    Encourage Kids to try new Foods and Giveaway

    Are you all sick of reading advice to get your kids to eat veggies? Tired of the over achieving parents who make amazing lunch creations that their kids love and eat up?

    Honestly I’m not tired of them. I need the advice until I hit on something that will actually jive with my kids. So far we’ve had some small successes here and there, but being consistent about it is so difficult sometimes. You have to keep veggies cut up and in a bowl they can get to, and/or spend time getting real creative with each and every lunch/dinner.

    My kids will eat just about any fruit since most have little prep and they can just grab and eat – apples, bananas, berries – but when we bring out the veggies I get weird looks, and lots and lots of whining.  There was once a time I had a bowl of chopped up broccoli in the fridge that got taste tested periodically because it was easy to grab. As a result some of my kids will now eat broccoli and ask for more.

    I heard about this new DVD Copy-Kids that seemed a little too simple to actually work, but decided we might as well give it a try. I love that it’s separated into chapters so you can pick the fruit or veggie you want your kids to eat, and just play that section of the video. My kids absolutely loved seeing what ages each of the kids in the video were, and comparing them to their own age.

    What I thought was too simple to work, turned out to be a fun show my kids enjoy, and inspiring to them to give new foods a try.  I took some pictures of my kids to give you an idea of how it worked for us.

    I decided we’d start with 1 fruit and 1 vegetable. My hope was that by having something they liked and something they didn’t really care for, we would find a good balance of trying something new. 

    At 7 years old Princess V is past the recommended age for Copy-Kids, but as you can see she still enjoys watching what her sisters do first. 

    Prince L didn’t quite get the idea to watch the show while eating, his only thought was “Mom just put those yummy red things on a plate in the living room…I’m going in!”

     As you can see, our aftermath isn’t what I was hoping for, but if you look closely to the right side of the cucumbers you will notice 2 have been tasted. That is pretty good for my kids! No begging from me to get them to try it, just watching other kids like them eat and enjoy. 

    We’ll for sure be watching it a couple more times with bell peppers and tomatoes – Mine and Mark’s personal favorites.

    I have to admit, I realized that one thing I did wrong when they were younger was not give them as many choices. I stuck to what I thought they would like, and when coming across things like peppers I would *hang my head* say something like “Oo, I don’t know if you’ll like that. But give it a try”. Yep, I should have taken off that preface and just let them try things. Lesson learned.

    I was really excited when Diane announced China for this month’s Food of the World party. It is one cuisine I know my family generally enjoys, and I have a cookbook full of genuine Chinese recipes. 
    You may recall if you’ve been around for a few years, that I had the opportunity to review Feeding The Dragon by Mary Kate and Nate Tate. This brother and sister team took a trip to China and decided to travel the whole country photographing the local, food, and learning traditional ways and recipes to cook the food. It is such a wonderful book if you want to learn more about Chinese culture and food. 

    Shortly after reading the book, and browsing the recipes, I tried my hand at some Sesame Chicken Lettuce Wraps that turned out delicious. I mostly use the recipes and dialogue in this book as a base line, and then substitute with what I have on hand, or what my family prefers (less spice usually). 
    For today’s link party I wanted to make something more traditional for the Chinese New Year Spring Festival – which by the way is apparently in full swing according to my cousin who just traveled through Singapore and caught a kickoff celebration. I digress…so I was trying to find something that the Chinese eat on their New Years, and although I came across a lot of different lists, nothing was sounding too good. I headed back to my cookbook, and decided to make Chicken Spring Rolls. While reading through Mary Kate and Nate’s travelogue, I was pleasantly surprised to find Spring Rolls are traditionally eaten during this festival. YAY! It makes sense once you connect the names “Spring Roll” and “Spring Festival”.  
    I altered the recipe from the book to be a Vegetable Spring Roll, but I used the same methods to cook the filling, and also included similar flavor combinations. I hope you enjoy.  Oh and FYI – I did it again, I chose something that needed to be fried. My mind kept telling me to stop, pick something different, but I pushed forward despite my past failures.

  • Caramelized Pumpkin Cheesecake

    Caramelized Pumpkin Cheesecake

    Caramelized Pumpkin Cheesecake is just what it appear to be! A layer of old fashioned cheesecake, followed by a layer of pumpkin cheesecake, topped off with some brown sugar caramelizing. Family and friends will love it!
     

    Thanksgiving is right around the corner!  Are you so excited?  I am. I just love Thanksgiving. All the food and a day to completely relax with family. I really don’t think there is anything better than that. So, I have had a little fun whipping up some recipes for you to take to your feast.

    This particular cheesecake started out as an idea to combine pecan pie and pumpkin pie into a cheesecake, but it slowly morphed into no pecans and a little caramelizing.

    Caramelized Pumpkin Cheesecake
    Serves 8
    Delicious Cheesecake with a layer of pumpkin and caramelized top

    Crust
    1. 1 pkg graham crackers
    2. 1 TBS sugar
    3. 3 TBS butter
    Filling
    1. 1 1/2 pkg cream cheese
    2. 1/4 cup pumpkin puree
    3. 3/4 cup sugar
    4. 1 egg
    5. 1/4 cup brown sugar
    Instructions
    1. Preheat oven to 350 F.
    2. For the crust, crush the graham crackers.
    3. Min in the sugar.
    4. Cut in the butter until crumbly.
    5. Place in a 9 inch pie plate and bake for 11 minutes.
    6. Mix the cream cheese, sugar, and egg until well blended.
    7. Divide the batter in half.
    8. Add pumpkin puree to one half of the batter.
    9. Pour the cream cheese batter into the crust.
    10. Swirl the pumpkin batter on top.
    11. Bake for 45 minutes
    12. Let the cheesecake cool for at least 2 hours.
    13. Sprinkle brown sugar on top.
    14. Caramelize the sugar with either a butane torch or a few minutes under the broiler.

    The first year I planted a large garden, I wasn’t sure how much I could get to grow. So I planted 6 zucchini plants, and they all grew and produced. We ate zucchini in one form or another every week for the rest of the year. This Double Chocolate Zucchini Bread was one of the good recipes that came from that gardening mistake.     My sister in law had given me her recipe about a month ago, so I was going to use that. It seems to be common though for me to misplace written recipes. I seriously need a better system!  So I started going through my cookbooks, and then thought to myself – it can’t be much different than Banana Bread, right?

    That’s when I pulled out my mom’s Banana Bread recipe and decided to make a few alterations – like adding some cocoa – and created a Double Chocolate Zucchini Bread.

    I love quick breads like this one. They’re pretty easy to change up to your preference without messing it up. Since this recipe makes 2 loaves, I like to garnish the top of one loaf with some chopped walnuts. It adds that extra bit of goodness but leaves one loaf nut free for those friends and family members who prefer it that way.
     
    Double Chocolate Zucchini Bread with Walnuts recipe  
    Double Chocolate Zucchini Bread
    Yields 2
    Add more veggies to your diet with this zucchini bread – just don’t forget the chocolate too!

    Ingredients
    1. 1 1/4 cup Zucchini, shredded – about 1 medium zucchini
    2. 1 1/2 cups Sugar
    3. 1/2 cup Shortening
    4. 4 eggs
    5. 4 TBS Cocoa Powder
    6. 4 Cups Flour
    7. 1 1/2 tsp Baking Soda
    8. 1 tsp Salt
    9. 1 cup Semi-Sweet Chocolate Chips
    10. Chopped Walnuts (optional)
    Instructions
    1. Preheat Oven to 300° F
    2. In a large bowl combine zucchini, sugar, shortening, eggs, and cocoa.
    3. In a small mixing bowl combine flour, baking soda, and salt.
    4. Mix dry ingredients into the wet ingredients. Combine well.
    5. Spray 2 loaf pans with cooking spray.
    6. Separate and spread batter into the pans.
    7. Optional – top with crushed walnuts.
    8. Bake for 60-70 minutes, or until a knife inserted in the center comes out clean.
    Walnuts
    1. Add walnuts to one zucchini loaf and please both nut lovers and non.

  • Dinner time FUN with The Pasta Shoppe

    Dinner Time Fun

    Getting my kids to eat sometimes is like pulling teeth – something we’re becoming quite familiar with lately as well.  One kid might like it, but then everyone else won’t touch it. I even try  hard to have a little something for everyone on the plates.  Dinner time has not been a fun occurrence in our house as we beg, bribe, and demand that our kids eat something relatively healthy.

    One thing I know they will all eat though is Pasta. Lots and lots of pasta. Have you ever read the book More Spaghetti, I Say! ?  Those are my kids, except they never get sick of it…never…  My pasta was boring though…toss it in a pot, add some sauce, done. Same thing every time we eat pasta – only now I’m the one who’d rather have something different, while the kids and Mark are happy.

    Not the greatest photo, but the pasta here is a Spinach Basil Garlic Angel Hair, shaped into little nests. Cutest pasta nests ever with a boost of healthy…the kids didn’t know what hit them.

    Then I found The Pasta Shoppe.  So many goodies, I actually got excited about having pasta again because they gave me the recipe with the pasta, and most come with a seasoning mix as well. Pasta has once again become something everyone will eat, and even I enjoy.

    When our box of goodies arrived, Mark had been pretty sick with a chest cold and what beats a cold better than Chicken Noodle Soup? Luckily for us there was a box of Chicken Noodle Soup mix just waiting for us.

    Mark gave this soup a thumbs up, and even had a second bowl. I loved it as well, while the kids were so so…but mostly because, GASP, I added peas to the soup.  The little chicken pastas were too adorable, I just had to line them up on the side of my bowl.

    I don’t know how it keeps coming up, since I’m not really a football fan, but here I go talking about the BYU and UofU rivalry again. They had their big game a couple weeks ago (same day I got the pasta actually), and so I of course shared this picture on Instagram (I’d love for your to follow me there @adelinapriddis!) and Facebook…

    I thought for a minute I should host a last minute football game for all my friends and family. Instead I decided to hold onto the pastas for another occasion – our church’s Relief Society Broadcast Dinner. I had signed up to bring a salad, and thought a little mix would be fun.

    The Collegiate pasta’s come with 3 recipes, and a vinaigrette dressing mix. It was light, and so good. We had quite the turn out to our dinner, so the only comment I overheard, was from an older lady who loved the bright colors of the blue and red pasta. The bowl was cleaned out when I left.

    We still have a couple more packages to try including ABC, Music, and Halloween shapes.  I can’t wait to use the ABC pasta with Princess R during our school time.

    School Fundraising

    Kid Friendly BBQ with Velveeta Shells and Cheese #CheesyShells

    It’s official! We are moving. We don’t know where to yet, but we’ve signed a contract with another family to rent our house. They want to be in August 1st, which is giving us very little time to find a place and pack and move all our stuff. Things are just crazy here!!  We had been trying to plan a BBQ with friend this summer, but it kept getting put off. With the impending move, I knew I had to squeeze it in somewhere, so I just did it! I called everyone on a Saturday, and we set it up for the following Tuesday. It didn’t give me a whole lot of time to get everything ready the way I would have liked, but I decided good food and good company would be the most important parts of the evening. We sure had both thanks to velveeta shells versatility.

    Kid Friendly Side with #CheesyShells

    Now personally I love pork and beans at a BBQ, but they tend to be thrown out by all the kids and probably some of the adults. Not so with Velveeta Shells and Cheese on the side. Normally I serve them as a lunch meal, but they turned out to be the perfect side at our going away BBQ!  Remember, I didn’t have a ton of time to put this together (heck I went shopping just hours before everyone showed up – see my whole shopping trip on G+).

    Just 10 minutes before friends were showing up, I started boiling a pot of water, and had the shells and cheese cooked just as the part was getting started!  I was so worried they would get cold before we started eating if I did it any sooner. Unlike other brands, I didn’t need to add any milk or butter – just cook the shells and mix in the velveeta cheese.

    It was a good thing I picked up the family sized box because they were gone fast!  Everyone was pretty content though. After we ate the girls went outside to learn cartwheels from my friends oldest child. They all had so much fun doing that. It turns out most of my friends also have a lot of girls, so Mark headed to his corner with the ipad for a little relaxation, while the women chatted it up in front of our swamp cooler (can someone please turn the sun down, it’s too hot!). 
    I’m sure going to miss these gals when we move. We all have different background, but we get along splendidly offering different perspectives to our friendship. Despite my social media prowess, technology is still a thing that goes over my head a lot of the time. I don’t have a fancy smart phone like my friend Z does, and my friend C won’t even create a facebook account!  We were both excited that Z had her phone with her though, as we went on a “let’s make an awesome treat for the kids” pinterest search. 
    See I was planning on using our awesome backyard fireplace to make smore’s , but I hadn’t had time to clean it up.  Z had seen a recipe for oven smore’s, so of course we had to check it out!  They turned out so amazingly good….us women had 2, while only allowing the kids each 1. Hey, there was only so much chocolate to go around!  Z’s kids had never had smore’s before, and I think they liked them. I’ll have to send them a little smore’s package as a “thanks for being our friends!” gift. 

    These truly were so easy, but I still almost messed them up. Add marshmallows to the graham crackers, and broil – watching closely – until the marshmallows get a nice golden brown. Remove from the oven, and add your chocolate. If you want you can top with another graham cracker, but I enjoyed it without a top.
    While they were in the oven, Princess R of course needed to go potty. So glad our friends were there and took over watching the oven for me, or we would have been eating blackened smore’s.

    Family Friendly Restaurants in Sevier Utah

    Are you heading through Utah anytime soon? Maybe you’re driving through to visit Vegas, or all the way to Disneyland, or perhaps you’re coming to Utah for a little summer vacation on one of our many lakes – Fish lake, Bear Lake, The Great Salt Lake.

    When we first moved to little old Salina, UT I was so sad to see the small choices of restaurants. Not that we go out to eat a whole lot, but I love a good dinner date with Mark, and the special occasion outings with the kids. I have been pleasantly surprised that our date nights have not had to be Subway or McDonalds over and over again. In fact, after living here for awhile, I found some hole in the wall type places that have been very good.

    Located just off I-70, and 45 minutes North of Fish Lake you’ll find a variety of family friendly places to eat.
    We’ll begin our tour in Salina, my current home town. Stop by and say hi if you’re driving through!

    • Mom’s Cafe
    Truly the Best Food in Town. Although not five star quality, Mom’s is what it claims to be – home cooking like you’re own mom would set on the table. When Mark and I were looking for a home in the area, we ate here, and enjoyed our food as we people watched Main street…though there weren’t too many people around.  Later I took Princess R out for a Mommy Daughter date when she successfully potty trained. We sat at the long bar and ordered an ice cream sundae topped with a cherry.
    • El Mexicano Restaurante
    If you’re looking for an authentic Mexican restaurant, El Mexicano is the place to go here. Delicious burritos, chimi’s, and perfectly cooked rice and beans on the side. For dessert, try the fried ice cream!  It doesn’t look like much from the outside, but inside it is well taken care of with a friendly staff. The kids love coming here, and so far no one has said anything about our rowdy bunch.
    • The Hot Spot

    The Hot Spot Drive-In is the place to go for malts, milkshakes, and good old hamburgers. Although they also serve salads, burritos, and chicken strips – I really just stick with their malts. For a fun treat I will sometimes take the kids and get the baby cones – the tiniest little cones I’ve ever seen with the perfect amount of soft serve for kids in the car.  If you don’t feel like waiting in the drive through, go ahead and park, and enjoy the tables under some shaded trees.
    If none of these sound like your fare, just head 20 minutes more west on I-70 and check out what Richfield has to offer. A slightly bigger town (with a Walmart!) your food choices here are a little more diverse. 
    • South China Restaurant

    For Princess C’s birthday in February, she requested Chinese. There is another Chinese buffet in town, but we decided to try out The South China Restaurant. With a beautiful interior job, and one of the friendliest waiters I’ve ever had, we really enjoyed our meal here. Princess C was adventurous and tried some Gyoza, but stuck with a chicken pasta for her main meal. The food was delicious. If Chinese cuisine is your craving, definitely try them out. 
    • Little Wonder Cafe
    Although I haven’t had the pleasure yet of dining at the Little Wonder Cafe, local friends have told me it is great. Driving past, it often reminds me of Luke’s Diner in the Gilmore Girls. I’ll have to get over there one of these days before we move. 
    • “Out Ta Lunch” Deli

    You would never know Out Ta Lunch existed unless you are walking by on the street, or someone tells you about them.   I happened across Out Ta Lunch (isn’t that the cleverest name) on my search for some Fenugreek. The local pharmacy didn’t carry it, but told me about the Health Essentials store on Main in Richfield.  Off I went to get my Fenugreek, and what do I find but a cute little deli as well.  Out Ta Lunch is located right inside the Health Essentials store, and as they say serving “nutritious and delicious” food. They would have to I would assume since it is also the health store. You won’t find greasy foods here. 
    Just south of Richfield is Monroe where you’ll find two more places to eat
    • Sagebrush Grill
    At the sagebrush grill, you might want to dress up a little, and leave the kids at home. With an upscale atmosphere, and a not so kid friendly meal, you’ll still enjoy wonderful food in this one of a kind restaurant.  Perhaps for our anniversary I’ll get Mark to take me here.
    If you continue west from Monroe towards I-70 you may want to stop for lunch in Elsinore
    • Mooney’s BARN
    Mooney’s Barn truly will be a unique dining experience as it is actually an Animal Shelter! I’m not trying to lead you astray, don’t worry, because on Friday’s and Saturdays Mooney’s serves lunch!  Where else can you eat lunch and leave with an adopted pet?  From dogs to horses to peacocks, this would be a fun adventure for a kids lunch date.

    Every Child Deserves a Forever Family #FirstFrosty

    I was so excited when The Motherhood asked me to tell you about Wendy’s Fathers Day Frosty Program. What makes a weekend more special with dad, then heading out for some ice cream?  That weekend becomes a little more special when your normal ice cream run also turns into supporting a charitable cause.

    When we received our meals, one of the first things we noticed was the phrase “Every Child Deserves a Forever Family”.  With the purchase of a kids meal, donations are made to the Wendy’s Wonderful Kids program. We hadn’t been to Wendy’s in quite some time, so I was really happy to see a continuous program to help kids get adopted.

    That was just the extra. The real reason we decided to go to Wendy’s is because this Fathers Day Weekend – June 15th-16th – 50cents of every Frosty purchased will be donated to the Dave Thomas Foundation for Adoption benefiting the Wendy’s Wonderful Kids program. I couldn’t think of a better way to enjoy our family time, then helping support a foundation that helps other children get into their forever families.

    We of course had to try one of the new Frosty Waffle Cones, while we were there. It was very yummy, even though I only got a few licks in before this happened….

    Yep, my waffle cone frosty was stolen by my ever adorable (and very allergy congested) 1 year old. He was too cute with it, so I gave in.
