    I have a problem. I waste money on fresh herbs almost monthly.

    I buy those little packs of herbs, as small as I can get, in hopes I’ll use it all before they start to go bad, but it never happens. I use a few leaves here and there, but it’s never enough. Most recipes I need fresh herbs for usually only call for a few teaspoons at most. 

    Now I really hate wasting money. Every time I throw something out from the fridge I cringe. It’s also caused a weird relationship with my food, as I find myself nervous to buy anything fresh, because ‘what if we don’t eat it in time!’

    Besides not being healthy for the mind to think like that, it’s not really healthy for the family either. It means we tend to buy the highly processed, shelf-stable foods much more often than the good for you fresh stuff.

    Well, thanks to Dorot Gardens, I’m now buying fresh herbs again that won’t be wasted! The price is on point for what I spend on those little packets of fresh herbs, but now I won’t be tossing anything in the garbage. You can find them in the freezer section at your local Kroger.

    I’m all about saving money and still giving my family meals they can enjoy. Thanks to these perfectly portioned cubes of herbs and garlic, I can take our meals to a new level again. Since breakfast has been my big focus lately, I tried these first in a Tomato Basil Egg Skillet

    Breakfast at our house has to be fast to make, and full of flavors everyone will enjoy – which is why the kids usually just end up with cereal.     Ingredients
    1. 4 eggs
    2. 1 cube Dorot Garden’s Basil
    3. 1 cube Dorot Gadren’s Garlic
    4. 1 Roma Tomato, chopped
    5. salt and pepper to taste
    Instructions
    1. Whish eggs in a small bowl.
    2. Heat a non-stick skillet on medium-low heat. Add basil and garlic. Crush with a spoon, and stir around for about 30 seconds to 1 minute.
    3. Add eggs and tomatoes to the pan. Stirring periodically to scramble. Cook until eggs are no longer runny.
    4. Season with salt and pepper.
    5. Serve warm.

    This is the kind of breakfast I could make and eat every morning. It only takes a minute or two longer than opening a box of cereal, and it’s obviously so much better for us.

    Nothing says summer quite like the flavors of Neapolitan ice cream. Except when you can get those flavors with fresh berries in other foods like these Neapolitan Crepes.     I’m a big fan of crepes. I wasn’t as a child, but I like to believe my taste buds have refined the older I’ve gotten. Now if only I could get my kids on the same page. They’ll try anything once though, especially if it looks like chocolate and strawberries have been combined.

    This isn’t quite chocolate, however. No this is something better – this is Rigoni di Asiago’s Organic Hazelnut Spread with Cocoa and Milk. This is Nocciolata.

    I took the liberty of spreading half a crepe with Nocciolata and the other half with Fiordifrutta – a strawberry fruit spread that tastes like the kind my Nana use to make.

    Now don’t you worry, I didn’t forget about the vanilla. It wouldn’t be Neapolitan Crepes with that very distinct flavor. A delicious vanilla bean was added to the actual crepe batter making these a treat that literally just melts in your mouth.

    My culinary creation was finally finished when I topped the crepe stack with fresh strawberries and drizzled on more of the Nocciolata

    It just doesn’t get better than this if you’re looking for a sweet crepe any time of day. We had them for lunch – but breakfast, dinner, or dessert work just as well!

    Ingredients
    1. 2 Eggs
    2. 1 cup Flour
    3. 1 1/4 cup Milk
    4. 1 Vanilla Bean
    5. 1 TBS Butter, softened
    6. pinch of salt
    7. 1 TBS Sugar
    8. 1 jar Rigoni di Asiago Nocciolata Hazelnut Spread
    9. 1 jar Rigoni di Asiago Fiordifruitta Strawberry Spread
    10. 1/4 cup Strawberries, sliced
    Instructions
    1. Combine eggs, milk, flour, salt, and sugar in a blender. Scrape out the vanilla bean and add to the blender.
    2. Blend until well combined, and a smooth texture.
    3. Place in refrigerator for 1 hour.
    4. Heat a small frying pan on medium heat.
    5. Pour 1/4 cup crepe mix into pan. Tilt pan until the bottom is covered in a thin layer of mixture.
    6. Cook 30 seconds, or until the edges easily come up.
    7. Flip and cook the other side 10-20 seconds.
    8. Remove from pan.
    9. Spread with Rigoni di Asiago Hazelnut and Strawberry spreads.
    10. Fold into quarters.
    11. Serve warm with fresh strawberries and more Hazelnut drizzled across the top.

    1. The mixture can sit in the fridge for up to 24 hours, so you can make this for breakfast the night before!

    The first week of school is behind us, and so is a cupboard full of cereal. I use to be a morning person, and I love breakfast, but our mornings are a rush with 3 of the kids now in school, and me staying up wicked late to get work done. I’ve been trying to find something that’s quick, easy, and can be made the night before and I found a winner! These Sausage and Egg puffs are great for a lazy morning, or can be made and frozen ahead of time to be warmed up in the morning. Plus they’re just delicious!

    Anything is better in the morning than cereal – at least I think so. Something a bit more hearty, that can fill me up fast without having to eat a ton. I was a little unsure at first if these would fit that requirement for me, but after 2 puffs I was perfectly satisified. The kids all stopped at just one.

    As every good New Englander knows, breakfast is just better when accompanied with maple syrup. I was excited to see that Johnsonville had a Vermont Maple Syrup breakfast sausage, and of course couldn’t leave the store without it. I couldn’t stop there though. After the mini beauties came out of the oven, I couldn’t resist pouring a little more syrup over the top. The crescent rolls soaked up the syrup so every single bite was filled with the delicious flavor from either the sausage or the actual syrup.

    Serve a quick and delicious breakfast with these Sausage and Egg Puffs

    Ingredients
    1. 4 Johnsonville Vermont Maple Syrup breakfast sausage links
    2. 2 eggs
    3. 2 TBS green onions
    4. 3 TBS Swiss Cheese, chopped
    5. 1 pkg crescent rolls dough
    6. Maple Syrup
    Instructions
    1. Chop sausage links into medallions. Cook in a frying pan over medium heat.
    2. Add eggs, and scramble. Set aside.
    3. Lay crescent rolls over a mini muffin tin, with the thicker side mostly in the pan.
    4. Fill each dough with egg mix, onions, and cheese.
    5. Pull thick end of dough over the top, and wrap the skinny end around the edge.
    6. Bake at 350 F for 10-11 minutes
    7. Let cool for a minute. Dip in Maple syrup, or enjoy on the go.

    1. Preheat a skillet over medium-low heat.

    We’re split pretty evenly around here on liking eggs and not. Some of us love them, while the others don’t want anything to do with them. I converted Princess R today though with these Korean Egg Rolls. Who knew tossing some carrots in with the egg is all it would take. 
     

     
    While searching for a good Korean recipe this month I came across this recipe for egg rolls, or Tamagoyaki, from Eugenie Kitchen. I showed it to Mark, who immediately wanted one. He watches a lot of anime, and said one thing they always eat (and makes him hungry watching), is an egg roll. He thought we needed a square pan, but thanks to Eugenie Kitchen, we found it wasn’t necessary, though I’m sure it would help some to have the square pan – I’ll just put it on my list. 
     
    I had a lot of fun making this, mostly because it was SO SIMPLE, but also because I got to use some chopsticks my mother in law sent from Japan. While taking pictures, I tried a new trick I learned as well, and it worked!

    Food of the World: Asparagus Flan

    Ever wonder why French Women don’t get fat? In the book by just such a name, I learned to make this Asparagus Flan that is divine. Try it out, then check out the book.
     
    Earlier this year I read a book called French Women Don’t Get Fat. It was really quite an interesting read, and not what I expected at all. The author Mireille Guiliano, takes a practical approach to food, based on her families French culture and traditions. Throughout the book, Mireille includes different recipes and sometimes a story from her childhood to go with it.
     
    I chose to cook up the Asparagus Flan because we had just received a bundle of asparagus in our weekly produce delivery. My mom also recently stalked our fridge with eggs, fresh from her chickens. If you can get a hold of them, I promise you, farm fresh eggs are indeed better than store bought. 
     
    The Asparagus Flan sounded like a wonderful way to use both the asparagus and eggs while getting the kids to eat some veggies without too much complaint. Mireille has you peel the asparagus, which is something I’ve never done, but it made the veggie much easier to eat. I felt it also gave the texture a nice little boost then if they hadn’t been peeled.

    Ingredients
    1. 16 stalks Asparagus
    2. 4 Apple Smoked Bacon slices
    3. 8 eggs
    4. 2 cups milk
    5. 1 cup Heavy Whipping Cream
    6. salt and pepper to taste
    7. 1 TBS fresh Parsley, chopped
    Instructions
    1. Preheat oven to 350 F.
    2. Remove the tough ends of the asparagus and peel them. Cut into 1 inch pieces.
    3. Boil asparagus in slightly salted water for about 5 minutes. Set aside to cool.
    4. Chop the bacon into small pieces, and saute.
    5. Drain the asparagus and dry the grease off the bacon.
    6. In a large bowl, combine eggs, milk, cream, salt and pepper, and parsley.
    7. Pour into a deep dish pie pan.
    8. Sprinkle the asparagus and bacon over the egg mixture.
    9. Bake for 30 minutes, or until cooked through.
    10. Serve with French bread.

    Cherry Broiled Grapefruit

    Best breakfast ever! Cherry Broiled Grapefruit

    I just love grapefruits!  Sometimes I go in little spurts, and won’t buy any for awhile, and then I fill the fruit drawer in the fridge and eat them daily for a couple weeks. I remember as a kid, this was one of my absolute favorite breakfasts my Mom would make. It was quick, easy and fairly inexpensive as well. Most of my siblings dreaded the grapefruit, but I loved it. I recall watching my mom eat hers, and because she couldn’t waste any of this goodness she would squeeze all the juice out at the end into her spoon and sip it up. I still do it that way. It can get a little sticky, but that juice at the end is so full of flavor.

    When you add the cherry to the middle you can get a nice red color throughout the fruit after it’s done broiling, as well as an extra flavor booster. Do not skip the cherry, I promise it’s worth it.  My mom always added a Maraschino cherry and sometimes a little juice. I didn’t have any on hand, but I did have some sour cherries from my mom’s cherry tree.

    Ingredients
    1. 1 grapefruit
    2. 2-4 tsp sugar
    3. 2 cherries (maraschino work best, but sour cherries are also good)
    Instructions
    1. Slice your grapefruit in half.
    2. Carefully cut around the edge of the fruit and then between each slice to separate the fruit from the peel and skin.
    3. Sprinkle 1-2 tsp of sugar onto each half of the grapefruit.
    4. Top with a cherry.
    5. Place the grapefruit on a cookie sheet, and set it under your broiler for 3-5 minutes.
    6. Keep a close eye on it. You want the sugar to dissolve into the fruit, but it will also burn fast.
    7. Pull it out, and let it cool just slightly

    Kids In the Kitchen: Apple Pie French Toast #FoodieFriday

    A few weeks ago I told you how I have the kids separated to help with each meal during the day. In that post I told you how I let Princess V smell the spices and pick some out to make Venice’s Chicken.  Today I’m excited to share an extremely easy, but very tasty French Toast recipe.

    I created the Apple Pie French Toast one day when I realized too late we were out of cinnamon. I started going through the spice cupboard (yes I have a cupboard dedicated to spices), to see what in the world I could substitute, because of course I already had most of the mixture whipped up. It needed something!  I’ve tried a few different spices, but this recipe is by far my favorite on French Toast!

    Of course here I’ll show you just how easy it is to get kids involved in the kitchen as well. Above you see my breakfast helper, Princess C flipping pancakes. A few pointers before you let your 5 year old near the stove

    • Talk to them about how hot the pan will be. Make sure they are aware of where their hands are at all times on the spatula so they don’t get too close to the hot stove.
    • If a slice of bread flops off the spatula onto the counter, or stove top, or half on half off, don’t let your child adjust it. 
    • Parental supervision should be used at all time when cooking with kids in the kitchen
     

    Apple Pie French Toast

    Ingredients
    6-8 slices whole wheat bread
    2 eggs
    1/2 cup milk
    1 tsp vanilla extract
    1/2 tsp sugar
    1 tsp Apple Pie Spice*
     
    Directions
    In a shallow pan (we use our round cake pans), mix eggs and milk together until eggs are broken and well mixed with the milk. Add vanilla and stir some more. Last add the sugar and Apple Pie Spice. Stir some more, until the sugar and spice are mixed in. The spice will mostly stick to the top of the liquid, that is just fine. 
     
    Heat a griddle, or frying pan to medium heat. Depending on your pan, you can use some Pam spray, or melt a little butter on the pan to help avoid the toast from sticking. 
     
    Dip a slice of bread in the egg mixture, and turn coating both sides. Place on the hot griddle, and repeat with the rest of the bread until the griddle is filled. Cook approximately 3-5 minutes per side, or until bread is nicely browned and toasted on both sides. 
     
    Enjoy with a little butter and maple syrup for a nice treat.
     
    *Some spice substitutions we’ve tried and enjoyed are cinnamon, allspice, or pumpkin pie spice. Have fun mixing up your french toast!

    Ever struggle to feed your kids oatmeal?  I know when I was a child I really did not like oatmeal. My mom always tried to make it appealing with fresh fruit, or cinnamon and milk. No matter what though, my gag reflexes always kicked in when trying to eat oatmeal.  Thankfully my taste buds have refined themselves as an adult, and I actually enjoy oatmeal now. I can not eat it plain though. 
     
    Unfortunately, my kids have taken after me and struggle eating the sticky stuff. I’ve tried a multitude of ways, including fun fruit parfaits, but nothing could get them to eat it. That is, until I baked it.  Princess V is the only one that still fights me on oatmeal, while the other 3 gobble it up and even ask for more. According to Princess C “3 is good Mom. Can I have one more?”
     
    Of course Princess V’s reaction was a bit more dramatic when after some screaming and wailing, I sent her back to bed, she uttered the words “You’re going DOWN for this!”  Well, I must be parenting right, but I think some TV shows need to be turned off for awhile…Avatar, or very possibly the old Sonic the Hedgehog we’ve recently introduced the kids to. And by the way, I saved her oatmeal for her and still made her eat it once she calmed down and apologized. 
     
    I’m still feeling a win on this with 3 out of 4 kids liking it
     

    Chocolate Strawberry Baked Oatmeal

    Ingredients
    1 1/2 cups quick-cooking oatmeal
    1/2 cup sugar
    1/4 cup butter, melted
    1/2 cup milk
    1 egg
    3/4 tsp salt
    1 tsp baking powder
    1 1/2 tsp vanilla extract
    1/4 cup Almond Bark Shavings
    1/3 cup Strawberry Jam
     
    Directions
    Preheat oven to 350 F. Grease a 9×9 baking pan
     
    Combine all the ingredients except the jam in a medium bowl.  Pour into the prepared baking dish, and spread out. Add dollops of the strawberry jam on top, or spread it into an even layer.
     
    Bake for 25 minutes. Serve and Enjoy.

    It’s an iconic image for mothers day. Shown with burnt toast, an overly messy kitchen, and always a homemade card. A Mothers Day breakfast in bed doesn’t have to follow those messy trends. With a little forethought and Dad’s help, you too can have a breakfast in bed.
     

     Mothers Day is coming up. That means it’s time to get those gifts ready, and make plans to remind Mom just how much you love her. As a mom, I will tell you right now, it’s the little things that mean the most – an acknowledgment of all she does and the little sacrifices that may not seem like much is all Mom is looking for.
    Last week I shared 7 gifts Mom will love – today I’m giving you 2 simple recipes to make Mom’s breakfast in bed extra special.

    Chocolate Chip Banana Muffins

     

     

    Chocolate Chip Banana Muffins

    Ingredients
    1. 1/2 cup shortening
    2. 1 cup sugar
    3. 2 eggs
    4. 3 Bananas
    5. 1 3/4 cup flour
    6. 1 tsp baking soda
    7. 1 tsp salt
    8. 1/2 cup chocolate chips
    9. Streusal Topping
    10. 1/4 cup butter
    11. 1/4 cup sugar
    12. 1/4 cup brown sugar
    13. 1/3 cup flour
    14. 1/2 tsp Roasted Saigon Cinnamon (gives it a very light kick)
    15. 1/4 tsp Nutmeg
    Instructions
    1. Preheat oven to 300 degrees F.
    2. Cream together shortening, sugar, eggs, and bananas.  Set aside.
    3. Sift flour, baking soda, and salt together.
    4. Add dry to the wet ingredients, and mix until well combined.
    5. Fill muffin liners 1/3 full with batter.
    6. Add a few chocolate chips, and fill the muffin liner up to 2/3 full.
    7. In a bowl combine butter and sugars.
    8. Slowly add in flour and spices until just combined. Crumble on top of muffins.
    9. Bake for 50-60 minutes.
    10. Cool on a wire rack.

    Oatmeal Yogurt Parfait

     
    Oatmeal Yogurt Parfait

    Ingredients
    1. 1 cup water
    2. 1/2 cup Rolled Oats
    3. 1/2 cup frozen mixed fruit, thawed
    4. 1/2 cup vanilla yogurt
    5. Fresh blueberries and strawberries
    Instructions
    1. Boil water, and add the oats.
    2. Stir until well mixed.
    3. Layer a 1/4 cup oats in the bottom of a cup or parfait dish, top with 1/4 cup frozen fruit mix, then 1/4 yogurt.
    4. Repeat the layers.
    5. Top with a spoonful of fresh blueberries and a strawberry.
