    This week’s feature is Winnie from Something Sweet Winnie’s Blog.  Winnie has been linking up to Foodie Friday for quite some time. Although her site is in Hebrew, google can translate it for you. It doesn’t always come across easy to follow in English, but her photo’s are stunning! I can only imagine how yummy they taste as well.

    It’s lunch time, and you start craving a good classic sandwich. I’ve updated the classic BLT to add some cheese and more bacon! Who knew bacon in bread would taste so good! 
     
    Yummy. I mean really, yummy!  I actually made this sandwich a couple weeks ago, and thought it was so pretty I had to take some pictures. I am just getting around to looking at them though, and decided it was the perfect, simple recipe to share today.
     
    After I made this I had a discussion on facebook with some friends. See my kids loved the sandwich, but they picked out all the tomatoes. I mean who does that to a perfectly good BLT?  Turns out I have a lot of friends who can’t stand tomatoes. I’m still baffled by that people. Just baffled! 
     
    I plan on at least 10 tomato plants this spring, and maybe more. I’ve even got my seeds started inside already.  I feel for you that don’t eat tomatoes. You are missing out, but I guess it just means more for me – huzzah!
     
    Let’s start with this bread recipe. I was browsing my “300 best Bread Machine recipes” book one day and came across one with both bacon and cheddar. Couldn’t pass that up. I tweaked it a bit to what I had on hand, so here is my version of this Mock Spoon Bread (what by the way is Spoon Bread?)

    Ingredients
    1. 1/2 cup milk
    2. 1 package knor cream corn soup (I used the Japanese version my mother-in-law sent us.)
    3. 1/2 cup water
    4. 1 tsp salt
    5. 1 TBS honey
    6. 3 cups All purpose flour
    7. 1/2 cup bacon bits
    8. 1/2 cup cornmeal
    9. 1 cup shredded Cheddar Cheese
    10. 1 tsp instant yeast
    Instructions
    1. Put all the ingredients into your bread machine pan. Choose 2lb loaf, light crust, and then set for a Basic Cycle.
    2. If you don’t have a Bread Machine, good luck. ha ha, no just kidding, kind of.
    3. Mix the milk and corn soup together.
    4. In a small bowl combine the yeast and water; let sit.
    5. In a separate bowl mix the flour salt and cornmeal.  Set aside.
    6. Combine the yeast and milk mixtures.
    7. Knead in the dry ingredients. Let rise until double.
    8. I would bake at 350, and just keep an eye on it until lightly browned.  Cool and Enjoy.

    Ingredients
    1. 2 slices Bacon Cheddar Bread
    2. 3 slices Bacon, cooked
    3. 2 red leaf lettuce leafs
    4. 1 Roma tomato, sliced
    5. 2 slices Swiss Cheese
    6. Salad Dressing (I interchange Mayo and Miracle Whip all the time. Choose what you like)
    Instructions
    1. Spread a fair amount of the dressing on each slice of bread.
    2. Layer on the lettuce, bacon, tomato and cheese.
    3. Top with the 2nd slice of bread.
    4. Enjoy a classic!

    Do you have an over abundance of zucchini?  It seems like the one plant everyone seems to grow too much of. Before we moved our neighbors offered us a couple of zucchinis, which I declined. I didn’t have the time to do anything with them. Now my mom is trying to give me her overgrow, and I’ve gladly accepted. These are large zucchini’s and can really be spread out over many meals.
    However, I have a special zucchini treat for you today! My mom’s recipe for Zucchini Bread. It is very similar to Banana Bread, but with Zucchini instead. My kids love these breads, and I love that they are eating some green veggies!
     
    Zucchini Bread
     
    For some reason, this week when I made it, it fell. So it’s not the prettiest, but it sure did taste good! Both loaves were gone in 2 days!
    Ingredients
    3 eggs
    3 tsp Vanilla extract
    2 1/4 cups sugar
    1 cup vegetable oil (can also be exchanged with pureed zucchini)
    3 cups flours
    1 tsp salt
    1 tsp baking soda
    1 tsp baknig powder
    3 tsp cinnamon
    2 cups grated zucchini
     
    Directions
    Preheat oven to 325 F
    Beat the eggs, oil, vanilla, and sugar. 
    Sift flour before measuring! (I think this is where I went wrong, I didn’t sift it)
    In a separate bowl, mix dry ingredients.
    Add the dry ingredients to the wet. Mix well.
    Add the zucchini, and mix well.
    Grease two loaf pans.  Separate the mixture between the two pans, and bake for 40-60 minutes until a knife inserted in the center comes out clean.
    Cool and enjoy!

    One of my favorite comfort foods is Banana Bread. I have fond memories of coming home from school to a freshly baked loaf, slicing off a warm piece and letting some butter melt on it before eating. This recipe is my mom’s and one I will always enjoy making and passing on to my kids.
    Ingredients
    1 cup Shortening
    2 cups sugar
    4 eggs
    5 ripe Bananas – you can substitute 1 cup of applesauce for any lack of bananas
    3 1/2 cups flour
    not quite 2 tsp baking soda
    1 tsp salt
    Directions
    Cream together the shortening, sugar, eggs, and bananas.  In a seperate bowl combine the flour, baking soda, and salt.  Stir the dry ingredients into the wet, and combine until well mixed. Seperate into two loaf pans.
    Bake at 300 F for 75 minutes.

    Baking with Blondie shared her Blackberry and Mint Brownie Parfait. I know, nothing to do with banana bread, but I couldn’t resist sharing how yummy this looks.

  • Whole Wheat Banana Mango Bread

    Originally this would’ve been my Tuesday tip, but it’s now thursday. Life gets busy when you’re trying to move!  
    I went late night shopping with my neighbor yesterday.  She shops sales, and pretty much has prices memorized. So she KNOWS what a good deal is.  We left the kids at home with the dads, which really made for a peaceful shopping trip.  Whoa, little ramble there. Back to the point!
    There was a basket of overripe bananas on sale (ok apparently ripe bananas are cheaper elsewhere, but that didn’t stop me).  I love buying overripe bananas! It means instant banana bread, no waiting and hoping no one eats the ripe bananas before I can make the bread.  Now I purposely bought one less banana, because I wanted to experiment! 
    Here is the recipe I created, with my mom’s recipe as a base. See if you can find my cooking tip!

    Whole Wheat Banana Mango Bread
    Ingredients
    – 1 cup shortening
    – 2 cups sugar
    – 4 overripe bananas
    -4 eggs
    – 3.5oz banana mango baby food
    – 3 1/2 cups whole wheat flour
    – not quite 2 tsp baking soda
    -1 tsp salt
    Directions
    1. Mix the first 5 ingredients together.
    2. In a separate bowl mix the last 3 ingredients.
    3. Add the dry to the wet, and mix well
    4. Grease 2 loaf pans. Pour batter in. Bake at 350 F for 75 minutes, or until toothpick inserted comes out clean
    Did you find the tip? It was an ingredient in the wet mixture.  That’s right, baby food!  We have an 11 month old who has decided to stop eating most baby foods.  She much prefers “real” food.  Last fall we stocked up, and I mean stocked up on baby food.  So what in the world was I going to do with all this baby food? Cook with it of course.  It will add some extra nutrients to our food, and works great when missing a simple ingredient (like one banana).  The plus side, I couldn’t taste the mango, but the banana flavor popped out more.

    Simplify in the Kitchen with a Bread Maker

    What tools make cooking simpler for you?  Do you have a favorite kitchen gadget you can’t live without?  How about the most useless tool in your kitchen?  Maybe something you like to use, but takes up way too much space?  

    I love the kitchen, it’s probably my favorite room in any given house.  I do not like the kitchen I am in now.  It is small, cramped and makes it hard to get the whole family in there cooking up a good time.  

    2010 brought with it my new favorite kitchen gadget – the Breadmaker.  For Christmas 2009 my mom got me the Breadman Breadmaker.  I thought it was cool, but at the time I still really enjoyed getting my hands in the dough and letting the kids help me make the bread.  So I didn’t use it a whole lot.  Then we moved here…

     
    I still love cooking, and being in the kitchen, it’s just become a lot harder to do the big fun stuff.  
    Enter stage left…..
    My Breadman Bread Maker (affiliate link).  Yes, it takes up one of the few counter spaces I have, but it opened up the time to play with kids, and do more cleaning.  Gosh, I love this thing.  (we loved it so much, we bought mom a bread maker this last Christmas!)
     
    This thing does everything from beginning to end.  Kneading, rising and baking.  But it doesn’t end there.  You can have it just knead the bread, then you make it into rolls, pitas, cinnamon buns and cook in the oven.  Or make some homemade jelly in it!!!
     
    Here’s the latest and greatest from our beloved Bread Maker
    mmmm clover leaf white rolls.  Dinner’s going to be good tonight!!
     
    Don’t tell but two rolls have already gone missing…..
