fruit?

    What I was not expecting were 2 1/2 boxes full with approximately 100 pomegranates! Seriously? I was most definitely in my own kind of fruit heaven. I spent the next 2 weeks…yes 2 weeks. Peeling this precious fruit and pulling out the little arils.

    I tell you what, though, the work involved was completely worth it in the end. I have 2 quarts of frozen arils in my freezer – perfect for salads, parfaits, and adding color to other dishes – 6 pints Pomegranate Jelly, and then I took the rest and juiced them (which is no easy task without a juicer!), and made 3 quarts of Pomegranate Lemonade.

    Pomegranate Lemonade
    Enjoy a delicious glass of Pomegranate Lemonade

    Ingredients
    1. 2.5 Liters Fresh Pomegranate Juice
    2. 2 cups fresh squeezed lemons
    3. 1 1/2 cups sugar (more or less to taste)
    Instructions
    1. Combine the Pomegranate Juice, Lemon Juice and sugar in a pot. Bring to a boil, and simmer until sugar is all dissolved.
    2. Depending on how sweet your pomegranate juice is, and how tart the lemons are you can add less sugar. My pomegranates were more tart, and lacking in the sweet flavor.
    3. Pour hot juice into sanitized quart canning jar.
    4. Dip lids in boiling water for a few seconds, then place on top of jars. Secure with jar rings.
    5. Process in a water bath for 20 minutes. Let cool, and listen for a “pop” that will signify the lid is sealed.
    6. When ready to serve, pour over a cup of ice and let chill. To make it fancy, mix with sprite or similar soft drink. Great for holiday gatherings.

    1. Sealed juice will last up to 1 year.

    Back to school time often brings up the debate of immunizations. Do you vaccinate? Do you delay them? Or do you completely forgo them?  This is obviously a personal choice for everyone, and I’m not here to judge you. Promise. Just sharing my opinions on why we choose what we do, and how you can turn a simple choice into an act of good for others.

    Alright, I want to try something with you – Take a look at your knees. A good long look.

    Alright, are we back? I bet you’re wondering what that was all about huh?  While you were looking at your knees, did you by chance reminisce about your childhood? That is what my knees always remind me of. Lots of days running through our wooded backyard, climbing trees, and flipping over my bike handles at the end of our gravel driveway.

    My knees carry many good childhood memories. My forehead on the other hand does not. If you take a close look at the left of my forehead, at the end of my eyebrow, you will find an indentation. A scar if you will from when I had the chickenpox. A time, that even though I was only 3-4, I still remember pretty clearly. It itched, I was miserable, and oatmeal in the tub? yuck! If I recall all my siblings had it at the same time too. Absolutely no fun at all for any of us, and I’m sure my parents weren’t enjoying it either.

    Like my knees, we can’t protect and prevent our kids from ever getting hurt. That’s just part of life, and those memories will be with us forever. However, things like chickenpox, whooping cough, and meningitis can be prevented, and I personally think should be. Unfortunately in developing countries the vaccines we have available to us in the USA are not as readily accessible. That’s why I love that by taking my kids to Walgreens for their school immunizations, we are directly helping a child receive a life saving shot.

Since I can’t physically go help these children, I’m glad I can still help out by choosing Walgreens for our school immunizations. They make it easy too!     I want my kids to look at their knees as adults and remember that time they played foursquare and missed the ball as they took a spill into the pavement. I want them to remember learning how to learn a bike, and the time they begged me to let go before they were completely ready to go on their own. Or when they were climbing trees at Nana’s house.

    Since we can’t prevent bad things from happening, we can be ready for those scraped knees and common colds. I picked up this cute Johnson & Johnson first aid kid to go the other day with Princess R. It was timely too, since Princess C then came home with scraped up knees and asking for clean bandages.     2. 1 cup Tang, or orange drink powder
    3. 2/3 cup sugar
    4. 2 tsp lemon peel
    5. 6 whole cloves, crushed or 1/4 tsp ground cloves
    6. 1/2 tsp Saigon Roasted Cinnamon
    7. Hot Water
    8. Cinnamon Sticks – optional
    Instructions
    1. Mix the drink powder, sugar and spices together.
    2. Store in an airtight container, or in the freezer.
    3. Boil water.
    4. Add 1TBS drink powder to a cup of hot water.
    5. Stir with a cinnamon stick (optional), and drink.
