    Menu Plan 9/17 and Peach Honey

    I was sitting here looking at the week, and realized I don’t have to cook much! I’m pretty excited to have a slow week of cooking.

    Monday – Work social. We’re bringing Vanilla Bean Sugar Cookies
    Tuesday – Lentil Soup
    Wednesday – Breakfast for Dinner. Eggs, Hashbrowns, Pancakes
    Thursday – Bacon Stuffed Squash
    Friday – Dinner at my parents
    Saturday – Princess V’s birthday dinner at Applebee’s

    A sister from my church stopped by yesterday with a car full of tomatoes and some yellow squash.  I am really excited to try out Diane’s Bacon Stuffed Squash, and can some tomatoes.  We’re going to attempt some spaghetti sauce and salsa! 
    I’ve really gotten into canning this last year, if you haven’t noticed yet.  Having fresh produce al year long is always so nice!  A couple weeks ago I put up some peaches, while learning how to do that I found a recipe to make peach honey from the peels, so I did it!  It is absolutely wonderful, and pretty too.

    Fresh Produce and Menu Plan

    Don’t you just love fresh produce?  It is so good, as well as good for you!  We planted a garden this year, but due to unexpected job changes, we moved before we could get a full harvest. I did get a few carrots shortly before moving though. Aren’t they pretty?

     
    Being on a tight budget, fresh produce has been pretty scarce around here. We were extremely blessed one day however. During lunch I thought to myself how I would really love to have something fresh to feed my kids. To my surprise that night a neighbor, unknowing of my earlier wishes, dropped by unannounced with a bag of peaches from her tree. She then offered for us to come pick more. I believe we were being taken care of in a time of need, and I am forever grateful this dear lady listened to the spirit and brought us those peaches. We’ve been eating yummy peaches all week, and yesterday I canned the rest. I saved the peelings to make some peach honey later this week.
    We ended up with a total of 8 bottles! Yay for peaches!!!

  • Menu Plan Monday

    I think I’m ready to start planning meals again. We’ve honestly been really scrounging lately, coming up with whatever I could. Our house has not sold yet, which means we’re paying a mortgage and rent on a teachers salary. It’s doable, and because we’ve done what we could to get out of debt, it’s been possible.  I’ve learned a lot though! I can now make my own tortillas, baking a loaf of bread each morning has become routine, and beans are becoming more accepted by my kids. We’ve delved into our food storage. I am so glad we have stored food for these tough times.

    Monday – home made tortillas with beans and cheese
    Tuesday – Chili and cornbread
    Wednesday – Fried Zucchini and Rice
    Thursday – Pulled Chicken sandwiches
    Friday – lasagna rolls
    Saturday – leftovers

  • Meals when you Move

    Oh menu planning, how I miss you!

    This week is moving week. We get our Uhaul on Friday, and we’ll be gone on Saturday. That means a lot of packing, and quick meals this week. 

    When you’re getting ready for a move, you don’t want to be spending your time in the kitchen. Normally that’s where most of my days are spent, but it just can’t happen this week. I have other things that have to be done. Paper plates are the only thing on my grocery list this week. I don’t want to move a bunch of perishables either.  That means I’ve got to plan meals that use up everything in my fridge and freezer.

    Lunches for the week are going to consist of a lot of leftovers!

    Dinners
    Monday – Pasta and Meatballs
    Tuesday – steak pizzaiola
    Wednesday – Chicken Nuggets
    Thursday – Surprise! whatever is left that needs to be eaten
    Friday – pizza out
    Saturday – ? maybe a nice new neighbor will bring us a meal. Or we’ll find a local place to eat out
    Sunday – Sandwiches

    Monday – What’s good in Spokane? We’re on vacation and will need a fun (but cheap) place to eat.
    Tuesday – ROAD TRIP! 13+ hours in the car with 4 kiddos – why yes we’ll more than likely be eating at McDonalds.
    Wednesday – Macaroni Salad
    Thursday – Hamburger Helper
    Friday – Ham and Potato Bake
    Saturday – Leftovers
    
  • Menu Plan Monday 7/9

    Well, it’s another Monday. The day most people dread as it means the start of another week. I personally love Mondays though. To me it means a brand new week to make better than the last.
    It has been HOT HOT HOT here! So hot, that even though we had a ton of fun last week, we all (kids and adults) have had some not so fine moments.  We’re looking upwards of the low hundreds this week and no rain in sight.  This week my plan is to do lots of things to keep cool. 
    That includes, minimal use of the oven.

    Monday – Cold Cut Sandwiches
    Tuesday – crock pot Pork and veggies
    Wednesday – Mark’s in charge. I’ll be at a church women’s function
    Thursday – Macaroni Salad
    Friday – Stroganoff
    Saturday – leftovers
    Sunday – Steak Pizzaiola

    I’m also planning a tea party with the girls and their friends this week. We’ll be serving some cool treats –
    Strawberry Lemonade (because we don’t actually drink tea)

    tea cakes
    popsicles

    Menu Plan Monday 7/2

    We had a crazy fun week last week. Mark’s parents were in town, so instead of cooking, we ate out every single night. It was definitely a treat for us, though it did get us a bit off our normal schedule.  The kids didn’t eat as well as they normally do, although Princess V ate better than she normally does – go figure.
    I did some major grocery shopping with my mother in law. I don’t think we’ll need to go to the store anytime soon. We had to take the ice box out of the freezer to fit all the food in it, and we had to get a little creative in the pantry.  I’d share some pictures, but we’re out of town now, and I didn’t bring the camera.
    Here’s what we’ll be eating this week
    Monday – family dinner at my parents. Possibly hot dogs at the baseball game.
    Tuesday – Pork Chops
    Wednesday – BBQ
    Thursday – Chicken and pasta
    Friday – Macaroni and Cheese
    Saturday – leftovers
    Sunday – crock pot pork and veggies
    We’ve invited my parents and siblings up for the 4th of July.  I’ve got some fun ideas for a BBQ that I think everyone will enjoy, thanks to pinterest.
