  • She Couldn’t Breathe

    She Couldn’t Breathe

What a long weekend! I don’t remember what we did on Saturday.

Saturday night, however, is a night I will never forget.

I was struggling to sleep, and just starting to doze off, when Prince L (9 months) woke up. While I was settling him back down, Princess V (6) came running up the stairs – she had just thrown up all over her bed, with a little splattering onto Princess R’s blanket.  Mark is amazing with these things, and he got right up and cleaned her off, then took to stripping her bed and sisters, and getting her settled in on the couch with towels and a bowl.

I was once again on the verge of dozing, possibly even halfway to dream land, when we hear her calling from the couch. Again, Mark got up and went to her, and I was gone to dreamland – trusting in his ability to care for her, and my need of sleep.

I was woken suddenly to “I need you. Mom I need you to come help. Quickly.”  Mark was calling. Weird I thought, but I jumped and ran to do whatever I could. What I faced that night, was something I never expected. Princess V was all cleaned up, but Princess C (4) was sitting on the bathroom floor, shaking, and coughing and struggling to breathe. I thought she was going to throw up, so I sat next to her and rubbed her back and held her hair out of her face. After a few attempts, I knew she didn’t need to. Something else was seriously wrong. I called for Mark to get me a blanket because she was shivering and shaking, I was hoping from the cold bathroom floor, but in hindsight I think it was that coupled with trying to get air into her body. Mark turned the shower on high heat, and then left to finish cleaning the couch.

I sat there rocking my girl on that bathroom floor wrapped in a blanket, looking into her eyes, listening to her struggle to breathe, and trying to understand what she was trying to tell me. My face was dripping with tears, because the worst fears were going through my head. We had never lived so far from a hospital, or even a late night urgent care. We are a good 20-30 minutes away. Plus we have 3 other kids, that would mean I or Mark would have to stay home if we went to the hospital, and when it comes to our kids in pain/sickness we both want to be right there with them.

As Princess C got one word out at a labored time, this is what she told me “it’s. my. black. hair.”
I almost laughed. Princess C has had beautiful blond hair since birth. Earlier that evening, while combing her hair, I found a solitary black hair. She had been distraught over this black hair on her “yellow” hair. I told her it was unique. My little 4 year old had decided that that black hair must be the problem.

Through all the commotion Princess R (3) woke up and began crying. Princess V, even though sick, was a big help and took her back to bed and laid with her until she fell asleep again, so we could take care of Princess C.

Mark finished up the couch, and when he returned he was carrying Prince L again. Thankfully the steam worked, and Princess C was able to breathe a little better….by which I mean she could actually breathe without struggle…it was still labored. We exchanged children, and while I fed Prince L, Mark blessed Princess C.  For which I am ever grateful that he holds the priesthood and can bless our children when the need is there.

The rest of that night and Sunday night, I spent sleeping on the floor. Too worried that she would struggle for breath and I not know, I needed to be there next to her.

This morning I called our local doctor, who got us in before lunch. She has a cold. She will be fine (though a simple call will send a prescription out if needed). The kids are once again all in their own beds, with clean sheets and blankets. Before falling asleep though, all 4 began coughing at one point this evening. I feel the bug has spread.

But hey, I still managed to make a menu plan!  Everyone chose one meal, so we will all get a comforting meal this week.  It could all quickly turn into chicken noodle soup though.

Monday – hot dogs and corn
    Tuesday – Lasagna
    Wednesday – Chicken Cordon Bleu
Thursday – Gumbo and Rice Casserole
    Friday – leftovers
Saturday – Bean and Cheese Quesadillas
    Sunday – Pizza

And at some point this week, Princess C has requested a cake be made.

    Menu Plan Monday 12/10

Well, we still don’t have a set date for moving yet. It’s making me a little crazy, especially with the holidays approaching. We haven’t put up our tree yet, because we’d like to move before Christmas, but we may not.
I decided to go ahead and start packing, in hopes it would make our loan get approved faster, and therefore mean we moved faster. Basically trying to keep the optimism going around.
The waiting however, has also put a damper on what I cook. I don’t want to go fill our fridge and pantry with food, just to move it a few days later. So this week, I’m trying to use up what we have on hand. Then I’ll do one huge grocery shopping trip after the move.

    Monday – Chicken Nuggets
Tuesday – Bean and Cheese Quesadillas
Wednesday – Eat Out (sometime between dance dress rehearsal and Band concert)
    Thursday – Macaroni and Cheese
    Friday – Chili
    Saturday – Spaghetti and Meatballs
    Sunday – Steak and potatoes

Breakfasts – Steak and eggs, Corn Muffins, Eggs and Bacon, Pancakes

    Finding Inspiration {Menu Plan}

It was a long weekend! Saturday afternoon my little Princess R got a little sick. To be on the safe side, I canceled our plans for the evening. We were going to attend the Army Band Concert with some of Mark’s students.  Instead Mark took the older Princesses to the concert, and I stayed home with the sick girl and baby prince. It turned out to be a pretty nice evening at home.

Sunday rolled around, and Princess R seemed to be feeling much better. She had no fever, and ate a bowl of Fruit Loops for Breakfast.  I only allow sugar cereals on Sunday, so it’s like a treat. They kids look forward to Sunday all week long, so I let her have some.  We went to church, came home and started making lunch, when it happened. Princess R was definitely suffering some kind of tummy bug. Thankfully we had bought some pedialyte on Saturday. I spent the majority of my afternoon and well into the evening taking care of the sick girl, and the Prince – who was starting to act a bit sick himself.

I normally plan our weeks Menu on Sunday, but I didn’t get the chance this weekend. I almost decided to just forego it, and wing dinners all week. That however, has never worked out well for my sanity. So this morning, I went looking for inspiration at of course my Foodie Friday party!  There are so many good recipes linked up over there.

    Dinner Menu Plan

Monday – BBQ Chicken Bacon Pasta Bake (leftovers…this is OH so good!)
    Tuesday – Chili
    Wednesday – Macaroni and Cheese
    Thursday – Bruschetta Chicken Pasta
Friday – Salmon and Pasta with Lemon Dill Sauce
    Saturday – leftovers
Sunday – Smokey Beans and Rice

  • Cupcakes and Sisters {Menu Plan}

Wednesday night, my sister and I took a trip to the store for some last minute Thanksgiving items. It was nice to spend some time with just her, so we decided to make the trip extra special, and went to a little Cupcake Bakery.  It was one of the cutest little places I’ve been to in a long time.

My sister knows me uber well, and knew that I love cupcakes. I’m not a big television watcher, but one show I make sure to record each week is Cupcake Wars. It just so happens that the bakery we went to, had been on Cupcake Wars earlier this year, and I remembered them!  Cravings – Alisha’s Cupcakes, was in the Teenage Mutant Ninja Turtle episode, where they had to turn pizza into cupcakes.

No I didn’t try a pizza cupcake.  I enjoyed a Salted Caramel Cupcake, and my sister tried her Snickerdoodle Cupcake. They were both very yummy!  She had also made some fudge and was offering it as a free sample.  Along with the yummy cupcakes, Alisha has created a fun atmostphere for eating them. She has couches, and tables and chairs, even a little corner for kids. None of the furniture matched, but it all gave off the same feel, fun. Just perfect for enjoying a girls night with my sister.

I had hoped to take my Princesses back before we left town, but it just didn’t fit into our schedule. So over Christmas vacation, we’ll definitely be visiting Alisha again.  She actually just opened her store front a few weeks ago. So if you live in the Utah County Area, you should go visit her on Main Street in Pleasant Grove.

Did I mention, I got to meet Alisha too? Yep she was the only one there baking and serving cupcakes when my sister and I stopped by.  She is a lot of fun, and extremely friendly. I kind of felt like I was meeting a rock star.  I’ll definitely be tuning in when she makes her 2nd appearance (voted a fan favorite!) on Cupcake Wars.  This was my first trip to a Cupcake Bakery, but it won’t be my last.

Have you been to a Cupcake Bakery?

Now, what to eat this week? We left all the leftovers at my parents, so no more Thanksgiving food for us.

Monday – Bean and Cheese Taquitos
    Tuesday – Macaroni and Cheese
    Wednesday – Chili
    Thursday – Caprese Chicken
    Saturday – Leftovers
    Sunday – Lasagna
  • Thanksgiving Traditions {Menu Plan}

    Thanksgiving Traditions {Menu Plan}

Growing up, Thanksgiving was a feast! Both of food and people. Many of our family friends had no family nearby, so we had them over to our house for Thanksgiving. I remember filling our Great Room with 3-4 long folding tables, plus one smaller table for the kids. You could hardly walk around there were so many of us gathered.

While we would wait for the main meal to be served, we always had a fun little contest.  H’or Doeves!  Everyone was allowed to bring 1 h’or doeve to enter the contest. Categories were set up by age group.  It was always so much fun. I remember one year I used my Roald Dahl cookbook, and made a hoagie sandwich look like a crocodile.

The past couple years we have really tempered it down, keeping it just to family.  As a part of that the h’or doeve contest got cut. However, this year, my sister is bringing it back!  I was just told this weekend though, so now I have got to pull something together fast. I’m feeling stuck….pinterest and foodie friday have given me way too many options.

This Bread Dough Cornucopia from the Jazzy Gourmet Cooking Studio would look amazing on anyy Thanksgiving table

I know my sister has a soft spot for Biscotti sinve she traveled to Europe. So I might try this Orange Anise Biscotti I found on pinterest

While I personally love bruschetta inspired h’or doeves, like this Artichoke Bruschetta

In the meantime, I should probably figure out dinner for the rest of the week

    Monday – Bsicuits and Gravy
Tuesday – Bean and Cheese Quesadillas
    Wednesday – Chili
Thursday – Thanksgiving! My mom is doing the dinner. I’m making apple pie and these Pumpkin Dinner Rolls from Will Cook for Smiles

Friday – Dad’s birthday. Leftover Thanksgiving and hopefully some cherry Cheesecake
Saturday – Dinner at my parents
Sunday – Dinner at my parents (I love vacation!)

  • 72 hour Emergency – Are you prepared?

72 hour Emergency – Are you prepared?

In the wake of Hurricane Sandy, I wanted to share my thoughts on emergency preparedness. As I continue to get my family prepared for any emergency, I will continue to share what we do here.

    72 Hour Emergency Bags

A couple years ago my parents gifted Mark and I with an emergency essentials bag, stocked with supplies for 2 people for 72 hours. This bag has so many items in it, that could really help when faced with things like, no power, no clean water, no heat.  A lot of things those on the East Coast are currently facing.  Our plan is to have one of these bags for each person in our family.

Here’s a look at what’s in our bag:
    • (2) Mainstay 3600 Emergency Food Rations
    • LED flashlight, (2) snaplights
    • (2) Emergency sleeping bags
    • (6) hand and body warmers
    • emergency whistle and 5-in-1 survival whistle (compass, mirror, waterproof matchbox)
    • (2) ponchos
    • First Aid supplies (include bandaids, neosporin, anti-bacterial wipes, and any medications you take)
    • swiss army pocket knife
    • (2) packs of tissues
    • (6) bottles of water

Try to pack things that won’t need batteries. Things like the snaplights are great. They also sell wind up flashlights and radios. That way you avoid having to pack extra batteries.

A couple weeks ago, my church women’s group took a Saturday to talk about more Emergency Preparedness, and add Food Kits to our 72 Hour Bags. Since we bought in bulk (and I mean BULK) one 72 hour food pack per person, cost only 8 dollars.

This will all fit into 2 Gallon size ziplock bags!  I’ll list the items first, and then give you the 3-day meal plan.

    • 2 juice boxes
    • 2 pkg Ramen noodles
    • 4 pkg beef sticks
    • 3 fruit rolls
    • 27 pieces of candy
    • 2 single serve hot chocolates
    • 1 pudding cup
    • 1 cup of soup
    • 1 pkg nuts
    • 1 pkg cookies

3 Day Menu using this Emergency Food Kit

    Day 1
Breakfast – 2 granola bars, 1 juice box
    Lunch – 1 pkg Ramen
Dinner – 2 pkg beef sticks, 1 fruit roll
snack – 9 pieces of candy

    Day 2
Breakfast – 1 hot chocolate mix, 1 fruit roll

Menu Plan 10/8 Dinner and Snacks

I totally killed my month of no chocolate over the weekend!  I accidentally bought myself some mini rollos. Then I remembered I was going without chocolate, so I stashed them in my nightstand. Well little miss I can find anything that smells like sugar, even if you’ve never hidden it before, found them and opened them! That was it for me. Those rollos were gone before the end of the day. Saturday came, and we were at my parents watching the LDS General Conference. We always have lots of snacks during this weekend. Without thinking once again, I took those sixlets my mom was offering and ate them, plus the chocolate truffles she had in her fridge. Why mom why?!  So Sunday hit, and I decided the weekend was already doomed, so I grabbed the last piece of ice cream cake with chunks of chocolate from my 6year olds birthday, and ate it all to myself (ok I did share with Princess C a little…). I’m back to no chocolate though. I can make it through the rest of the month, if I plan out my desserts ahead of time.
