    This week we’re featuring:
    The main writer behind Jade Louise Designs is Amber – I say main because she has 2 contributing authors as well.  Over the past year I have really gotten to know Amber through a connection on Facebook, past liking each others fan pages. She has inspired me to be more creative and take more time with my own blog.  At one point we found we share a mutual connection through Mark’s cousin. I always love finding out just how small this world is. 
    Amber is a stay at home mother, housewife, and blogger. Get to know Amber more by visiting her About page.  I chose to feature Jade Louise Designs this week because Amber put together the perfect post full of tips and even a Brine recipe for your Thanksgiving Turkey. I wanted to make sure you all had it, in case you are in charge of cooking the Turkey this year.

    Anytime Amber posts a recipe, I get sucked right in! And then her photos and links to other recipes, yeah I waste a fair amount of time browsing and pinning her stuff. Things like these Mini German Pancakes, that then led me to checking out her Peanut Butter Hot Cocoa…of which I know I’ve looked at before, but it’s a chilly day here. I couldn’t resist. Someone help me, because I’m off to reacquaint myself with her homemade Belgian Hot Chocolate now too…I may not leave my kitchen this weekend!

    Easy Pomegranate Stuffing Recipe

    Looking for a way to dress up your Thanksgiving stuffing, but without too much hassle? You’ll want to try this Pomegranate Stuffing!
     
     
    I won’t lie to you, I am in some serious love with this stuffing. The pop of fresh red berries made this stuffing just that much more visually appealing, and the burst of juice in each bite is fantastic. 
     
    Now before you read through this recipe and gasp at my shortcut, let me just tell you – YES, I used a boxed stuffing mix for this. I have yet to actually try a from-scratch stuffing. It’s on my bucket list, but I haven’t really had a reason to do that yet. Maybe this year I’ll volunteer to bring the stuffing to Thanksgiving. I still have half a bowl of Pomegranate seeds in my fridge I could use. 
     
    On another note, I did add in a little healthy flavoring with some Organic Chicken Stock from Pacific Foods. I think you’re going to love the added flavor of chicken and pomegranate in your holiday stuffing. 
     
    Pomegranate Stuffing
    An easy way to dress up your Thanksgiving Stuffing, without extra hassle.

    Ingredients
    1. 1 box stove top stuffing
    2. Organic (unsalted) Chicken stock
    3. water
    4. 1/4-1/2 cup pomegranates
    Instructions
    1. Make stuffing according to package directions, but replace half the water with chicken stock.
    2. Toss pomegranate seeds with cooked stuffing.
    3. Serve.

    Caramelized Pumpkin Cheesecake

    Caramelized Pumpkin Cheesecake is just what it appear to be! A layer of old fashioned cheesecake, followed by a layer of pumpkin cheesecake, topped off with some brown sugar caramelizing. Family and friends will love it!
     

    Thanksgiving is right around the corner!  Are you so excited?  I am. I just love Thanksgiving. All the food and a day to completely relax with family. I really don’t think there is anything better than that. So, I have had a little fun whipping up some recipes for you to take to your feast.

    This particular cheesecake started out as an idea to combine pecan pie and pumpkin pie into a cheesecake, but it slowly morphed into no pecans and a little caramelizing.

    Caramelized Pumpkin Cheesecake
    Serves 8
    Delicious Cheesecake with a layer of pumpkin and caramelized top

    Crust
    1. 1 pkg graham crackers
    2. 1 TBS sugar
    3. 3 TBS butter
    Filling
    1. 1 1/2 pkg cream cheese
    2. 1/4 cup pumpkin puree
    3. 3/4 cup sugar
    4. 1 egg
    5. 1/4 cup brown sugar
    Instructions
    1. Preheat oven to 350 F.
    2. For the crust, crush the graham crackers.
    3. Min in the sugar.
    4. Cut in the butter until crumbly.
    5. Place in a 9 inch pie plate and bake for 11 minutes.
    6. Mix the cream cheese, sugar, and egg until well blended.
    7. Divide the batter in half.
    8. Add pumpkin puree to one half of the batter.
    9. Pour the cream cheese batter into the crust.
    10. Swirl the pumpkin batter on top.
    11. Bake for 45 minutes
    12. Let the cheesecake cool for at least 2 hours.
    13. Sprinkle brown sugar on top.
    14. Caramelize the sugar with either a butane torch or a few minutes under the broiler.

  • Pork Curry Steamed Buns

    Pork Curry Steamed Buns

    It looks like I may have a lot of “Fails” with this Food of the World party, but we sure are having fun learning about different countries and their cuisine. This month Diane had us visiting Malaysia. See how we made Pork Curry Steamed Buns, and grab some recipes to make your own.

     
     
    Malaysian cuisine has melded with many of its neighboring countries, to create its own unique flavors on Asian dishes. While doing my research I came across Rasa Malaysia. the #9 Food Blogger in the world! That is pretty impressive and makes me surprised I hadn’t come across her before. Bee, the owner is from Malaysia, but now based out of California. She shares traditional Asian dishes, that are simple to make, and some with a more Westernized twist. 
     
    I browsed the Malaysian section on her site and had a hard time choosing something. After looking at recipes forever Mark leaned over, and said: “Try those steamed buns!”  Yeah, that sounds good…except steaming bread sounds tricky. Mark recalled our trip to Japan though, where we had a pork filled steamed bun that he just loved – and so did everyone else because the line to get one was huge!
     
     
    Mark got pretty excited about trying these out, that he jumped up and started cooking up a couple different pork curries. Of course, he didn’t write anything down, so I have no recipe for you – but head over to All Recipes and search curry. There’s a lot of good ones on there. So while he did that, I followed Rasa Malaysia’s recipe for Sweet Potato Mantou (or Steamed Buns).
     
    I was a little nervous, when it took a long time to rise, but crossed my fingers they would still turn out. My verdict – these are better baked than steamed unless you have the right equipment. Bee’s recipe has you put the buns on baking or steaming paper sheets. I didn’t have either, and didn’t think they would matter – they do!  By not using these, the bottoms of our buns were still very doughy. 
     
    Eventually, I gave in, and just baked the last of them. Ah-maze-ing!  Oh, and I also used Bread Flour because I couldn’t find Bao Flour (I found steamed bun mix at our Asian Market, but not Bao flour).  That could have been the reason for the extra long rise time, but I really don’t know. 
     

    I think the sweet potato addition to the dough, really was wonderful, but they worked better in the oven. So if you want to make these, but also want to avoid steaming them, I baked mine for 10 minutes in a 350 oven.

    Paula, or PMc as her friends call her, is the owner of Call Me PMc. One of the first things I remember learning about Paula, is that she is a runner. Although it’s been awhile since I’ve personally gone running, it use to be a big part of my life. I plan on one day running again…
    Her mom let her have free reign in the kitchen at the age of 8, as long as it was cleaned up afterward. What a great mom she must have had! Now Paula has extended her cooking to all genres of food, and her photography is quite simply amazing.

  • Double Chocolate Zucchini Bread

    Double Chocolate Zucchini Bread

    The first year I planted a large garden, I wasn’t sure how much I could get to grow. So I planted 6 zucchini plants, and they all grew and produced. We ate zucchini in one form or another every week for the rest of the year. This Double Chocolate Zucchini Bread was one of the good recipes that came from that gardening mistake.     My sister in law had given me her recipe about a month ago, so I was going to use that. It seems to be common though for me to misplace written recipes. I seriously need a better system!  So I started going through my cookbooks, and then thought to myself – it can’t be much different than Banana Bread, right?

    That’s when I pulled out my mom’s Banana Bread recipe and decided to make a few alterations – like adding some cocoa – and created a Double Chocolate Zucchini Bread.

    I love quick breads like this one. They’re pretty easy to change up to your preference without messing it up. Since this recipe makes 2 loaves, I like to garnish the top of one loaf with some chopped walnuts. It adds that extra bit of goodness but leaves one loaf nut free for those friends and family members who prefer it that way.
     
    Double Chocolate Zucchini Bread with Walnuts recipe  
    Double Chocolate Zucchini Bread
    Yields 2
    Add more veggies to your diet with this zucchini bread – just don’t forget the chocolate too!

    Ingredients
    1. 1 1/4 cup Zucchini, shredded – about 1 medium zucchini
    2. 1 1/2 cups Sugar
    3. 1/2 cup Shortening
    4. 4 eggs
    5. 4 TBS Cocoa Powder
    6. 4 Cups Flour
    7. 1 1/2 tsp Baking Soda
    8. 1 tsp Salt
    9. 1 cup Semi-Sweet Chocolate Chips
    10. Chopped Walnuts (optional)
    Instructions
    1. Preheat Oven to 300° F
    2. In a large bowl combine zucchini, sugar, shortening, eggs, and cocoa.
    3. In a small mixing bowl combine flour, baking soda, and salt.
    4. Mix dry ingredients into the wet ingredients. Combine well.
    5. Spray 2 loaf pans with cooking spray.
    6. Separate and spread batter into the pans.
    7. Optional – top with crushed walnuts.
    8. Bake for 60-70 minutes, or until a knife inserted in the center comes out clean.
    Walnuts
    1. Add walnuts to one zucchini loaf and please both nut lovers and non.

    This week’s Featured blog is My Sisters Pantry. If you haven’t been over to meet them yet, let me introduce you to Little Sis and Big Sis. The sisters are separated by 680 miles, but it doesn’t keep them from sharing their thoughts on real and fake food, with a preference for the real. I’ve come to enjoy visiting My Sisters Pantry each week, and seeing how they are using different items that have been hard for me to find a place in our meals (chickpeas..). 
    Last week they shared a couple dishes full of veggies, including tips on chopping and cooking broccoli and sweet potatoes, and then a home made Chocolate Almond butter.
