Cake and Ice Cream Features at Weekend Bites

How did you all know we were heading into birthday season here? So many of you shared delicious looking cakes, cupcakes, and ice cream I had a hard time choosing this weeks features. We kicked off our birthday season with Princess C’s 8th birthday this week. It’s sort of a week long celebration since her birthday was Tuesday, and she’ll be getting baptized on Saturday, so family has slowly been trickling in to see us and celebrate. Next week is my brothers birthday, and then the week after is Mark’s and his nephews. I can’t wait to put all of these recipes to good use in the coming weeks.

Where did you all go? I was having a pretty crazy week myself, but from last week’s turn-out, I’d say we all must have been pretty busy. I get it, though. In fact, just earlier this week I wrote about how hard it is to balance life when we have so much on our plates to do. If you’re feeling as overwhelmed as me, may I suggest to take a few deep breaths. Then grab yourself one of these snacks and dive back in.

Alright, who is headed to a party this weekend? My nephew invited us over to watch the Super Bowl with his family after church on Sunday. While I’m tempted to just show up, Best Ever 7 layer Bean Dip in hand, I should probably talk to his parents and see what they’re plans are. Kids are so fun though, and I of course will take any excuse to hang out with my niece and nephews.

Last weekends party was a hit with the party dips! From the ever popular chili cheese dip, to a healthier spinach dip, I think there’s something everyone will love here today for a little dipping fun. If you’re looking for something a little more sweet or romantic, Debi is featuring Valentines Desserts this week.

I did it. I sat down Sunday afternoon and made an actual menu plan for the week again. It’s been so long since I’ve really planned out our meals. I couldn’t tell you what we’ve been eating lately because most days I whip something together that night and hope the kids will eat it. Most of January I’ve been working on tidying up the house, and making our home a place that I can truly work from home better in. So most of everything else, including bringing you awesome content, has been pushed to the side while I get back on track.
I feel like I was finally back to a mostly clean house, and so when Sunday came I had time to actually sit back and really relax! What better way to relax then flipping through my stack of recipe magazines and planning a menu? The kids weren’t too thrilled with my activity until they started flipping through too. Venice was the most helpful in finding recipes she’d like to try, but all the kids contributed at least one recipe to our menu this week – and surprisingly they are not all desserts!
It had me thinking how I need to sneak some more veggies into our meals. So while browsing weekend bites, I found these fantastic recipes that I know my kids would love. Do you have to sneak veggies into your kids diet?

    Sneaky Veggies Features

These slow cooker chicken taco lettuce wraps are going to be your new favorite taco recipe. Make the chicken taco meat in the slow cooker and substitute iceberg lettuce leaves for tortilla shells! | honeyandbirch.com

Slow cooker Chicken Taco Lettuce Wraps

    from Honey & Birch

My kids LOVE tacos. When served in a lettuce shell, they rarely complain about this veggie they usually avoid in a salad.

taco dippers appetizer for football game parties from Nap-Time Creations {ad} #KickUpTheFlavor

    Taco Dippes

    from Nap-Time Creations

Speaking of Tacos. Give kids anything to dip, that they can hold in their little hands, and we usually have a winner. You can sneak all kinds of veggies in these.

Cheesy Zucchini Spinach Quesadillas | DizzyBusyandHungry.com - Your kids will actually REQUEST this dinner, even though it is chock full of veggies!

    Cheesy Zucchini Spinach Quesadillas

    from Dizzy Busy & Hungry

Quesadillas, similar to tacos rarely bring complaints from kids. While perhaps not as sneaky putting veggies in a quesadilla, the kids will usually sitll try it.

I love squash, but as a kid I didn’t. My mom always came up with ways to hide the squash, and I can easily see myself trying this one soon!

      Football Food at Weekend Bites
I feel the need to apologize for the shortness of last week’s party. I had caught some bug that had me unable to concentrate on anything for longer than a few seconds. I’m feeling so much better this week, thankfully. Not much has been posted through the week, but I’ve got some fun posts in the works. Instead, we had a week spending more time with each other, getting back into the swing of school without the in-laws here, and tidying up the house

Who is ready for some FOOTBALL! I hear the big game is in 2 weeks. To be honest, I’ve not really kept up with any of the teams this year, but will randomly root for my Patriots on Facebook when I see someone posting about them. My favorite part of football is the food and company. I think these recipes from last week will be a hit at any game day gathering.

      2016 Weekend Bites
How was everyone’s first week of 2016!! It’s been fairly tame around here. The kids went back to school Monday, and little Prince and I are getting back into a daily routine. He’s missing his sisters, but also seems more content to play by himself in the quiet. Today I tried packing him a lunch at the same time I did the girls, in hopes he’d forgo spending the day looking for snacks. It was only semi successful. We’ll keep trying though, and see if I put more in he likes if he’ll stick with it better. This week I’m looking for lunch recipes – for me and the kids! Share with me what you have.

I love New Years Eve. A party to put the past year behind us, and look to a new future. As one meme I saw today said “Tomorrow is a blank page in a 365 page book. Write your story well.”

It’s been such a fun year with you all. We’ve changed names and co-hosts for this party, and you still continue to come by. It makes my heart happy to see each of your recipes and the memories you’re making around food with your families and friends. As we head into the New Year, I know many of us will be looking for a few healthier recipes to counteract all those treats we just consumed (and may be consuming tonight as well…). So I’ve grabbed some recipes I think we’ll all enjoy to share this week.

Merry Christmas! The kids are finally in bed here, and I’m just waiting for Mr Claus to get here to I can go to bed. It’s been a beautiful day, but the highlight of our Christmas Eve was taking cookies to our neighbors and singing some carols to them with our local LDS Missionaries. It helped remind me of our Savior’s birth again, and got me through the rest of the day solo parenting the kids. We whipped up some pizza for dinner, and I even made tomorrow night’s dinner tonight. We’ll have 16 people over for Christmas dinner, and I am just so excited for the full house!

I am wishing I had had more time to bake this week. You all shared so many delicious looking recipes. So despite Christmas baking being past, these recipes are ones I can still make and enjoy.

  • Weekend Bites: A Tribute to Chocolate Chocolate and More

Weekend Bites: A Tribute to Chocolate Chocolate and More

Welcome to Weekend Bites: Your Weekend Food Party.
In Memory of Joan Hayes from Chocolate Chocolate and more

Today’s party doesn’t feel much like a party to me. I learned yesterday one of my favorite bloggers passed away in her sleep in late October. Joan from Chocolate Chocolate and More, was full of life and lived a philosophy many of us would agree with – that chocolate makes everything better.

Years ago when Weekend Bites was known as Foodie Friday, Joan would share her recipes in our link party. I loved browsing to her site, and seeing her delicious recipes stare me in the face. Thanks to Joan’s Canned Lemon Curd, I learned about fruit curd (my prior knowledge was the cheese kind). It sounded so delicious I made some that year and gave it to my Mom for Christmas. Joan inspired me with her love of chocolate, and just seeing her posts on Facebook – screaming Chocolate, whether the recipe had chocolate in it or not, to my eyes – could lift my spirits.

Joan left behind 3 children, and so many many friends. While I can’t fully understand the emptiness I’m sure they are feeling, I can imagine it. Joan was smart though. She’s set up Chocolate Chocolate and More to continue to bring a source of joy to others with contributing authors, and advertisements that will still help bring in revenue for her family.

Today, in honor of Joan, I ask that you take a moment to browse her recipes.  Then if you have a chocolate recipe, I’d love to see a link up full of Joan’s favorite food (if not, that’s OK. Link up what you’ve got.) In lieu of our regular features today, I’d like to share some of the recipes Joan once shared with our party here.

In Memory of Joan – Features from Chocolate Chocolate and More
