    I am at that point where I don’t want to cook. I want to spend all my time outdoors with the kids while we still have this sunshine. Maybe it’s the extra sun in the evening, or maybe I am in desperate need of a mental break – more likely it’s both. I have had a crazy whirlwind of a week too. The blessings have been pouring in with extra work for myself, and an unexpected morning with Mark – but those also usually come with a few extra stressors. I’ve returned to one of my former bad habits, and in an effort to push myself decided to try and take a 6 week course in 2 weeks. It’s crazy over here ya’ll!
     
    When I started to browse your recipes through the week, my eyes continued to land on these little bites. They were all something I could whip up, and snack on as needed throughout the afternoon. Of course, I knew the kids wouldn’t quite enjoy the same finger foods as me, but you all never disappoint, and I found something they would enjoy that was comparable to the snacks I want to make myself!

    We started with a drink. Sprite is our families favorite choice of drink, and we recalled that the Invisible Man always seems to be holding one drink or another. So I printed out some Glasses, and used photo adhesives to attach them to the Sprite caps.

    Aren’t those just a blast? I can’t take full credit for this idea though. It was all the kids. I think their new favorite thing to do is walk through the store with me coming up with movie night ideas. 

    I knew movie night would probably be around the same time as dinner, so we can all get to bed at a decent hour (especially on a school night like today!), so I wrapped hot dogs in crescent roll dough and baked up a Mummy dinner. Classic, but fits in perfectly with the Hotel Transylvania 2 theme. 

    The star of the show however, and our snacks is Dracula! “Blah blah blah”. In the movie Drac takes his grandson to a Vampire camp to inspire him to be more vampire. I can’t help but think S’mores and Popcorn when I see camping. Being the middle of winter though, we had to do some improvising. Orville Redenbacher’s Movie Theater popcorn is our families favorite with the perfect amount of butter. Add in some toasted marshmallows, and chocolate and you’ve got a S’mores popcorn treat. I wanted this to be all about the Drac though, so we sorted out some red M&M’S® chocolate candies to mix in, and give a little hint of the Drac’s favorite meal.

    Ingredients
    1. 2 bags Orville Redenbacher’s Movie Theater Popcorn
    2. Jumbo Marshmallows
    3. Red M&M’S chocolate candies
    4. 1-2 TBS butter
    Instructions
    1. Pop the popcorn in your microwave. Careful to follow directions so as not to burn it.
    2. Pour out into a large serving dish, and set aside.
    3. Preheat oven to 450 F.
    4. Place butter in an oven safe pan, and place inside the preheating oven.
    5. Cut marshmallows in half lengthwise.
    6. Place inside the preheated, buttered pan.
    7. Place pan back in the oven for about 5-7 minutes. Keep a close eye on them.
    8. Once they start browning, pull them out.
    9. Pour toasted marshmallows on top of the popcorn.
    10. Sprinkle with M&M’S® and let cool.
    11. Once cool, serve and enjoy your movie!

    See I’ve been thinking a lot lately about how I wish I was more like my mom. She was always so patient, and happy, and only once do I ever remember her raising her voice at us. I found myself raising my voice much more at the kids, and being less patient than I’d like to be, and use to be (see what I mean here

    This was so easy to make! A scrap of soft fabric, a plastic baggie, some rice, and ribbon is all you need. My mom in law sent me these cute clothespin girls, but the clothespins broke off with the kids playing with them, so a little bit of super glue, and now I can relax in style.

    The Best 7-Layer Bean Dip

    I have a confession to make – I’m a closet football fan. I don’t go out of my way to watch any games, or really pay attention to who’s being drafter where – and I don’t care if you drop by during a game. BUT I get a tad excited for game day. I like seeing other people excited, and sharing good food with them. Even more, I love going to live games, or actually getting out and playing a game or two myself (though it’s been many years since I’ve done that).

    My heart will probably always belong to the New England teams, even though I have now lived the majority of my life in the west. I will always root for the Patriots, and the Red Sox. They’re my teams. While I was prepping for this post I began to browse LTD Commodities, and found the perfect game day entertaining pieces – condiment jars, football platter and dishes, even a Patriot’s branded bowl!

    I like to keep things simple, so even Game Day doesn’t get too crazy. Just some home made hot dog buns, paper plates, chips, and of course 7 layer Bean Dip! This stuff is my favorite to share at parties! It’s quick, easy and the perfect chip dip!

    7 Layer Bean Dip

    Ingredients *amounts are all based on individual preference
    1 can Refried Beans
    Shredded Cheedar
    Salsa
    Sour Cream
    Lettuce, shredded
    Tomatoes, chopped
    Tortilla chips
    Directions
    In a 9×9 pan spread the refried beans (double if you use a larger pan). Top with shredded cheese. Microwave for 1 minute. Let rest for 1 minute. Microwave for another minute. 
    Top with a layer of salsa, sour cream, lettuce and tomatoes. Serve with the seventh layer – Tortilla chips!
    This dip can be served warm, or cooled – making it the perfect game day treat. Whether you’re watching from home, or headed out tailgating.

    Fancy Pudding Cups for New Years Eve

    Pudding cups make for a fancy but simple treat for any party. Use whatever you have on hand to make a flavorful treat your family will love. 
     
     
    While I was menu planning last week (oh yeah! I actually planned a menu!), I came across a recipe for these Strawberry-Orange phyllo cups. They were filled with oranges and strawberries, and a yogurt dressing. Although it sounded and looked nice, I went with what I already had on hand – pudding and frozen berries!
     
    Since New Years Eve is upon us, I thought it would be fun to dress them up a bit with some piped almond bark. The kids and I loved them, and there was a little something for each of them – almond bark for one, pudding for another, and berries for the third. I of course enjoyed the whole thing.

    phyllo dough cooked in muffin tins make for the perfect pudding cup.

    Ingredients
    1. Phyllo Dough
    2. cooking spray
    3. pudding
    4. Pomegranate arils
    5. blueberries
    6. almond bark
    Instructions
    1. Preheat oven to 350 F
    2. Thaw phyllo dough according to directions on package. Place 2 phyllo dough sheets on top of each other. cut in half lengthwise and width wise, creating 4 rectangles. Coat the top with cooking spray.
    3. Gently press one stack of phyllo dough into pan. I used a mini cheesecake pan, but a muffin tin, or custard cups would also work. Gently press a 2nd stack of the dough across the first stack. Repeat steps 1-3 for each cup you want to make.
    4. Bake for 10 minutes. Remove from oven and let cool on a wire rack. Very gently remove the phyllo cups from pan.
    5. Spoon pudding into the cups, top with berries and almond bark designs.
    For the Almond Bark decor
    1. Melt your almond bark for 30seconds in the microwave. Stir and repeat, until bark is melted and smooth.
    2. Pour into a piping bag, fitted with smallest tip you have – I used a Wilton 4 tip. Be careful because the bark is hot, and will also easily pour out the tip.
    3. Carefully pipe designs onto a sheet of wax paper. As I found out, most will end up cracking if you don’t use the wax paper, and it’s just easier to get them off wax.

    Guess what?! I passed my first class! After 8 years of not taking any formal classes, when my first final came up, I was beyond nervous. One of the wonderful things about going to school at WGU, is that it’s all online, including my tests.

    The tests are proctored by webcam, but I still get to schedule it to fit into my time. So to make sure I had a completely distraction free zone, I scheduled my test for 10:30pm. The kids would be sleeping, and Mark would be home just in case they woke up.

    The problem I ran into, was staying awake. You guys, I seriously almost fell asleep mid test! Not cool. But it turned out OK, because I passed! YAY, one class down, many more to go.

    Seeing as how I do most of my studying at night, and will probably take my tests then as well – I really needed a way to stay awake. So I’ve been snacking a ton. I’ve tried hard to avoid eating past 9, but if I’m going to go to school, then I need the energy. Instead of turning to chocolate, ice cream, and candy – I’m trying to be a little more healthy with my snacks.

    This parfait you guys! So yummy!  I got a bunch of Lola Granola bars, but found the honey in it to be a bit overpowering. There’s so much goodness in them though, with honey as the only sweetener, they are also gluten free, and non GMO. I decided to try toning down the honey a bit though in a parfait, and it was perfect. However, if you really like honey, you’ll enjoy these bars just plain.

    Layer the yogurt, crumbled granola bar, and pomegranate arils. Enjoy. The Ruby Lola bar has the perfect blend with cranberries and almonds that really adds to this parfait.

    Probably my absolute favorite way to spend a chilly fall day is curled up by a fire, with a cup of hot cider, a plate of cookies within reach, and a good book. In order to get this ideal scene though I’ve got to do a little bit of work. I WISH I could go to an apple orchard and pick my own apples, but as far as I’ve been able to find, there aren’t any near me – for that matter I don’t see any in the whole state. So since I can’t get my apples fresh off the tree personally, I do the next best thing – I grab some apple products from Walmart.

    Quick Apple Cider
    Easy apple cider.

    1. 64oz Motts Apple Juice
    2. 1 tsp ground cinnamon
    3. 15 whole Allspice
    4. 1/2 tsp grated lemon peel
    5. 1/2 tsp grated orange peel
    Instructions
    1. Combine all the ingredients in a large pot.
    2. Bring to a boil.
    3. Serve warm with Candy Apple Cookies!

    1. 2 3/4 All Purpose Flour
    2. 1 1/2 cups packed light brown sugar
    3. 1 tsp Sea Salt
    4. 1/2 tsp baking soda
    5. 3/4 cup Motts Natural Apple Sauce
    6. 1/2 cup shortening
    7. 2 eggs
    8. 1 tsp apple pie spice
    9. 1 cup Candy Apple M&Ms
    10. Caramel
    11. 1/2 cup Peanut Butter M&Ms, crushed
    Instructions
    1. Preheat oven to 375 F
    2. Combine flour, sugar, salt, baking soda, apple sauce, shortening, eggs, and spice.
    3. Mix well and fold in the Candy Apple M&M’s.
    4. Drop by Tablespoon onto ungreased cookie sheet.
    5. Bake for 10-12 minutes.
    6. Cool completely.
    7. Meanwhile, soften up the caramel sauce and crush the peanut butter M&M’s.
    8. Dip half of each cookie in the caramel, and roll through the crushed M&M’s.

    Oh these cookies and cider were so good. The kids especially thought it was fun dipping cookies into caramel. It adds a fun little mix to regular old cookies, and they are packed full of fall flavors.

     
    I can’t let the school kids miss out too much though, so I picked up some small juice drinks to pack in their lunches as well. Got to get them enjoying the new season as well.

School is starting back up, and along with better bag lunches I’m also trying to come up with more after school snacks for the kids. We did a lot of cookies last year, that *gasp* they became a bit boring. Plus, I didn’t really care for the amount of time it took to make them. So what’s a mom to do? Pull out some old childhood favorites of course!
    OK, I actually turned to Mark for this one. He LOVES Bagel Bites and Delimex, and recalls them as a staple to his after school routine. I loved it! What better way to get dad and the kids connecting more than with easy to make snacks?  I’m one year into this mom of school kids thing, and if I learned anything last year, it’s that the kids can’t focus on homework until they’ve had something good to eat. It also provides the perfect setting for catching up on their day.

    Pull Apart Bagel Bites

    Ingredients
    Frozen dinner rolls
    Bagel Bites
    Italian 3 cheese blend
    Crisco

    Directions
    1. Lightly grease the inside of a muffin tin with Crisco. 
    2. Place frozen bread dough in a bowl and let thaw and rise. Tear off pieces into 1/2-1 inch balls. Make a layer inside muffin tins (I used a mini cheesecake pan).

    3. Sprinkle in some cheese, top with a Bagel Bite, add another layer of dough and cheese. Let rise.

    4. Preheat oven to 350 F. Bake for 15 minutes. Cool on a wire rack.

    If you want it more family share style, skip the muffin tin and use a round cake pan. The extra room allows you to cut the Bagel Bites into 4ths and wrap inside the dough balls. Toss some more on top before baking, but bake the same as the muffins.

    Great for late summer nights! Summer is when the days are a bit longer, we allow our kids a tad more freedom and flexibility with bedtimes, and spend a lot of time outdoors. I’m sure you all enjoyed a fun 4th of July, but man those fireworks are late at night. How did you keep your kids happy while waiting? We enjoyed some sparklers, and Froot Loops. It’s a great cereal the kids can eat with their fingers, no milk needed, and it gives them a bit more energy to run off before dropping sometime before midnight. 
    In Utah we’ve got Pioneer Day coming up with more Fireworks, but for the rest of you, this would also be great when you’re out camping, and you get back to the campsite late from a day of adventure. The kids don’t want to wait for a fire to cook a meal, and you may not want to either, so pour a bowl of Kellogg’s and then do some stargazing!

    This one is for the Moms and Dads. The kids are in bed, after a long protest because it’s still light out. You’ve given in the whole week, but you finally need everyone to get a decent nights sleep. So you’re not budging. Now that they are peacefully nodding, you can indulge with that chocolate stash and Kellogg’s. 
    Mark loves, I mean seriously loves to pour himself a huge bowl of cereal and milk after we’ve put the kiddos to bed. I prefer my late night snacking dry, but with a little extra. I can’t remember a time I didn’t love Tony the Tiger and his “They’re GR-R-REAT!” slogan. Frosted Flakes truly are great alone, but I added some Chocolate Pomegranates from Brookside to give me that extra yum factor. Really though, what’s better than combining a childhood favorite with a grown-up indulgence? Not much.

    Finally, we’ve got movie night. Every Friday around here, you’ll find us chilling with a movie and usually some pizza, or popcorn. Every once in awhile though, I want something a little less messy – that pizza sauce can really leave a stain on the carpet if you don’t catch it!  Corn Pops are almost like popcorn…just you know, switch the words around… but you don’t have to pull out the air popper, worry about kids choking on seeds, and then cleaning it all up. Add a little fruit for an extra POP of color, turn on your movie, and enjoy another great snack. 
    We watched Planes this last Friday and even gave our cereal spoons some mini wings to help fly straight. Simplest project ever! All we did was use one of the cereal boxes to trace some wings, and cut two slits just big enough for the spoon to slide in.

    I’m pretty much in love with Kellogg’s, not just because they make great cereals that my family loves, but because they also reward you with coupons like these.
