    Warm up with these Soup recipe from Weekend bites

    Before Christmas we got a little snow. It lasted about 2 days before melting. Today it snowed another inch or so, but tomorrow’s forecast has nice sunny skies. I’ll be honest, I love me some snow. I know there are some people out there who don’t. The ones who would happily live in the south forever. Not me. Give me snow, please! I need more of it. The lack of cold weather I think has even started to take effect on my mood. So cold, or not, I’m cooking up soups the next couple of days. We’ll pretend it’s cold like North Dakota and Wyoming, with piles of snow waiting to greet us outside.

    I woke up this morning to a chilly 34degree day. Half my kids bundled up in coats, scarfs, and gloves. The other half attempted to convince Mark and I that the sun was shining and that meant it was warm. It was a beautiful sunny day, but the temperature had dropped to that place where all I want to do is sit in front of a fire and eat some hearty soups.

    I’m sitting here feeling a chill run through my bones. The kind that once again has me debating turning on the heat. Fall has officially arrived, and our nights and mornings are pretty cool, but midday still gets up in the 70’s. Until it drops to lower 60’s I just don’t think I can bring myself to turn up that heat. So until then, you can probably find me curled under some quilts my grandma made, with a pot of soup cooking on the stove.

    I personally love a good broccoli cheese soup, followed by tomato and chili. My kids love any soup as long as bread is served along the side for some dipping. To comply with their tastes I picked up some more yeast this week, and will be busy baking our own bread again.

    Last week my aunt sent me a letter with an old picture inside. It was my sister and I holding a plate of decorated cookies. That sure got me reminiscing; after school snack, bread making with mom, Saturday morning pancakes at my aunts, and good old Campbell’s Soup!

    Perhaps it was my trip “home” to New Hampshire, or living so far from any family for the first time ever, but I’ve found myself extremely nostalgic lately. Dropping the kids off at school, I’ll catch a memory of my own elementary days of tag, cooties, and rhyming hand games. When the rain and thunder hits (which it did this week!), I head back to nights counting between lightning strike and thunder to calculate the distance with my dad.

    Spring weather has come to North Dakota (Finally! Check out this meme to understand). It’s a bit more windy then winter was, but also much sunnier. It’s the perfect weather for running around outside, and overbooking yourself because you’ve been stuck inside a bit too long….or perhaps that’s just me. With us more on the go, I need quick and easy meals, but that are still tasty.

    In my food reminiscing, I couldn’t help but think about the cans of Campbell’s we always had in the pantry. There were 3 specifics we could always count on – Chicken Noodle Soup, Tomato, and Cream of Mushroom. Then it dawned on me – I’ve never made Chicken Noodle Soup for my own kids, or my personal fave of Beef Stroganoff (the perfect Cream of Mushroom recipe).

    With that in mind I headed out to Walmart to grab some Campbell’s, when lo and behold – Campbell’s Soups for Easy Cooking! Even better I thought, since one can isn’t quite enough to feed our family, and I prefer cooking mostly from scratch. I was excited to see they had the 3 perfect blends to match my childhood pantry – Creamy Herb and Garlic with Chicken Stock, Savory Portobello Mushroom, and Mexican Style Tomato.

    From Scratch Chicken Noodle Soup

    Ingredients
    • 2 cups dry egg noodles
    • 1 box Campbell’s Creamy Herb and Garlic with Chicken Stock
    • 14oz water
    • 2 celery stalks, chopped
    • 1/4 cup chopped yellow onion
    • 3 small carrots, peeled and chopped
    • 3 cups cooked chicken

    Directions
    Cook the noodles according to package directions. Drain and set aside. 
    Combine Campbell’s and 14oz water in a medium pot. cook over medium-low heat. Add celery, onion, carrots, and chicken. Simmer over medium-low heat for 15-20 minutes. Serve warm!

    Portobello Mushroom Beef Stroganoff

    Ingredients
    • 7oz Egg Noodles
    • 1 1/2lb cooked ground beef
    • 1/4 cup chopped yellow onion
    • 1 box Campbell’s Savory Portobello Mushroom

    Directions
    Cook the noodles according to package directions. Drain and set aside.

    In a skillet, combine beef, onions, and Campbell’s. Simmer for 15 minutes. Serve over noodles.

    I noticed quite a few chili’s and soups last week. With the cold weather hitting the south and east, I thought you’d all enjoy a closer look at these warming dishes. We had a windchill of -27 today, but my 4 year old still insisted we play outside for a little bit. BRRR!

    I am really excited to be joining Diane at Simple Living and Eating for her new Food of the World party.  For almost 2 years now Diane has helped me co-host our Foodie Friday party (still going strong), so when she told me about this Food of the World idea, I was thrilled. Instead of weekly, it will be a monthly party where we visit the cuisine of a different country. To kick off we’re heading to Spain.

    My first thoughts of Spain are – Bull Fighting, and Rice. Turns out I really don’t know a whole lot about this country. So I hit the Internet, and started doing some searching. After browsing a number of articles about different Spanish foods, I realized they eat a lot of fish. I knew with my families picky tastes I couldn’t serve them fish. At least not without easing into it. So I went with something less fishy, but still very Spanish – Gazpacho.

    So Gazpacho – a tomato based cold soup. I knew I was pushing our limits with both tomatoes and cold soup, but was pretty sure it was going to go over better than fish. Sadly, because personally I love fish! Back to Gazpacho. After doing a lot of research into Gazpacho, all you really need is a lot of tomatoes, and them some extra vegetables to throw in as well.

    Unfortunately for my family, the soup did not turn out very edible. Luckily for you, I’m not going to share my recipe with you, but I am going to direct you to some very good looking Gazpacho recipes. I think if I would have stuck to one of them, instead of trying to mesh it all together and make my own, we probably would have enjoyed it. The big problem we had, was there was too much onion in it, and I didn’t add very much either. It was all we could taste though. Surprisingly the kids didn’t actually complain, and enjoyed dipping some bread in it – they shouted for joy though when Mark walked in the door with some pizza.

    I used these recipes to put together my Gazpacho.

    Creamy Potato Cauliflower Soup

    Creamy Potato Cauliflower Soup cooks up easy in the crock pot, serve with a side of homemade bread to please the whole family. 
     

    I really enjoy going through all your recipes each week. I often add many recipes to my pinterest boards for later meals, and sometimes a recipe will be added to my weekly meal plan. Last week though, I think was the first time I saw a number of recipes jump out at me, all slightly similar, but with a different twist. I decided to follow Steak N Potatoes Kinda Girl’s recipe for Crockpot Potato Soup as my base recipe. I then gathered ideas and inspiration from a few others (featured at the bottom) as well as my cupboard.
     
    And so, Creamy Potato Cauliflower Soup was born, and it was loved, and devoured by all (well most at least…)
     
    Creamy Potato Cauliflower Soup

    Ingredients
    1. 3 Beef Boullion cubes
    2. 3 cups of water
    3. 4 Russet potatoes, peeled and diced
    4. 2 cups cauliflower, chopped
    5. 2 TBS yellow onion, chopped
    6. salt and pepper to taste
    7. 8 oz cream cheese
    8. 4 slices bacon, cut into 1 inch pieces
    9. green onions, sliced
    10. cheddar cheese, grated
    Instructions
    1. Place the boullion, water, potatoes, cauliflower, onion, and salt and pepper into a crockpot. Turn on high for 4-5 hours.
    2. Cook bacon.
    3. When the potatoes and cauliflower are soft, pour the soup into a blender and add the cream cheese.
    4. Puree the soup until smooth and creamy.
    5. Serve topped with bacon, green onions, and cheddar cheese.

    I have found 2 successful ways to get my kids to try new foods:
     
    1. Give them something to dip. With the soup, we had homemade white bread.
    2. Add bacon. No joke, my kids will try anything that includes bacon.
