    Meal Plan Monday 11/14

    Last weeks menu fell through the cracks! I just got so busy with other things, and ended up improvising at the last minute most days.  It didn’t help I also forgot some of the ingredients for last weeks menu when I went grocery shopping. Aw well, it happens. This week should be much better!
    Monday – Cheesy Broccoli soup in bread bowls
    Tuesday – Pasta and Aspargus
    Wednesday – Chicken Stir Fry
    Thursday – Eating at my parents: Mark will be on his own
    Friday – Smoky Black bean Chicken wraps
    Saturday – leftovers

    Monday – This one is still up in the air (haha!) It’s either chili, or going out to eat at Chili’s.  They’re having a kids eat free night, plus I have a $10 gift certificate from Savemore.  So we might just be able to afford a family night out!
    Tuesday – Hamburger Helper
    Thursday – Date Night! Kids will have Mac and Cheese
    Friday – Leftovers
    Saturday – Casserole

    Last week was pretty successful with using our food storage. We definitely felt the difference, but I am feeling much more confident to continue it this week.

    Monday – Cheesy Potato Soup with Rolls
    Tuesday – Hamburger Helper
    Wednesday – Beef Enchiladas
    Thursday – Chicken Ramen Noodles Salad
    Friday – Date Night (I purchased a gift card to Chili’s from Savemore for 50% off!!)

    Menu Plan Monday 10/10

    I’m linking up with Organizing Junkie as I plan our menu’s this month!
    We are trying to get on top of our finances, and I noticed our grocery budget had gone up a fair amount the last month. So in order to give us a little more breathing room, this month I’ve decided to eat out of our food storage. Yes we’re those people that like to stockpile on the food. Sadly though our food storage hasn’t always been a large priority either, so it’s a little skimpy. This months meals are going to be innovative, and hopefully tasty!
    I will still buy certain basics, but it should cut our grocery bill at least in half (milk, bread, cheese).
    Monday – Pasta and Breadsticks
    Tuesday – Rice and beans
    Wednesday – Tacos
    Thursday – Food Storage Lasagna
    Friday – Chicken Enchilada Casserole
    Saturday – Leftovers
    The one thing this food storage living is going to make me do is Menu Plan! It will be very hard to try and throw something together last minute out of our food storage. It is going to take some creative thinking
    If anyone has any good Bean recipes, I could sure use them! We have probably close to 100 lbs of dried beans.

    Chicken Cordon Bleu

    I’d have to say this is one of my absolute favorite dishes ever. I could probably live off this goodness. Growing up, we shared a duplex with my Aunt, Uncle and Grandma. Holidays were great because we had so much family under one roof. Every year for New Years, my Aunt would make home made Chicken Cordon Bleu. 

    When I was in high school we moved, and no longer lived near my Aunt. We still had CCB for New Years, but it was the frozen kind. It worked, but just wasn’t the same anymore. So when I got married, a few weeks before New Years I called my Aunt, and got her recipe.  Now 6 years later, I make it more often than just New Years. Tonight for example, it was just what was needed to overcome my evening nausea (and thank goodness it didn’t add to it, or I would’ve been very sad!)

    *Updated 11/2/2013  The picture has been updated. We also decided to try topping it with a fresh avocado, and oh my. You will enjoy!  Also served on top of stuffing, which completely enhanced the flavor of the whole meal.

    Menu Plan Monday 8/15

    I’m back to menu planning. We’ve had some crazy fun this summer, and some interesting dinners. I’m ready for set plans, so that it’s easier for me to have dinner on the table each night. Morning sickness (which happens at night for me) has not helped in the food making process, but Mark has been a trooper! I am very excited about this weeks line up. I may actually feel good enough to eat, just because of these recipes!!
    Monday – Chicken Cordon Bleu, recipe from my Aunt J!
    Tuesday – Hot dogs and burgers with my Sister-in-law and her new boyfriend.
    Wednesday – Chicken scalliopine (ok it was turkey, but I’m making it chicken)
    Thursday – Thai Salmon Filets. I’m hoping the mix of ingredients on this one, will help Mark overlook the Salmon part of it 🙂
    Friday – Chicken Fajitas
    Saturday – Creamy Chicken Salad
    Sunday – Lemon dill chicken popovers (can you say YUM!)
    Also throughout the week we’ll be eating Sesame Onion Braid Bread, and chocolate cream cheese cupcakes.

    It’s the end of the month, so our menu was a little harder to plan this week.  I’m trying to use up what we’ve got left, as well as incorporate our Bountiful Basket from Saturday.  Here’s what I came up with this week!
    Monday – Chicken Breast with Fruit and biscuits
    Wednesday – pasta and home made bread
    Thursday – Sandwiches on home made bread
    Friday – Home Made Pizza
    Saturday – Barbeque

    Wednesday – Chinese Pork Tenderloin
    Thursday – Spaghetti with meatsauce
    Friday – Chili
    Saturday – Church Pizza Party
    Sunday – Roast and potatoes
    Organizing Junkie has asked whether we dish up at the table or buffet style.  We change it up pretty frequently.  My family grew up dishing up at the table, while Mark’s was more buffet style.  There are definitely benefits to both.  Unfortunately we don’t have a very large table, so on days that there are multiple dishes, I usually dish from the counter. If we can fit it all on the table though, that is what we do.
