    It’s Friday, and that means Pizza Night around here. You all know how sick of regular old pizza I get though, right? I know you do because I keep sharing ways to change it up with you. We made our own Calzones earlier this week. The kids were skeptic of this “Pizza in a sandwich” idea I presented, but after only one night this has been added to our list of family favorites. 
     
    Speaking of family favorites, we picked up Heinz Classico Family Favorites line from Walmart to create these Calzones because I knew there would be a favorite for everyone in the family. Princess C was especially happy to find her Traditional Sauce.

    The majority of the family however prefers the meat sauce. Princess V especially loves her meat and meat sauce. After spreading the sauce around (oops, don’t spread your sauce!), she just had to stick her fingers in it for a little more taste.

    I love having the kids in the kitchen with me, but sometimes I make really complicated meals, and it’s just too hard to have them underfoot. The calzones are so incredibly easy though the kids had a blast, and we didn’t spill any sauce on the table! Which is impressive with Princess R and her “I can do it myself” attitude.

    Calzones
    Let everyone stuff their own Calzones with their favorite sauces

    Ingredients
    1. Classico Family Favorites Sauce
    2. Crescent Roll dough
    3. Shredded Cheese – we used a mix of Mexican blend and Italian blend
    4. Pepperoni
    5. Sausage
    Instructions
    1. Preheat the oven to 350 F.
    2. Leave the dough in a roll, and split it into fourths. We used 3 tubes of dough for our 6 family members.
    3. Form the dough into a ball and roll out flat. Top one side with sauce, toppings and cheese. Fold in half and pinch the sides together.
    4. Place on baking sheet, and bake for 15 minutes, or until the bread is a golden brown. Remove from the oven and let cool 2-3 minutes before eating.
    5. The inside will be extremely hot!

    Savory or Sweet? Sweet or Savory? That is the question of the day! School is starting back up, and along with better bag lunches I’m also trying to come up with more after school snacks for the kids. We did a lot of cookies last year, that *gasp* they became a bit boring. Plus, I didn’t really care for the amount of time it took to make them. So what’s a mom to do? Pull out some old childhood favorites of course!
    OK, I actually turned to Mark for this one. He LOVES Bagel Bites and Delimex, and recalls them as a staple to his after school routine. I loved it! What better way to get dad and the kids connecting more than with easy to make snacks?  I’m one year into this mom of school kids thing, and if I learned anything last year, it’s that the kids can’t focus on homework until they’ve had something good to eat. It also provides the perfect setting for catching up on their day.

    So what do I have for you? Two after school snacks your kids are going to love, whether they have a hankering for something sweet or savory, these will hit the spot! Bagel Bites with their real cheese, homemade sauce and 0g of trans fat make a great savory snack, while Delimex Fruit Apple Cinnamon Taquitos will please any sweet tooth. 
    I just love serving up food that the kids and adults can all enjoy! Instead of just heating up the Bagel Bites, I knew we could make them just a tad more fun, and filling for these growing bodies. After talking to Mark, we came up with this recipes for Pull Apart Bagel Bites. We really love the fun pull apart bread creates, and knew the kids would too.     Pull Apart Bagel Bites
    from Home Maid Simple

    Ingredients
    Frozen dinner rolls
    Bagel Bites
    Italian 3 cheese blend
    Crisco

    Directions
    1. Lightly grease the inside of a muffin tin with Crisco. 
    2. Place frozen bread dough in a bowl and let thaw and rise. Tear off pieces into 1/2-1 inch balls. Make a layer inside muffin tins (I used a mini cheesecake pan).

    3. Sprinkle in some cheese, top with a Bagel Bite, add another layer of dough and cheese. Let rise.

    4. Preheat oven to 350 F. Bake for 15 minutes. Cool on a wire rack.

    If you want it more family share style, skip the muffin tin and use a round cake pan. The extra room allows you to cut the Bagel Bites into 4ths and wrap inside the dough balls. Toss some more on top before baking, but bake the same as the muffins.

    My handsome date this week was Prince L. I left the Princesses inside with a show and he and I took to the back patio. It’s something I am looking forward to more of when school starts again. 
    Kefir Fruit Salad and Pomegranate Kefir 8 grain muffins were the perfect compliment for our bonding time – yummy flavors packed full of probiotics from the Lifeway Kefir. Little Prince, I kid you not, eats more than any of my other kids combined, so a brunch just made sense for us.

    Pomegranate Kefir 8 Grain Muffins
    From Home Maid Simple
    Ingredients
    1 egg
    1/2 cup sugar
    1/3 cup margarine or butter
    1 cup All Purpose Flour
    1 tsp salt
    1 tsp Baking Powder
    1 tsp Baking Soda
    1 cup 8 grain cereal (I used Bob’s Red Mill)
    1 1/4 cup Lifeway Pomegranate Kefir*
    Directions
    Mix cereal and Kefir, and let it sit for 10 minutes. Preheat oven to 400F. 
    Cream the egg, sugar, and margarine together. Add dry ingredients to the egg mixture. Add Kefir/cereal and mix well. 
    Grease a muffin tin, or use cupcake liners, and fill 3/4 full with mixture. Bake 15 minutes. 
    *There are SO many different flavors of Lifeway Kefir. If you don’t like Pomegranate try another one.

    Kefir Fruit Salad
    From Home Maid Simple
    Ingredients
    1 Red D’anjou Pear, chopped
    1 Granny Smith Apple, chopped
    1 cup sliced Strawberries
    1/2 cup sliced Bing Cherries
    1 Banana sliced
    3/4 cup Lifeway Kefir, Plain*
    1 TBS Peach Honey
    Directions
    Slice all the fruit, and mix together. Mix Kefir and honey. Drizzle over the fruit. Refrigerate for an hour or two, or even overnight. Serve with Kefir Fruit Salad.
    *If you can find the Lifeway Honey-Fig Kefir, I would suggest giving that a try and omitting the Peach Honey. Sadly my stores didn’t carry that flavor, so I improvised for the flavor I wanted.

    When Princess V was just a little toddler, she loved Banana’s. I was at the bookstore, when I came across this book – Daddy’s Girl by Garrison Keillor

     
     
    It’s all about this Dad and his little girl and the adventures they have throughout life. One section is called B-a-n-a-n-a-s. It lists a bunch of foods she’ll eat, but at the end she’s still asking for bananas. Well one of the foods listed is Souvlaki. I’ve always wondered what it was, and had this goal – yes from reading a board book – to try out Souvlaki. 
     
    As I was researching Greek food, there is was again – Souvlaki. I knew it was time to give it a try. Guys, I can’t believe I didn’t do this sooner!! It’s full of flavor, and OH SO EASY!  Normally it is served with Tzatziki which is a cucmber yogurt. I didn’t have all the ingredients for it when I started, so you’ll notice I just used yogurt and cucumbers on mine. I have big plans this month though revolving around Greek food – tzatziki, hummus, and homemade pita to give you an idea.  
     
    Souvlaki Pita

    Ingredients
    1. Pita Bread
    2. Plain Yogurt
    3. Cucumber, chopped
    4. Red Pepper, sliced
    5. Boneless Pork Ribs
    6. Red Onion, sliced
    7. Feta
    8. salt and pepper
    Instructions
    1. Skewer the meat and peppers.
    2. Season with salt and pepper to taste.
    3. Grill until done.
    4. Spread some yogurt onto the Pita Bread.
    5. Top with cucumbers, pork, onion, and feta.
    Notes
    1. There are no amounts, because it’s based on you! This is easily adaptable for 1 to 10+.

    Food of the World: Asparagus Flan

    Ever wonder why French Women don’t get fat? In the book by just such a name, I learned to make this Asparagus Flan that is divine. Try it out, then check out the book.
     
    Earlier this year I read a book called French Women Don’t Get Fat. It was really quite an interesting read, and not what I expected at all. The author Mireille Guiliano, takes a practical approach to food, based on her families French culture and traditions. Throughout the book, Mireille includes different recipes and sometimes a story from her childhood to go with it.
     
    I chose to cook up the Asparagus Flan because we had just received a bundle of asparagus in our weekly produce delivery. My mom also recently stalked our fridge with eggs, fresh from her chickens. If you can get a hold of them, I promise you, farm fresh eggs are indeed better than store bought. 
     
    The Asparagus Flan sounded like a wonderful way to use both the asparagus and eggs while getting the kids to eat some veggies without too much complaint. Mireille has you peel the asparagus, which is something I’ve never done, but it made the veggie much easier to eat. I felt it also gave the texture a nice little boost then if they hadn’t been peeled.

    Ingredients
    1. 16 stalks Asparagus
    2. 4 Apple Smoked Bacon slices
    3. 8 eggs
    4. 2 cups milk
    5. 1 cup Heavy Whipping Cream
    6. salt and pepper to taste
    7. 1 TBS fresh Parsley, chopped
    Instructions
    1. Preheat oven to 350 F.
    2. Remove the tough ends of the asparagus and peel them. Cut into 1 inch pieces.
    3. Boil asparagus in slightly salted water for about 5 minutes. Set aside to cool.
    4. Chop the bacon into small pieces, and saute.
    5. Drain the asparagus and dry the grease off the bacon.
    6. In a large bowl, combine eggs, milk, cream, salt and pepper, and parsley.
    7. Pour into a deep dish pie pan.
    8. Sprinkle the asparagus and bacon over the egg mixture.
    9. Bake for 30 minutes, or until cooked through.
    10. Serve with French bread.

    I love strawberry season! Those fresh plump red berries call my name every spring. I find they pair perfectly with these cheesecake filled shortcakes.
    I was so excited when I learned The Daily Meal and Driscoll’s berries were holding a Strawberry Shortcake contest. I remember as a kid going to the pick your own strawberry patch, and just loading up on strawberries and wishing I could stay there forever – or at least all day.  Now I take my kids to our local pick your own patch to fill baskets of their own. They even encourage the kids to taste some berries while picking. 
     
    The crumbly shortcake makes a perfect base for the no-bake cheesecake filling. Topped with a bright red berry they go from being delicious to taste but also to the eye.  
     
    When I first heard about the contest from Driscoll’s and The Daily Meal my mind kept jumping to cheesecake. I don’t know why, but a nice pink cheesecake from fresh strawberries sounded so delightful. I debated making a shortcake crust but finally chose to make the cheesecake compliment the shortcake. I hope you enjoy these!
     
    Strawberry Cheesecake Shortcake
    A delicious shortcake holds this Strawberry Cheesecake in place for a feast of the tastebuds and eyes.

    Shortcake
    1. 2 cups All Purpose Flour
    2. 1/4 cups Sugar
    3. 1 TBS Baking Powder
    4. 1 tsp Baking Soda
    5. 1/4 tsp salt
    6. 1/2 cup Shortening
    7. 1/2 cup Buttermilk
    8. 1 tsp McCormick Valencia Orange Peel
    9. 2 eggs – 1 whole, 1 divided
    Cheesecake
    1. 1 cup finely chopped Driscoll Strawberries
    2. 4oz cream cheese, at room temperature
    3. 1/2 can sweetened condensed milk
    4. Juice from 1/2 a lemon
    5. 1/2 tsp Almond Extract
    6. Whole Strawberries for garnish
    Instructions
    1. Preheat oven to 450
    2. Combine flour, sugar, baking powder, baking soda, and salt in a medium bowl.
    3. Cut in the shortening, until well combined.
    4. Add the buttermilk, orange peel, 1 whole egg, and 1 egg yolk. Mix until well combined.
    5. Split the batter between 6 mini cheesecake wells.
    6. Beat the remaining egg white, and brush the tops of the batter. Bake for 10 minutes, or until golden brown on top.
    7. Remove from pan and set aside to cool.
    8. Using a mixer, combine cream cheese, milk, lemon juice, and almond extract until smooth.
    9. Stir in cut Strawberries.
    10. Cover and refrigerate for 1-2 hours.
    11. Once the shortcake is cooled, scoop out the centers. Set aside the crumbs for garnishing.
    12. Fill the shortcake with 2-3 TBS of Strawberry Cheesecake Filling.
    13. Refrigerate until ready to serve. Or for a more stiff filling and cool treat, freeze for 30 minutes.
    14. Before serving, top each shortcake with a whole strawberry and crumble the extra shortcake across the top.

    Cool down this summer with Strawberry Mango Popsicles. Without added sweetener they are a treat both kids and Mom adore.
     
    Mmm, Summer is almost here, can you feel it? This week is my birthday, so I decided to do a little bit more of what I want to do and a little less of what I need to do. It’s a little present to myself. 
     
    It pretty much all involves cooking of some sort or another, and a little home organizing. What can I say, those are the things that really make up what I enjoy doing. Though I’d rather organize someone else’s home, mine really needs it with the end of school year papers that need sorted and stored (the special ones only). I’ve got piles of items to take to the thrift store, and an idea for rearranging my whole bedroom. 

     
    I’ve been seeing popsicles popping up around my foodie friends blogs, but these Double Berry Popsicles from The Grant Life, really made up my mind I needed to make some.  So I did. 
     
    Strawberry Mango Popsicles
    Mango, Strawberry and a little sweetener if you like whip up to make these perfect summertime treats

    Ingredients
    1. 1 mango, cut into chunks
    2. 1 cup plain yogurt
    3. 3 strawberries, quartered
    4. 1/2 cup Welch’s Strawberry Breeze
    Instructions
    1. Begin by blending the mango alone on a low speed.
    2. Once it is finely chopped, add the yogurt and puree – I use my smoothie button on my blender.
    3. When you can no longer see chunks of mango, add the strawberries and juice.
    4. Blend until smooth.
    5. Pour the mix into popsicle molds, and freeze overnight.
    6. Pass out to the kid and win best mom ever award.

    There are a bit on the tart side, but I really wanted to avoid any extra sugars. If you prefer them more sweet, you can try adding a little honey. My kids devoured them without, though, and for my kids that’s a big deal!

    I’m so excited today! I got a package from my dear mother in law, who is currently living in Japan. I got an email one day asking if there was anything we’d like, along with some pictures of some purses she had found and wanted to know if I would like one. So I responded telling her I’d love anything to enhance my food photography. Thinking she might send me a cute little plate or bowl. I was NOT expecting the large package that arrived on my doorstep today – Check out the dishes on Instagram. My current first world problem is I have nowhere to place all these lovely dishes. I think a china cabinet is now needed. 
    This weeks Feature is:
    I haven’t spend a whole lot of time on Erica’s blog before, but last week she shared a Zucchini, Black Bean and Corn Taco’s recipe that caught my eye. I  happened to have a fresh zucchini on hand, and everything else is a staple in this house, except the Feta cheese. Wow, just wow! Please check it out and give it a go. My kids cleaned their plates with minimal complaints, and some even had 2nd and 3rds!!

    We love Mexican Food around here. Tacos, burritos, chimis – they’re pretty regular fare for us. One year Mark even gave me Mexican Family Favorites Cook Book by Maria Teresa Bermudez for Christmas with a request I make something from it frequently. I’ve not been very good at actually using the book, so I decided to take this month’s theme to try something new. 
     
    Looking through the book I had a hard time deciding. I finally had it pinned down to trying Mexican Cheese Souffle and Pan Dulce. Unfortunately I can’t find Pimiento’s at any store around here! So the souffle was out. Pan Dulce looked perfect for a weekend snack with the kids. I have to admit though, after looking up some other Pan Dulce recipes online, I realized most have some colored top on them, while the recipe from this book does not. In fact, the recipe I used from my book tastes pretty similar to a regular sweet roll, just rolled up differently. I did make one minor change only because I didn’t have any ground anise, I’m sure the anise flavor would have given it that authentic flavor we seemed to be missing in ours. 
     
    Pan Dulce or Mexican Sweet Rolls
     
    Pan Dulce or Mexican Sweet Rolls

    For the dough
    1. 1 3/4 cup flour
    2. 1 1/8 tsp active dry yeast
    3. 1/4 tsp ground anise seed
    4. 1/8 tsp ground Cinnamon
    5. 1/2 cup Milk
    6. 2 TBS brown sugar
    7. 1 TBS sugar
    8. 2 TBS Shortening
    9. 1/2 tsp salt
    10. 1 TBS Corn Syrup
    11. 1 egg, beaten
    Filling
    1. 1/3 cup Flour
    2. 1/4 cup Brown Sugar
    3. 1 TBS sugar
    4. 1/8 cup butter
    5. 1 egg yolk
    6. 1/8 tsp vanilla
    7. dash of Cinnamon
    Instructions
    1. Combine 1 cup flour, yeast, anise and cinnamon in a mixing bowl.
    2. In a saucepan, heat milk.
    3. Add sugars and shortening to the milk. Continue stirring over medium heat until the shortening melts.
    4. Add salt and mix until sugars are dissolved completely.
    5. Combine the milk mixture with flour mixture, plus the 3/4 cups flour.
    6. Add corn syrup and egg. Mix well.
    7. Form dough into a ball. On a lightly floured surface knead dough (or use a stand mixer with dough hook), until smooth and elastic.
    8. Cover and let sit for 1 hour, 15 minutes.
    9. Turn the dough once during this time.
    10. In the meantime, cream the flour, sugars and butter for the filling.
    11. Add egg yolk, vanilla and cinnamon.
    12. When the dough is ready, knead lightly in hands, and separate into 8 balls.
    13. Preheat oven to 375 F.
    14. Flatten the balls out to 6 inch circles.
    15. Spread 1 TBS (approx.) of the filling over the dough circle.
    16. Roll up like a burrito

    Rolling the bread was the hardest part to figure out. Maybe it makes sense and I’m trying to make it difficult, but I tried a couple different folds. A couple we folded straight in half and pinched the edges together. Some I just rolled, like a taquito, and others I rolled more like a burrito with the ends folded in. I don’t think the folds matter, they all tasted great. I enjoyed how easy the burrito looking rolls were to hold.

    Hopefully you’ve been reading this blog long enough to know that we love sausage recipes, and we love skillet meals. The one pan toss everything in easy clean up is my favorite meal, and it also serves up enough variety to fit every food group, as well as every taste bud in our house. 
    With the warmer weather we’ve finally been experiencing (OK, minus today – who said it could snow in Utah at the end of April??), I’ve really been thinking about heading out to our grill. I’m no grill master by any means, but Mark’s mom sent us a new one for Christmas this year, and people…it’s BLUE!

    Right, so colors normally wouldn’t have changed how I used something, but this pretty blue grill has been calling to me… or maybe it’s been my slowly growing expertise in cooking? I don’t know. I do know though, that I had this brilliant idea to make our normal skillet meal out on the grill this weekend and try some new Hillshire Farm Sausages as well.

    I found the Hillshire Farm American Craft Sausages at Walmart. So many different flavors to choose from! We went with the garlic and onion for the kids, and Jalapeno Cheddar for the adults – which is turning into just me. How did I not know Mark doesn’t like Jalapenos? I’m pretty sure I have a selective memory at times – good thing he still loves my cooking.

    Back to the Skillet Meal on the grill. Doesn’t this just look so yummy? I tossed a sliced sweet potato, quartered yellow onion, and corn in some olive oil, and then tossed them on the grill. I followed Our Best Bites directions for grilling corn (it’s ah-maze-ing!), and kept an eye on the onions and potatoes to keep them from burning or drying out. 
    Once the Veggies were done I pulled them off the grill, and tossed on the sausage and some pineapple strips to make a nice side. Since neither of these take very long to grill up I chose to do them last.

    While the sausage and pineapple cooked up, I shut the grill lid to keep it warm, and turned my attention back to the veggies. The sweet potatoes and onion got sliced up to bite sized pieces, and I cut the corn off 2 of the cobs. Princess C loves corn on the cob, so I left one alone just for her. The veggies got tossed together in a bowl, and by that time the sausage and pineapple were hot and ready!

    It was time to see if my idea of a skillet meal on the grill would turn out. Cutting the grilled sweet potatoes was a bit more difficult then a normal skillet meal, but I think it totally worked flavor wise! I knew the kids wouldn’t eat any of it if I put the veggies on their sausage, but separate, everyone got what they loved, and still had a delicious meal. The garlic and onion variety really gave a nice flavoring that I would normally add to our skillets.

    Next time I think I’ll take an actual skillet out to the grill with me for the potatoes and onions, but the corn for sure is going to stay on the cob to grill up. There was just so much yummy flavor here!  
    PLUS, the potato and corn hash makes another wonderful skillet meal the next night!
