    Merry Christmas! The kids are finally in bed here, and I’m just waiting for Mr Claus to get here to I can go to bed. It’s been a beautiful day, but the highlight of our Christmas Eve was taking cookies to our neighbors and singing some carols to them with our local LDS Missionaries. It helped remind me of our Savior’s birth again, and got me through the rest of the day solo parenting the kids. We whipped up some pizza for dinner, and I even made tomorrow night’s dinner tonight. We’ll have 16 people over for Christmas dinner, and I am just so excited for the full house!
     
    I am wishing I had had more time to bake this week. You all shared so many delicious looking recipes. So despite Christmas baking being past, these recipes are ones I can still make and enjoy.

    Weekend Bites: A Tribute to Chocolate Chocolate and More

    Welcome to Weekend Bites: Your Weekend Food Party. 
    In Memory of Joan Hayes from Chocolate Chocolate and more

    Today’s party doesn’t feel much like a party to me. I learned yesterday one of my favorite bloggers passed away in her sleep in late October. Joan from Chocolate Chocolate and More, was full of life and lived a philosophy many of us would agree with – that chocolate makes everything better. 

    Years ago when Weekend Bites was known as Foodie Friday, Joan would share her recipes in our link party. I loved browsing to her site, and seeing her delicious recipes stare me in the face. Thanks to Joan’s Canned Lemon Curd, I learned about fruit curd (my prior knowledge was the cheese kind). It sounded so delicious I made some that year and gave it to my Mom for Christmas. Joan inspired me with her love of chocolate, and just seeing her posts on Facebook – screaming Chocolate, whether the recipe had chocolate in it or not, to my eyes – could lift my spirits. 

    Joan left behind 3 children, and so many many friends. While I can’t fully understand the emptiness I’m sure they are feeling, I can imagine it. Joan was smart though. She’s set up Chocolate Chocolate and More to continue to bring a source of joy to others with contributing authors, and advertisements that will still help bring in revenue for her family. 

    Today, in honor of Joan, I ask that you take a moment to browse her recipes.  Then if you have a chocolate recipe, I’d love to see a link up full of Joan’s favorite food (if not, that’s OK. Link up what you’ve got.) In lieu of our regular features today, I’d like to share some of the recipes Joan once shared with our party here.

    I decided to limit sugar this month. I don’t know what I was thinking! Everywhere I turn there’s some sweet baked goods calling my name. This week for example looking through all your recipes. These breads and cakes were just calling to me! I’ll probably try them once a week throughout the rest of the month, because oh yum! Enjoy

    December is probably my favorite month to hang out in the kitchen. Baking goods for my family, and for neighbors. It’s a great way, especially when you move as much as we have, to get to know the neighbors. Make a home baked treat, and do a little Christmas caroling.     I hope you all enjoyed a wonderful Thanksgiving yesterday. Whether spending it with friends and family, or home in the quiet able to reflect on your blessings. I wanted to take a bit today to share a few things I am grateful for. 
    • My family. A husband who works hard. Kids who are my life. And my parents and siblings who really made me who I am today (in a very good way!)
    • This blog. It came at a very pivotal time in my life, and has grown into a business I never imagined or dreamed of having, but has been such a blessing to my life.
    • You guys! If there’s one thing I can count on, it’s my readers. Without you, there’d be no blog! Weekend Bites is by far the best part of my weekend as I get to search your blogs and recipes. 
    • My church. The gospel of Jesus Christ. Scriptures, and prayer. These are key components to who I am, and make me a better person. And by that I mean, each day I strive to be better than the last, because I make many many mistakes in my life. I know I can change each day though!

    I’m skipping the features today, but would love to hear what you are thankful for! Maybe you’ve shared it with a recipe, or you’d just like to let me know in the comments!

    Thanksgiving is 1 week away! It’s probably one of my favorite holidays of the year. Lots of food and surrounded by family and friends – it’s really the perfect holiday for me. It’s not commercialized like most holidays, and I find it to be rather relaxing. Yes there’s a lot of food prep, and if you happen to be hosting, you’re probably scrambling to deep clean everything as well. For arguments sake though, on the actual holiday, it really is just relaxing isn’t it? For those heading to the kitchen to start their prep work, maybe I can give you a little help.     I could probably be crazy, people have said I am at least. But here I am late at night, working, and I got 8 kids to sleep tonight! Alright, 1 is at least still awake, but he’s listening to a book, so I can’t complain too much. I get to be the cool Aunt for the next 3 days (4 if you count this afternoon too). Kids happily all did homework together, practiced some piano, and learned a little music theory from their cool Uncle. Now if you’ve ever tried to get 8 kids to bed on a school night…well even if you haven’t, I’m sure you can imagine! Success was had though! Tomorrow I’ve promised a make your own pizza night with a movie – we’ll probably watch The LEGO movie so I can feel AWESOME!

    In other news – Check you all out! I was a little worried after missing a week you might all forget about this fun link party, but you proved me wrong, and shared some fantastic looking recipes. This week I’ve decided to feature Chicken dishes, because it’s been on sale lately, and my freezer is well stocked in poultry. I hope you enjoy these features as much as I plan to.

    I’m sitting here feeling a chill run through my bones. The kind that once again has me debating turning on the heat. Fall has officially arrived, and our nights and mornings are pretty cool, but midday still gets up in the 70’s. Until it drops to lower 60’s I just don’t think I can bring myself to turn up that heat. So until then, you can probably find me curled under some quilts my grandma made, with a pot of soup cooking on the stove.

    I personally love a good broccoli cheese soup, followed by tomato and chili. My kids love any soup as long as bread is served along the side for some dipping. To comply with their tastes I picked up some more yeast this week, and will be busy baking our own bread again.
