    Thanksgiving Prep at Weekend Bites

    I love Thanksgiving! Partly probably because it is in the fall. Also because of the food. Mostly, however, it’s because of the wonderful memories that surround this holiday for me. Friends and family gathered together filling our home with love and laughter. It’s the feeling I’d love to always have in our home, no matter the occasion or person visiting. So when Thanksgiving rolls around each year, I can’t help but get excited, and start looking at ways to create those memories of love and joy for my own children. 

    I hope these ideas from our fellow bloggers will inspire you, and offer a little something to add the spirit of gratitude and love into your own home in the coming week.

    November is here and with it comes a feeling of gratitude for many. As we prepare for Thanksgiving, our hearts are turned to the many blessings, big and small in our lives.

    Over the last year, Mark and I have noticed that our children seem to struggle in giving thanks. Many prayers are said asking for blessings, but the gratitude is minimal. This month, with my Thankful Grateful Blessed tee from Cents of Style, I’m putting a plan in place to focus more on showing my own gratitude while encouraging the kids to ponder more on their own blessings. 

    So for the month of November, and hopefully longer, I plan on sending my kids off to the bus stop not with a “Have a good day”, but rather with a “What are you thankful for today?”. Then on their return, instead of asking “How was your day?” I will focus on the good. “What was the best part of your day?” 

    You see when we focus on the good, and remember to look at the positives from our day, it naturally reminds us what we have been blessed with. It’s easy to get wrapped up in the frustrations and the ‘what went wrong’ moments of our day. As the parent, though, I have a duty to help remind my children that those moments are just that – a moment in time. The bad will pass unless we choose to hold on to it. The good however will last much longer as we embrace it and seek it out.

    My sister in law uses the phrase “Sweet and Sour”. At the end of the day she’ll ask her kids what the sweet part of their day was, and what the sour part was. I love this idea! I know it’s not realistic to pretend that the sour never happens. So giving our kids a chance to talk about both the good and bad is brilliant. It also offers us as parents the chance to help them focus on those sweet parts, and turn the sour around. 

    These are just a few of my thankful grateful blessed moments from the past month.

    Thankful for my family. My parents, my siblings, my cousins, my aunts and uncles, my husband and my children. 

    Grateful for a job, a house, and food in the pantry. 

    Blessed because no matter what has happened, I have always always had family, friends, food and shelter. My basic necessities have always been met.

    I hope you all enjoyed a wonderful Thanksgiving yesterday. Whether spending it with friends and family, or home in the quiet able to reflect on your blessings. I wanted to take a bit today to share a few things I am grateful for. 
    • My family. A husband who works hard. Kids who are my life. And my parents and siblings who really made me who I am today (in a very good way!)
    • This blog. It came at a very pivotal time in my life, and has grown into a business I never imagined or dreamed of having, but has been such a blessing to my life.
    • You guys! If there’s one thing I can count on, it’s my readers. Without you, there’d be no blog! Weekend Bites is by far the best part of my weekend as I get to search your blogs and recipes. 
    • My church. The gospel of Jesus Christ. Scriptures, and prayer. These are key components to who I am, and make me a better person. And by that I mean, each day I strive to be better than the last, because I make many many mistakes in my life. I know I can change each day though!

    Prepping for Thanksgiving is easy with Freezer Rolls

    Less than one week until Thanksgiving now! If there’s any way to prep for the holiday feast, I like to do it. As much as I love being in the kitchen, I love making it as simple as possible on the day of as well. We’d much rather be socializing and playing games while the turkey roasts than still putting together all the extras, right? That’s why I taught myself how to make Freezer Rolls. These are just like what you can buy at the store, but homemade! This post contains affiliate links and I will be compensated if you click through and make a purchase. 

    Start Thanksgiving Prep early with these freezer rolls.

    Not that I don’t like the ease of buying premade rolls, or even the frozen rolls occasionally, but I truly love making bread from scratch. It reminds me of my mom, and covering our table in flour as we all helped to knead, shape and bake the bread. I have been tasked with bringing a batch of rolls to Thanksgiving, so I went ahead and got those halfway done the other day. All that’s left will be letting them rise and bake

    Freezer Rolls are made just like any other roll. Take any old roll recipe, and whip it up. I like my Herb Dinner Rolls the best, but it works with any recipe!

    Once you choose your recipe, you’ll take the following steps. Mix your ingredients and give the dough a good kneading. TIP: If you want to keep the mess to a minimum, try kneading it on a large serving tray. The flour stays contained, and you won’t have dough stuck to your table.

    Cover and let the dough rise until double, just like you normally would. After the dough has risen, shape it into your rolls. At this point, you’ll want to put the rolls on parchment paper on a baking tray. Notice – I forgot the parchment paper when I took the photos. It really helps keep the dough from sticking to the pan when flash freezing.

    Place your pan of rolls in the freezer. Leave them there for about an hour or two. The last step is to move them into a freezer bag, and label it. I got these fun Thanksgiving labels from FreezerLabels. They have a number of fun free printables, or you can have your own printed. I had mine printed from the company because I figured their labels will better adhere to my freezer bags then ones I print myself. Also, when it comes to printing things like labels, making sure they print correctly – not really my area of technical expertise.

    Ingredients
    1. Favorite Roll Recipe – ( http://www.homemaidsimple.com/herb-dinner-rolls/ )
    2. parchment paper
    3. Freezer bags
    4. FreezerLabels
    Instructions
    1. Make rolls according to your directions.
    2. Place shaped rolls on parchment paper on a baking sheet.
    3. DO NOT let rise.
    4. Place in Freezer for an hour or two.
    5. Pack rolls in Freezer bags.
    6. Label with cook temp and time.
    7. Store in Freezer.
    8. When ready to cook, let thaw over night, and rise to double the size.
    9. Bake, and enjoy!

    While I was in the Thanksgiving prep mood, I also prepped the green beans for Mark’s required Green Bean Casserole. I was concerned they wouldn’t stay fresh a full week in my fridge, so in the freezer, with a label, they went. 

    Freezing Green Beans

    To freeze the green beans, flash freeze the green beans for 20 minutes on a baking tray. Just like the rolls, put them on a parchment first. After the flash freezing, dump them in a freezer bag and place back in your freezer.

    Thanksgiving is 1 week away! It’s probably one of my favorite holidays of the year. Lots of food and surrounded by family and friends – it’s really the perfect holiday for me. It’s not commercialized like most holidays, and I find it to be rather relaxing. Yes there’s a lot of food prep, and if you happen to be hosting, you’re probably scrambling to deep clean everything as well. For arguments sake though, on the actual holiday, it really is just relaxing isn’t it? For those heading to the kitchen to start their prep work, maybe I can give you a little help.     Happy Thanksgiving: A list of gratitude

    This month I’ve been sharing my gratitude daily over on Facebook. I thought today would be a great day, to grab all those little posts, and combine them in one to see what a bounty of blessings I have.

    1. Warm Coats. When we moved to North Dakota, some of us only had light jackets. The people here are so kind, and we soon had warm coats for everyone
    2. YOU! This month we reached over 3000 fans on facebook, and those posts are reaching a little over 800 each week. Here on the blog I see almost 4000 visitors a month! Thank you!! Keep coming back, and bring your friends.



    3. Morning Smiles from my kids. Really is there anything better than waking up to smiling kids?
    4. My Mom’s Banana Bread. Get the Recipe!
    5. The Holiday Season. This is the most wonderful time of the year. With sleighbells…are you singing yet? I just love the joy, kindness, and friendship that seems to be made more apparent this time of year. As we reach out to others to lift them up, because we feel that Christmas spirit.
    6. My church. Learn more about what I believe.
    7.  4 day weekends, and Snow. You really can’t get more lucky than having it snow on a 4 day weekend. It means no days added to the end of the school year, and you can play with the kids outside, in the freshly powdered earth.

    8. The USA and our veterans. I have incredible gratitude for our soldiers. Past and present – as well as their families who give their husbands, fathers, mothers, brothers, sisters, etc. You are wonderful. Thank you.
    9. Warm clothes and leggings.  Not to start controversy over leggings, I like the kind that just cover my calfs, and go under my legs. Pretty sure they kept me from turning into a popsicle one day.
    10. A new Day. Because every day we wake up, we have the choice to start fresh and new. To let go of our past, and move into our future. New days are AWESOME!
    11. My wonderful husband. I married a pretty great man. He loves his kids, he loves his job, and he loves me.

    12. My parents. I feel such gratitude to these two I get to call Mom and Dad. They have always been my team. From coach, to cheerleader. I sure miss them this year, but they’re only a phone call, or google hangout away.
    13. Good books. Puh-lease! Life is just better with good books. Don’t forget you can enter to win some of my favorites in the Holiday Gift Guide!
    14. My mom – baking skills. I love my parents as a team, but also separately, because they are individuals. My mom taught me to cook. She expected me to learn the basic skills of feeding a family. How very grateful I am for that when I look in my cupboard and see jars of jelly I made, or the fresh bread cooling on the counter.
    15. Our home. Oh how grateful I am that we have a home to live in right now. We moved to North Dakota with no place to live. After a few nights in the hotel, I truly am grateful for this place.
    16. Reliable car. Earlier this year, we were able to purchase a new/used car. Our van was dieing. We didn’t know we’d face unemployment, and then a huge move to North Dakota. Our van would not have made it.
    17. Snowy days, hot chocolate, and childhood memories. When you combine these 3 items, life couldn’t be much better. At least not for me. I am grateful that I have good childhood memories, and that things as simple as a mug of cocoa while the snow falls can bring those memories back.

    18. Kids playing nicely. Truly, this is a blessing everyday it happens. Kids don’t always play nice, but I want them to be best friends.
    19. School. This year I decided to go back to school. I love WGU, because I can go to school completely online. That means I can still put my family first, but still pursue something that will both enrich my life, and my families.
    20. My Dad. November also brings my dad’s birthday. I love this man so much, and could not have asked for a better father. He’s always been there for me, and I know he always will be. Warning, only watch the below video if you don’t mind seeing me cry.

    21. Amazing Friends and the Lord. We have moved a ton in our married life. Growing up, making friends was not easy for me. Yet every time we have moved, there has been someone who almost instantly became a friend, to both me and my kids. Krystal, Laura, Jennifer – thank you all for touching my families life! Along with this, is that I know the Lord has helped in putting these ladies in my life. They are all friends from church, with kids almost exactly the same ages as my own kids, with a similar view on life as my own. These friends have helped me through some rough patches, and never judged.
    22. childhood neighbor. I had an elderly neighbor growing up. She became almost like a mom to me. She hired me to care for her home, one year, and for the next 2-3 years that’s what I did. She taught me how to wax wood floors, trusted me at 12 with her riding lawnmower, as well as her beloved pets when she went on vacations. Until this year I didn’t think I’d use those skills for anything but my own home. However, recently I’ve been able to pick up side work cleaning homes for others, and being able to contribute to our family’s needs.
    23. Pie. Ya’ll, I love pie. So let’s say thanks for all we have, and go enjoy some good old fashioned pie!

    Let’s work on cultivating an attitude of gratitude all year long. Some of my list may seem a little silly, but that’s OK. Those small, silly things, are what we can find gratitude for every day. By being grateful, we can become more happy.

    Tips for a Stress Free Thanksgiving

    Don't let hosting Thanksgiving stress you out. Grab these tips for a Stress Free Thanksgiving dinner.

    Thanksgiving is arguably the most underrated holiday of the year. Tables filled with delicious turkey, mashed potatoes, vegetables, cranberry sauce, and pies entice families all over the country to gather together to eat, laugh, and share memories. It’s practically a get out of jail free card for noshing on all the yummy food you can eat!

    If you are hosting Thanksgiving this year, the holiday may be losing a bit of its shimmer as you contemplate the gazillion things you have to get done before turkey day finally arrives. In order to save you and your family from a possible meltdown, burnt turkey, and another crazy family story to tell at family reunions for years to come, take a little time to prepare in advance. A few minutes of early prep will make your day a little less crazy and a lot more enjoyable.


    Shop Ahead

    Do not wait until the day before Thanksgiving to hit the stores for food. Not only will you be joining a throng of cranky procrastinators, you’ll be adding unneeded extra stress. Purchase your food as far in advance as possible; you may even already have some non-perishables lying around the house, as these can remain fresh for months at a time. You can even purchase your turkey in advance. If you do happen to forget an item, you’ll only have to run to the store to grab one or two things instead of a cart full. 

    Prepare Your Kitchen:

    A week or so before the big day, take an inventory of your kitchen. Review the recipes you plan to use (and pull them out so you can access them when you need them) to make sure you have everything you need, either in your kitchen or on your shopping list. Make sure to calibrate meat thermometers, clean out the fridge, free up Tupperware dishes and dust off holiday décor.

    Use Paper Plates:

    I know this may sound terribly untraditional and unholy for some families, but if the idea of tackling a million dishes and pans is enough to make you swoon, consider opting for paper plates instead. You’ll save time on cleanup, which means you get to spend more time playing games and talking with your family.


    Cook Ahead:

    If you are hosting a big party, it’s likely you have a lot of cooking to do. It can be overwhelming and your kitchen may not be suited for cooking 15 different food items at once. Bake everything you can in advance. Pies, cakes, and other desserts can easily be made and stored at least 24 hours in advance (you can even freeze pies to store them longer), casseroles can be prepared in advance, and drinks and juices can be prepared. Get as much of the food that will hold over well cooked the day before and simply reheat when dinner rolls around. Your turkey, stuffing, rolls, and gravy should not be among those prepped early.

    Sort the Plates:

    If you spend most of Thanksgiving morning cooking and plating entrees and sides, you don’t want to waste time digging through the cupboard looking for your favorite dish or the right sized platter for your veggie tray. Pull out the serving dishes the night before and label each dish with a sticky note telling you what dish will be used for which food item. While you are preparing food the next day, you can just grab and go!

    Ask for Help:

    The best way to reduce stress, save time, and bring the family closer together is to ask everyone to bring a salad, desert or other side dish. You can cook the turkey and another dish or two, but ask that your family members bring over other side dishes so you can spread the workload around.
     



     

    Thanksgiving is a wonderful time for families to get together and talk over a comfortable meal. Preparing for the big day should be fun and as easy as possible. Keep yourself in the holiday spirit by taking a little extra time before Thanksgiving morning to prepare.
